What's for dinner? Was it "budget"?

I got a great deal on a pork picnic butt (I think that's what it's called). It was reg. $12 and change and I got it for $4.20. :) :cool1: So it's been in the crockpot cooking with honey & hickory BBQ sauce. We're having that, mashed potatoes, and baby lima beans. For dessert I'm making a pink lemonade pie (if I can find the recipe).

My neighbor made pulled pork last night from a picnic butt and gave me some to have for lunch today. OMG, it was SOOO good!! She baked it with a rub on it, and then made her own BBQ sauce to put on it. YUMM-O!!

Tonight, we're having chicken legs on the grill. (79c a pound at Wegman's). I have them marinating in Honey Mustard marinade. We'll have corn on the cob (80c), salad, and watermelon.

I am trying to get some "cheap" and "tasty" dinner ideas for the week before I do the food shopping tomorrow (UGH) and this one sounds delicious. How is it when its reheated, have you ever done that. I was thinking of making ahead of time so on my late night I can just reheat.

I have reheated this. It's not as good as the first time around, but none of my picky leftover gang had complaints.

Definitely not gourmet but I came in with a trunk full of groceries and the pizza at 10 minutes of six and had to be out the door by 6:15. Pizza, it is. There is a coupon for this week for $3 off so a large cheese cost $7.51. It fed us all, with leftovers for tomorrow.

I'll be gone tomorrow at dinner time so it's "fend for yourself night." I predict that leftover pizza will feature highly. :) The two who will be at home would never think about cooking so it'll either be that or a PB&J. Maybe cereal and milk.

Budget for us tonight, we had the Hillybilly Housewife's Taco style lentils and rice. We had it on tortillas with cheese and sour cream, lettuce and tomato, like a soft taco. Dh had his with some leftover chicken on salad greens. It was really good!
 
No budget last night! We had salmon and my kids and I ate about $10 worth! But still WAY cheaper than eating out!

We had baked potatoes with it since DH doesn't like salmon. He got the .50 budget meal!!!!

We grilled out. I got a box of 12 Bubba Burgers at Target last week for $5.50 a box, so that makes each patty only 46 cents each. I also got buns on sale at Kroger, for about 9 cents each, so not counting condiments, etc, the hamburgers were only 55 cents each.

My family of four was able to split one hamburger between us...just kidding.

We also had corn (can't remember the cost), salad (cost more than I would have liked, with all the extras - cheddar cheese, spinach, croutons, onions, cubed ham, eggs, peas, dressing).

Oh, and we had strawberry shortcake for dessert. The strawberries were handpicked (by my parents) on a friend's farm for free. So it was budget, too.

Bubba burgers for 5.50/box of 12???? They are 9.99 for 6 over here!

Since we had leftover grilled chicken from a bbq on Sunday, I used it to make a chicken casserole. Egg noodles, low fat cream of mushroom soup and chicken. DH who refuses to eat leftovers eats this. Thankfully.
 
Bacon, lettuce, and tomato sanwiches. Yes it was budget, because I grew the tomatoes in my back yard.

(actually, I really excited that I picked my 1st tomatoes)
 
Last night I just ate Jalapeno poppers. The homemade ones with cream cheese and wrapped with bacon in the oven. YUMMY~ The jalapenos were from my garden (all 20 of them) the cream cheese was 6 oz (from sam's club so about 1.00) and the bacon was 1/2 of a 2.00 package...

it was good.

Not too much of a budget meal but a quick one for a long day.

Box of Banquet Frozen Chicken Thighs and Drumsticks $4.99
Box of Scallop potatoes - Walmart brand .89
Birds eye bag of steamed veggies - $1.50

Ok I guess that is kind of budget friendly for a family of 4.

I really just wanted to bump this back up so that I can sneak some meal ideas from all the awesome people on here.

I had these at a party back in April. They were great. Had to get home and look up the recipe before I forgot about it. I just have to get around to making them. Maybe for happy hour Friday. My SIL has a big Tikibar attached to her pool, and I do mean BIG. Its like a room on the house. Anyway we have Friday Happy Hours once a month, kind of like a mini party where everyone just brings finger foods and drinks. Thanks for reminding me !!!
 
Does anyone have a recipe for taco seasoning? I just used my last packet of taco seasoning tonight and would like to try making my own. I did purchase a homemade version at a bulk food store. But it is pretty bland. Maybe I could jazz it up, but I'm not sure what to add to it.

This is the one I use, only I leave out the sugar.

1 tbsp flour
1 tsp chili powder
1 tsp paprika
3/4 tsp salt
3/4 tsp minced onion (dried, or just use powder instead)
1/2 tsp cumin
1/4 tsp cayenne pepper
1/4 tsp garlic powder
1/4 tsp sugar
1/8 tsp ground oregano

Mix ingredients together in cup or small bowl. Add seasonings with 2/3 cup water to browned ground beef. Bring to a boil, reduce heat to low and simmer for 7-10 mins, stirring occasionally.

The chicken will piece out into another meal, probably bbq chicken sandwiches or something.
 
I am so thrilled to have found this thread!!!! I was searching just today for frugal meals and so forth.. I have to tell everyone what a BARGAIN I got today... I was grocery shopping at Krogers when the guy in the meat dept started to mark down boneless skinless tyson 100% chicken... I got it for .69 cents per pound... the packages were all about 1.25 each WOW I said so I loaded up a cart with them LOL Tonight we had chicken fried rice... Krogers had frozen veggies 10 for $10 so I used 4 bags. my total meal cost 1.25 chicken
4.00 veggies

We had BLT's last night too. But, my tomatoes aren't red yet, so I had to buy mine at the store. But, I did get the bacon B1G1 free, so it was about 2.50 a pound instead of the usual $5/lb!
 
Anyone have a good homemade marinade for Chicken Fajitas? We're having these tonight, and I have a store bought marinade, but I don't really care for it. Thanks!
