I wanted to post a few recipes that my family enjoys and they are inexpensive. I know several of you post that you have leftovers for the next day. Sometimes we do but other times we do not do yall make double for that reason. My family consists of myself, dh, dd(13), ds(18) dh works nights so he is not here for our supper time but I fix him a plate and he has leftovers when he comes home.
Taco Soup
1 lb ground meat
1 (15 oz) can of ranch style beans
1 (15 oz)can of whole kernal corn (I use mexi-corn either one is fine)
1 (15 oz) can of stewed tomatoes
1 (15 oz) can of hominy
1 pkg of taco seasoning (any one orginal, mild or hot)
Brown meat and drain; add remaining ingredients. Simmer 30 minutes to 1 hour until hot.
I them make a pan of cornbread this makes extra for anothers days meal or can be doubled and frozen.
Hamburger Macaroni
1 lb. ground meat
1/2 cup light miracle whip
large jar of spaghetti sauce(any flavor)
7 oz. package of macaroni ( or any type of pasta will work)
Brown meat until done and drain, cook pasta as directed. Add pasta to the meat mixture, mix in spaghetti sauce and miracle whip, cook until heated then you can top with grated cheese.
Serves 4-6 people
My dd does not like this to much when she found out about the mayo she says yuck, but you cant taste the mayo ( i cant) it gives it a creamy texture.
Almond Chicken
4 chicken breast or you can use the boneless skinless chicken breast strips
1/2 cup sour cream
1 pkg. ritz crackers ( crushed)
2 cups cooked rice
1 can cream of chicken soup
1 can cream of mushroom soup
1 stick butter
8 oz. package almonds(opt.)
Cook the chicken until done them break into small pieces. Mix the chicken with soups and the sour cream. Cook the rice and cover the bottom of a 9 x 12 dish. Spread the chicken mixture over the rice, top with the crushed crackers and almonds. Melt the butter and pour over the top of the crackers and almonds. Cook at 325 for 40 minutes.
My dh, and kids do not like the almonds so I usually just put them on one half of the dish or do not put them at all.

I am not sure how much they break down as far as cost but I dont think they could be that expensive most of the ingredients are items I think most of us have on hand normally.
