What's for dinner? Was it "budget"?

Lucky Duck! Hope you had a great time and a great Birthday!! I am thinking of dropping DSs off at the inlaws in FLA next winter so that D and I can take a cruise for a few days by our lonesomes! We only have done DCl in the past, how did you like NCL?? Do tell!! :surfweb: :thumbsup2

Loved NCL! It was our first cruise, so I have nothing to compare it to, but NCL's freestyle cruising was great for us. You can eat whenever you want, and formal night is optional. Most people wear a nice sundress or khaki's and a nice shirt. LOVED IT!!
 
tonights dinner was budget, especially for us. This was dinner for two and a lunch

1/2lb ground beef $1
1c brown rice $.50
taco seasoning $.59
two tortillas $.25
salad fixings $1
cheese $.30
total $3.64

I made just normal tacos for my husband and a taco salad for me. I used the brown rice to stretch the meat, and though my husband was skeptical after the seasoning was mixed in he could barely tell. It was yummy:thumbsup2
 
I made this corn salad last night...it was DELICIOUS!!

Fresh Corn Salad

4 ears of corn, cooked, cooled and cut off the cob
1 tomato, chopped
1/3 cup red onion, finely diced
2 TBSP fresh basil, finely chopped
2 TBSP lime juice
1/3 cup mayonnaise

Gently mix all ingredients, season to taste with salt and pepper. Serve chilled.

tonight is BBQ chicken sandwiches. I put two frozen chicken breasts in the crockpot this morning with some BBQ sauce...($3.00 for chicken /BBQ sauce .79)
Nice loaf of fresh french bread $1.00
coleslaw for topping for the sandwich $1.50
bag of potato puffs (dh and I love these! ;) ) $2.00 seasoned with onion powder, garlic powder & seasoned salt.
chilled pickled beets $1.00

About how many hours did you let them stay in the crock pot? You put them in frozen correct? What if they were thawed?

Pork loin roast with roasted veggies and garlic mashed potatoes.

$3 pork loin
$1 carrots, green beans, onions
.33 can of chicken broth
.75 mashed potatoes

Yes. I put them in frozen around 9:00 am..I cook them on high for about 4-5 hours and then I turn it down to low for another 3 hours or so..until they are cooked through..then i shred them and set it on 'keep warm' until dinner.
If I wasn't putting them in frozen I would start them on low and keep it on low until they were done. I would imagine the time to keep them in would vary depending on the crockpot. I can keep chicken breasts in mine for 9 or 10 hours and they won't dry out. :)

this sounds great...DH brought home a bunch of cooked corn so I am going to try this!
 
Red beans and rice with sausage
Probably less than $2 for 4-5 servings. I will take the leftovers to DH's dad who lives alone.
 
Last night we had rotisserie chicken, lima beans, and corn. With the leftover chicken we're having chicken fried rice tonight (and a fruit salad). I even had enough chicken leftover for tomorrows lunch, chicken salad with cranraisins and walnuts. Yum!

Maybe milkshakes for dessert. :)
 
Last night was leftover Chili Mac from the night before (it's like homemade Hamburger Helper...ground beef, elbow macaroni, tomato sauce, garlic, chili powder, etc.)

Tonight is boneless pork ribs in the crock-pot. I'll serve with some sort of veggie and a starch. Not sure yet which ones!
 
Tacos and black beans, salad (on sale for $1) and grilled pineapple (on sle for $2 and we used half). Pretty cheap meal since I had the tortillas in the freezer, the cheese was left over from last week and the meat was what I got on sale a few weeks ago and froze.
 
DH, My sister and 2 of our 3 boys went to the 99 for Diner tonight. The bill with drinks and beers plus tip was about $80. Not great but it was one of the best meals I have had out ina loong time.... I guess I cant really complain as we havent been eating out much since we got back from WDW. :confused3 Maybe thats what made it sooo good? And the Bloody Mary's were AMAZING!! :thumbsup2 I am heading out to the grocery store in the Morning - that will def. be budget as we have to fill our propane tank and gett into a locked in price! :scared1:

Any great summer friendly new recipe or meal ideas out there?? This now includes lunches and snacks now thats school is out! :eek: I have put DSs on an eating schedule as I think they would eat the cupboards bare because they are home, bored and just want to eat! In this day and age with PS3, game boys, Computers with WiFi, umteen cartoon channels, swimming lessons, golf lessons, The summer Rec Program, and all that toys one can ever want and more books than they know what to do with - and they still tell me they are bored!!?? Whats that all about? :confused:
 
We are having bubble-up enchiladas tonight with corn (.50) and chips and salsa (2.78)

Bubble Up Enchilada

1 pound ground beef (1.29)
1 (10 ounce) can enchilada sauce (.89)
1 (8 ounce) can tomato sauce(.20)
1 (4 ounce) can sliced black olives, drained (didn't use these)
1 can refrigerator biscuits (.45)
2 cups shredded cheese (1.49)

Preheat oven to 350 degrees. Brown ground beef and drain if needed. Mix in a can of enchilada sauce and a can of black olives. Cut the refrigerated biscuits into fourths and stir them in the meat mixture. Then you just dump it all in a greased casserole and bake for 25 minutes. Take out of oven and sprinkle cheese on top. Bake an additional 10 minutes. Let stand for 5 minutes before serving.
You can make this into 6 or 8 servings.

This will definitely make two meals for us.
I can't wait. It is very delicious.

MMMMmmm! I love the 99!! So do my boys! We always have to eat there at least once when we go to NH to visit relatives! Wish we had one here in our area of PA. They have a really nice kids' menu (or at least they used to!)

Last night we had leftover ribs, baked potatoes, and salad. Tonight is kind of a free-for-all. My DS13 and I are having lunch with my dad today, so we probably won't be hungry for a big dinner. My DS9 has been in the Outer Banks, NC all week with his best friend on vacation, and gets home tonight. So, looks like DH will have to find something for himself in the fridge!;)
 
Swiss Steaks here tonight! I had bought a family pack of inexpensive cuts of steak last eek and put them in the freezer when we ordered pizza one night... Anyway I defrosted them, added some peppers, onions and canned/chopped tomatoes to the crock pot with some garlic and beef stock. I addedit all to the crock pot this afternoon and will erve it over egg noodes either with salad or bread!! Easy enough - I spent most of the day on the raod pcking up DS9 from golf, running errands and grocery shopping! Will be nce o hve little cean up an little cooking to do!! :thumbsup2
