What's for Dinner Tonight? (recipe index in OP)

Here are those recipes:

Carolina BBQ Pork

2 onions quartered
2 tbsp brown sugar
1 tbsp paprika
2 tsp salt
1/2 tsp ground black pepper
1 (4-6lb) boneless pork butt or shoulder roast
3/4 cup cider vinegar
4 tsp worcestershire sauce
1 1/2 tsp crushed red pepper flakes
1 1/2 tsp sugar
1/2 tsp dry mustard
1/2 tsp garlic salt
1/4 tsp cayenne

Place onions in stoneware. Combine brown sugar, paprika, and salt and pepper. Rub over roast. Place roast over onions

Combine vinegar and all remaining ingredients. Stir to mix. Reserve 1/3 cup mixture; cover and refrig. Pour rest of mixture over roast and onions.

Cover and cook for 10-12 hours on low heat. Drizzle reserved sauce over roast during the last 1/2 hour of cooking
 
Pastel de Cuatro Leches
Saveur Magazine, 2/08

2 tsp butter
1 tbsp plus 2 cups flour
2 tsp baking powder
1 1/2 tsp fine salt
6 eggs, at room temp, separated
1 1/4 cups sugar
1/2 cup whole milk
1 1/2 tbsp dark rum (I omitted cuz I didn't have any on hand)
1 tbsp vanilla extract
1 14-ounce can sweetened condensed milk
1 12 ounce can evaporated milk
1 cup heavy cream
1 16 ounce jar dulce de leche (milk caramel)-my store only had 13 oun cans

1. Heat oven to 350. Grease 13X9 pan with the butter and dust with 1 tbsp of the flour. Invert the dish, tap out the excess flour and set aside

2. Sift the remaining flour, baking powder, and salt into a large bowl and set aside. Put the egg whites into a large bowl and beat wiht a hand mixer on med speed until soft peaks form, about 2 minutes. While the mixer is still running add the sugar in a gradual stream and continue beating again to soft peaks. Add the egg yolks one at a time, beating well after each addition. Alternately add th reserved flour mixture and the whole milk in 3 parts. Add the rum and vanilla and beat again briefly until smooth

3. Pour batter into reserved baking pan and bake until golden brown, about 30 minutes. Set the cake aside and let cool slightly for 30 minutes

4. Whisk together the sweetened condensed mil, evaporated milk, and heavy cream. Using a knife, poke the cake with holes all over penetrating to the bottom of the pan. Pour the milk mixture over the warm cake and set aside to let cool completely

5. Cover the cake with plastic wrap and refrigerate until well chilled and liquid is absorbed, at least 4 hours. Spread the dulce de leche across the top of the cake and serve

Hey all, hope you don't mind if I vent....I am having another issue with (yep you guessed it) my MIL.....She has sent me ONE email and an E-card (not even a real sympathy card) since my mom passed, then I sent her an email letting her know of my godmother as soon as I heard Sunday....she sent me ANOTHER e-card TODAY!! In it she writes...I don't understand why you don't come see me.....I could be there for you if you would just come visit, when you are done grieving I will be there for you..........wth do I do with that.....I have told her many times that I have not gone anywhere as I just don't feel like it, and I am hibernating until spring, but welcome anyone over here......She hasn't even called me.................

Laura Spanish steak is just a round steak or top round seasoned and floured then browned in a skillet. Then add tomato sauce,sliced onions,green pepper and little garlic and oregano. cook until soft.

My grandmother is cooking our dinner tonight and it's my favorite (by her)- homemade stew. Mmmmmmmmmm!

Morning all,
Last night was Homemade Chicken Cordon Bleu, Rice Pilaf (boxed) and Steamed Broccoli. Have a busy night tonight so I think it is going to something simple like burgers on the grill with french fries.

Wendie, It sounds like she does not have any people skills. Whenever I come in contact with people like this, I want to hit them in the head! I cannot stand when people are so clueless.

Morning all--

I was up watching the live feeds of Big Brother until midnight, then switched to showtime until 3am....needless to say I am a wee bit tired this morning, lol.....I have to do the checkbook, walk on the treadmill, shower and then run some errands......needless to say no back to bed for me this A.M.

Supper tonight is going to be something with boneless chicken breasts....I am to crosseyed right now to think of what though.....I will get back to you all on that one.....Have a great morning my friends!!

WFD- tonight we are having a Mrs. Budd's Pot Pie, roasted broccoli (which I never made the other night), and extra peas for DH & Luke.

Easy night, I have alot of errands to run today.

I finally did something right. :rotfl: Brendan raved about the bbq pork chops last night. :goodvibes But then he complained when I said I was making chocolate chip cookies for dessert. :rolleyes: That was his dad's fault.

You just cannot win, can you?:)

Andrew came home sick today. He has a bad cough and runny nose. The nurse said she would keep him but I felt guilty...he never goes to the nurse.

Kady is fighting off a cold too. She is like Andrew, does not go to the nurse so if she calls I will go get her too. Now her mother went to the nurse every day for 12 years :rolleyes1

I hope he feels better fast!

That's my menu for Monday night! My kids love corned beef and cabbage! I always make it for St. Patrick's day along with Irish soda bread. I'm thinking about making colcannon this year, too. Yum! I can't wait!!!!!

Glynis- can you post your glaze for the corned beef? It was the best I have ever made and I would like to make it Monday night as well.

Hey all. Just had some yummy bbq pork for dinner. It's a Carolina BBQ crockpot recipe if interested. Oh and last night I tried a new recipe for "Pastilla de los cuatros leches" and it was so good. Super sweet, but oh so yummy! I'll post this one too if anyone is interested!

This sounds so good I must have put on 20 pounds just reading the cake recipe. OMG! Heavenly!

Vent away my friend! I would tell you to let it go but I would be lying if I said that I could. She sounds like one of those people who just cannot let someone else be in the picture, and honestly have no clue how insensitive that they are. Last Christmas my Mom was so ill that she could not be left alone. I had only missed one Christmas Eve at MIL's since I was 15 years old. It was my night to stay with my Mom and I wanted to, I knew what the following year would be. This woman would start out with the right words and then try to guilt me into going. When I told her NO she wanted Buddy to go. This is not his Mother, she is the Mother of my first husband. He said not without me. You have one who is truly toxic so you understand, but it was messy.

Wendie- she is going to have plenty of time to send her E cards and hope that she gets them in return, plenty of time to revisit how she treated her DIL and plenty of time to wonder where she went wrong. At this point let your DH deal with her.

Tonight I am going to do something with the leftover chicken. I am not feeling too spiffy so I don't want to do too much, I would be happy with the soup, it was good. Kady has an early release day so I think we will both snuggle up on the sofa and watch TV.

I think I'll check my other vegetarian cookbook for ideas and try something this weekend.

I cook a lot of vegetaran food, and own a lot of veggie cookbooks. If you post what kinds of ingredients, etc. you were thinking of, I could suggest some stuff to try!

Tonight I am making the lemongrass risotto recipe from the California Grill, and serving it with seared salt and pepper shrimp and an arugula salad.
