What's for dinner? Was it "budget"?

Tonight was hamburgers leftover and frozen from father's day, rolls, Target brand mac n cheese ($.59) and half a bag of frozen broccoli ($.50).

The other night, I used leftover steak and brown rice to make a mexican stuffed pita pocket.

In June, I'm going to write down every penny I spend....getting the hubby to go along with it is another story!!!
 
Chicken fingers with wild rice and green beans.

I made the chicken fingers using B1G1Free chicken breasts from Jewel and about 1/8 of a box of Fiber One cereal. (I got 3 boxes of it at Walgreens this week on sale PLUS with $1 off each box coupons. We're going to be breading things in Fiber One for months!)
 
We had hot dogs, fried potatoes and lima beans

Hot dogs - 1/2 pack (2.50) = 1.25
Buns - 1/2 pack (1.33) = 0.67
Potatoes - free from my mom's garden
Lima beans - 0.88

total was less than $3 for the 3 of us with a left over hot dog that DD ate fro lunch today.

Tonight we are trying a new chicken recipe, that is NOT very budget. :)
Boneless skinless chicken breasts, pounded thin, filled with Rondele' garlic-and-herb cheese spread and deli shaved ham, wrapped with bacon strips and cooked on the grill. We will have some leftover pasta salad with it, and a friend who is coming to eat with us will be bringing a veg and some french bread.

Looking forward to this meal, as the chicken sounds really yummy, and also looking forward to not turning on the oven, as it is forecasted to be over 90° today! :sunny: And just to think, 3 weeks ago it was snowing.... ah, Montana. :sad2:

does anyone have a good groundbeef goulash (sp?) recipe?? I remember eating this as a kid at my friends house. I think it had groundbeef, greenbeans, tomatoes and macaroni noodles.

Does that sound familiar to anyone???

We never put green beans in ours - but my Mom used to make it with the following:

1lb ground beef
Chopped Onion
Chopped Pepper
Salt
Pepper
Garlic Salt
Paprika
Tomato Sauce (one of the large, but not huge cans)
Cooked Elbow Macaroni

We loved it as kids, and every once in a while I still have cravings for it.
 
We just had a new recipe from Paula Deen's sons cookbook "Y'all Come Eat". The budget part was everything I used was on sale; taste factor was great! The ingredients should tell you if you would like it or not. We had it with deviled eggs (free from our chickens) and cucumber salad (almost free-leftover cucumbers from my massive pickling adventure this weekend). Watermelon for dessert.

Bacon-Wrapped Chicken Breasts with Chile Cheese sauce

8 slices bacon
4 boneless,skinless chicken breast halves, cut in half lengthwise (making 8 long pieces)
1 10.75 -ounce can condensed cheddar cheese soup
1/3 cup milk
1 teaspoon chopped canned chipotle peppers or bottled chipotle hot pepper sauce (or to taste)
Dash Worchestershire sauce

1- preheat oven to 400 degrees. Line a rimmed baking sheet with foil, set aside.

2- Wrap a slice of bacon (spiral wrap) around each piece of chicken and place on the baking sheet. Bake about 20 minutes or until cooked through. Remove chicken from the oven. Preheat the broiler.

3- Meanwhile, ina saucepan, bring the soup, milk, chipotle pepper and Worchestershire sauce to a simmer over medium heat. Turn off heat and cover to keep sauce warm.

4- Broil the chicken 4-5 inches fromheat for 1 to 2 minutes or until the bacon is really sizzling. Serve chicken topped with the cheese sauce.

Makes 4 servings.

Corn on the Cob $.80 (.20 each at Super Walmart:thumbsup2 )
Grilled Zuchinni and Summer Squash -free from our Garden

Ohmygosh! This sounds wonderful! I have everything in my freezer/pantry except the soup and peppers. I'll be looking for this stuff on sale.

ETA: Forgot to add my dinner. It was completely free(and unexpected). Went to my brother's for cake and ice cream for my nephew's 2nd birthday. They surprised us with hamburgers and hot dogs, fresh snow peas(from the garden), and watermelon.

Thanks to everyone that have shared recipes. I can't wait to try them! Tonight we're having easy chicken BBQ in the crockpot. Cooked squash (out of the garden) with sauteed onion and crumbled bacon and probably green beans with it. For dessert either strawberry milkshakes (we have a ton of strawberries) or skinny cow ice creams.

July 1st already. Hard to believe.
 
We just got back from a week-long cruise on Saturday, so needless to say, I had some great meals last week!:goodvibes This week is back to reality, and trying to lose the few pounds that I gained!

Last night we had grilled chicken salads, with roasted red peppers, marinated artichoke hearts, cucumber, romaine, and feta cheese. Very yummy! Cantalope, grapes, and strawberries for dessert.

Tonight I'm still not certain. I'm going to try to make a fresh corn salad recipe that I had cut out of a magazine last summer. It's got corn, tomatoes, red onion, mayo, and fresh basil. I need to go to the store to buy the corn and tomatoes, but the corn is on sale 10 for 1.99 this week, so that's pretty good. I'm not sure what I'm having with this salad, though. I do have a pork tenderloin in my freezer, which I had pre-marinated in fajita marinated. That sounds like a good match for this salad!

tonight is chicken with rice...the chicken was less than $3 on sale and the rice wasn't very much either. Will add a salad and some frozen corn.

We made what we call Goulash with Kraft Mac and Cheese add browned ground beef, one can of diced tomatoes and extra cheese. I am sure you could add green beans but we usually had a salad and cooked veggie on the side.

We call that American Chop Suey... I omit the onions and peppers as DH is not a huge fanof them. Its a great easy, cheap meal and a comfort food no less! DS9 LOVES IT!!

$6.25 - which is high for me, but we have not been eating very strict and I wanted a meal to sit with the kids tonight and just listen... Summer is tough with teenagers. They want the freedom w/ no responsibility!! Carefree is great but sometimes real life gets in the way!
