What's for dinner? Was it "budget"?

Leftover meatloaf from dinner at my aunt's yesterday (free) on sandwiches! Watermelon (on sale) for dessert.
Cheap and very few dishes to wash. :goodvibes

Chicken Salad: 2-3 cups of cubed chicken breast, 1 cup or so of red grapes, halved, 1 cup candied walnuts (cook walnuts in 3 TBSP butter and 4 TBSP brown sugar, till caramelized. Let cool, break apart), 1/2 cup mayo, 1 tsp. dijon mustard. Salt and Pepper to taste. Serve over mixed baby greens tossed with raspberry vinegarette. Very yummy!!
 

I like curried chicken salad...boil chicken breast/shred...add mayo (use reduced fat) and currants with 1-2 teaspoons (start small and add to taste) of curry. Also add chunks of apple or grapes from time to time. Very yummy on sandwich or stuffed in a tomato or on english muffins. Also used 1-2 breasts to make bbq chicken quesidillas. Cut up chicken and saute in skillet with pam and sliced red onion. When cooked add bbq sauce and simmer. Place some between tortillas with cheddar cheese and use quesidilla maker/pan or cookie sheet to prepare (these got raves and my little breasts went a LONG way).

Tonight was Meat ball subs.

Meatballs.. probably 2.50. Not a very good price. I buy the large family packs of ground beef and usually split them into four servings before freezing but I can't find lean ground beef as cheap as most of you can here in Canada:confused3

Sub rolls. 1.00

Made a large batch of spag. sauce in the slow cooker.. used about 1.00 worth.
And grated cheese on top.. Maybe 50 cents.

So that's 5.00 and it fed 4 of us as well as leftovers for Dh's lunch tomorrow.
Add another 1.25 or so for the side salad.
So 6.25 for dinner for four and a lunch.
 
Thanks for the chicken recipes! I ended up making chicken parmesan with the leftover chicken. Finely chop the chicken and add breadcrumbs, egg, milk, parmesan, and spices. Form into patties and fry. I served it with spaghetti, sauce and a little mozzarella.

Tonight the kids were at Nana's and a friends house so it was just dh and I.
We were going to go out for dinner for a date but decided we would rather save the money so we had bacon, eggs and toast and then went and had an ice cream cone and a walk down by the canal:lovestruc
So... dinner was 2.00 tops and ice cream was 5.00.

We just had BLTs and a blueberry dessert. Budget and it really hit the spot. :)

Tonight was sloppy joes

Ground beef 1.30 lb
Hamburger rolls - no frills - $.69
Perroggi's (sp?) on sale $1.00

Have no clue about tomorrow !!! Help! Probably will be eggs and hasbrowns.
 
We had sloppy joes night before last. With the leftovers I'm making burritos. It's Mexican night! :) I always make extra sloppy joe mix. All I do for the burritos is add a can of light red kidney beans (rinsed and drained) mix well. I put the mixture in tortillas and wrap them and top them with American cheese. Microwave each for about 45 seconds. So we're having the burritos (they are really good) with homemade guacamole dip and tortilla chips.

The guacamole dip is really easy. A friend made some to share this past weekend and I fell in love :lovestruc. She got the recipe from allrecipes.com.

Easy Guacamole

1 avacado
1 tsp minced garlic (or to taste)
salt & pepper to taste
1 1/2 tsp lime juice
2-3 tbs of onion
2-3 tbs of salsa (friend suggest Rosa's fresh salsa from Sam's)

Put avacado, garlic, onion, salt & pepper and juice in food processor. Then add salsa. It is soooo gooood!! I had to make myself move away from the dip. It was that good to me. And I was never a guacamole fan! :laughing: I am now! (I didn't have the Rosa's salsa today, but it is still wonderful. )

I want to throw together a quick light dessert real quick. I'm off for a recipe.

Just got back from the store and spent 106.00 for the week, a bit better then 150.00 I have been spending. I am making fried catfish, fries and corn on the cob for dinner tonight!!
 
We actually had a budget mean with items I had on hand! It doesn't happen often! It is similar to a mexican rice recipe that I made a few weeks ago and the kids actually requested it tonight! I just added the beef and a little more tomatoe sauce:

1 lb leftover cooked ground beef
2 cups leftover cooked brown rice
2 small cans of tomatoe sauce
1 can black beans
1 tsp garlic powder
1/2 cup shredded onion
pepper
2 T Olive Oil
soft taco wrappers or pita pockets
 
We had meatball subs. I made my own meatballs (1.99/lb for the ground beef), jarred sauce (1.50), rolls (2 something) and tater tots (.75 for 1/2 the bag). Yummy! and I had about 9 meatballs left and froze them in the sauce for another meal.

Tonight we're having our version of Philly Steaks. Very loosely interpreted, I should add.

My son is allergic to cheese, so he's having chicken, peppers, mushrooms, and onions on a sub roll.

My husband is on a low carb diet, so he's having chicken, peppers, mushrooms, and onions baked with cheese.

I am sick of chicken, so I'm having shrimp with cajun seasoning , with peppers, mushrooms, onion, and cheese on a sub roll.

We'll all have salad on the side.

It's really hard to do a low carb diet on budget, but I did get the chicken and cheese on BOGOF sales, and I buy onions in 5 lb bags, which is cheaper than buying them individually.

We had tacos with all the toppings. For dessert, peach blueberry cobbler with french vanilla ice cream. Ohh so good! I'm full and happy!

I just picked up two cookbooks tonight. One is Fix-It-And-Forget-It. Love it already. I've skimmed through it from cover to cover. I'll be doing a lot more crockpot cooking this Fall! I also got a WeightWatchers cookbook. I'm hoping to be able to modify some of the Fix-It recipes when I've fully committed to watching what we eat. I didn't see FIAFI lightly, but I will be looking out for that one too.
 
Any chance we can get that cobbler recipe? My mouth started to water when I read about it! That sounds so good and I have sme blueberries in the freezer that we picked fresh this summer!

Sure! :) I got it from recipezaar.com. The only changes I made were I used 1/2 a cup of sugar where it called for 1 cup, and I used mostly blueberries and added some fresh peaches I had on hand. It is heavenly! The recipe has 258 positive reviews! Here it is:

We had a Mexican dish - don't know the name of it. A friend made it and was telling me how good it is. I guess it is a form of burritos. Anyway, I mixed up a can of cream of mushroom soup ($.49), a can of cream of chicken soup ($.49), a half a jar of salsa ($.50). I divided that in half. In one half I mixed in some shredded chicken (which I had in the freezer when I cooked a whole chicken I got on sale). I then spooned a couple of tablespoons of the chicken mixture on soft taco shells, rolled them up and lined them in a 13x9 pan. I then poured the remaining soup mixture on top of all that, covered it with a bag of shredded cheddar cheese and popped it in the oven for about 25 minutes. Turned out great.

I love the idea of cooking chicken ahead of time. I don't know how many times I have come across a recipe that calls for shredded chicken and I don't have any on hand.
