Nancy I've been thinking about your meatball delema. Sounds like the meatball are too wet if you add to much egg put a little more breadcrumbs. try not to overwork the meatball mixture. Also you do brown the meatballs first don't you before adding to the gravy?

cheerbop Why don't you try the Velvet shrimp/chicken recipe? If you can come up with an ingredient or a theme we can help you more.

We are probably going to grill. If I'm not to tired to get the tank filled, after working today.
 
:sick: uggggggggggghh......hi everyone!

I just got home from walk-in clinic, I have bronchitis! we have all been very sick since our vacation. Ron is just getting it, Luke is almost done with his amoxicyllin and he has a runny little nose. Gotta love puffs plus!

We have not had a normal meal here in days!

The chimichangas were very good last night. I think a few more minutes in the oven to get them crispier would have been good. The girls figures that they were 4 points apiece. They usually get wraps that are one point apiece but these were 2 I think. Erica found a wrap that was 21 Grams of fiber but she was a little afraid to try that one. I told her if it keeps her points down try it, I can make cardboard taste good if it is wrapped around some of the sandwich fillings I make for the girls when they scrap here.

The pizza was very good as well. I used turkey bacon and turkey pepperoni and used Colby cheese instead of mozzarella.

Today we have a wake, a friend passed away unexpectedly, and then pork chops with pineapple chutney. The girls are going to work on dinner while I am gone so I don't know what else they want with it.

Lindsay- no cooking at all this weekend?????? Lucky girl!

Nancy, Glad the Old Fart gets his own bottle of red!:laughing: Chimichangas in the oven. Is that a WW recipe? Would you post it? That Sparr wine runs about $14 dollars a bottle, but worth it. It goes great with Thai & Greek foods!

HA HA! NO.... However, John and I are the proud owners of a second home. We've had it since 1997. It's the weirdest thing, though. The bill comes in the mail every month for the mortgage, but I've never actually seen the house! We have a good name for it though...LAW SCHOOL LOANS. Maybe when the mortagage is paid off in another 20 years or so this mystery house will finally materialize! ;)

Today's linner is going to be very early, and frankly, a little bland. John leaves at 2 PM for Portugal so I wanted to make something that would not upset his stomach or cause him to smell funny on the plane. I am just roasting a turkey breast, making some mashed potatoes, and roasting some asparagus.


Well, You know we are bowing down to you on that food!:worship: It looks awesome! The turkey looks wonderful, as does everything else! Did you like them? Did you follow the recipe or change it up? I am going to have to make your hummus soon. And on the tabouli was that bulghur or quinoa?

Hope John has a safe & good trip!

Super lazy morning here. Reading the paper & :surfweb:

No cooking for breakfast, lunch, err brunch. We are heading out the door now, back to Parrot Pete's. Anyplace that has shrimp & grits and fried green tomatoes on the menu for brunch we've got to try!

I'll let y'all know later, how it was!

Mexican Lasagna Recipe courtesy Rachael Ray Show: 30 Minute Meals Episode: To Busy To Cook?

3 tablespoons extra-virgin olive oil
2 pounds ground chicken breast, available in the packaged meats case
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 red onion, chopped
1 (15-ounce) can black beans, drained
1 cup medium heat taco sauce or 1 (14-oz) can stewed or fire roasted tomatoes
1 cup frozen corn kernels
Salt
8 (8 inch) spinach flour tortillas, available on dairy aisle of market
2 1/2 cups shredded Cheddar or shredded pepper jack
2 scallions, finely choppedPreheat the oven to 425 degrees F. Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil - twice around the pan. Add chicken and season with chili powder, cumin, and red onion. Brown the meat, 5 minutes. Add taco sauce or stewed or fire roasted tomatoes. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season with salt, to your taste.
Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly. Top with the scallions and serve.

[FONT=&quot]Place turkey in a bowl and season with chili powder. Add shredded cabbage, chipotles in adobo, tomato sauce, scallions. Toss filling to combine and season with salt and pepper. Place tortillas in a kitchen towel and set in microwave. Microwave on high for 1 minute. To build, place a generous handful of cheese near one edge of the tortilla. Pile 1/4 of your filling in the tortilla. Tuck sides up and roll tortilla tightly. Repeat to make 4 large stuffed tortilla wraps. Brush the toaster oven baking tray with vegetable or olive oil. Brush the wraps with oil and bake until deep golden all over, 15 to 17 minutes. Top with sour cream, cilantro or parsley and chopped orange or yellow tomato, as garnishes.[/FONT]


I add the shredded cheese to the mixture and mix it in. It seems to make a better filling. I also steam 1/2 of the cabbage before adding it. My DD is following WW so I doubled the shredded cabbage for her.

1 fresh, cored pineapple available in produce department of many markets, chopped
or 1 can cut pineapple in natural juice, reserve 1/4 cut of the juice of either product.
1 large green or red bell pepper, seeded and chopped
1/2 red onion, chopped
1/2 seedless cucumber, chopped
2 ribs celery, chopped
1 vine ripe tomato, chopped
1 lime, juiced
1 teaspoon chili powder
1/3 cup extra-virgin olive oil
Salt and pepper
Hot sauce (recommended: Tabasco), to your taste, optionalCombine chopped pineapple with chopped peppers, onions, cucumber, celery and tomatoes. In a bowl combine reserved pineapple juice with the lime juice and chili powder, whisk in extra-virgin olive oil and season dressing with salt and pepper, to taste. Add in a few dashes of hot saice if you like it spicy! Pour dressing over salad and toss.

I would make Glynis pot roast and proudly serve it to anyone, it is so good.

I know I missed a lot o things but I want to ask if you could spare a prayer I would appreciate it. Buddy's aunt passed on this morning. She lost her brother last week and she has one more who is terminally ill with cancer. This family has too much to bear right now.

I wish Tom would get in the kitchen more. He just mastered instant oatmeal and that is all I hear about. Even had to show me how to make it.

No real numbers of guests at this time--not a big amount I would guess.
No limit on ingredients, just not something super expensive or hard to find.

I always find it easiest when entertaining to make something that is familiar. For example, a standing rib roast is impressive, but I would never make it for the first time with company coming...especially if I really wanted the meal to go well. What kinds of food does your friend usually make? That would be a good starting point.

The first thing I thought of was shrimp ceviche (and of course, either margaritas or sangria). It only requires a burner. Main ingredients are shrimp, avocado, onion, lime, and cilantro. I can post the recipe if you want.

First off, all the dishes you see are family style...so, those recipes from yesterday served four adults, with LOTS of leftovers. Portion size is the key, I think.

And, my kitchen is a blasted closet! It is soooo small, and has the worst appliances, and the WORST storage. Laura can back me up here, she knows!

But, that said, I know what you are going through with your micro kitchen. I once lived in an apt. that did not even have a fridge! :confused: and it had a two-burner stove that worked...sometimes!

Anyway, my off the bat choice is quesadillas, you can cook them in batches and keep them warm in the itty bitty oven! Let me know if you want recipes.

Are you in Germany? Can you get tortillas? What kind of veggies are available right now?

Lauren - Thanks again for the amazing spaghetti sauce recipe, I LOVE this stuff.:thumbsup2 We're waiting for Kyle to get home to eat, but Johnny & I have been lifting the lid and sneaking a taste. Sammie has already had some.:lmao: My dog does not normally eat table food but she does love spaghetti sauce so she got a couple spoonfuls on her food.:goodvibes

Scotlass, TigerKat's lemon spaghetti is easy. The hardest part is squeezing the lemons. It's very similar to an alfredo sauce with a bright lemony zing! It goes great with fish, shrimp or chicken.

Becky, YUM as usual! John is one lucky man! That boxed meal looks better than any airplane food, even 1st class!!! :goodvibes Beck did you see my questions about your turkey "burgers" and tabouli? :confused: I'll just ask again, so you don't have to go back. Did you make any changes to the greek burger recipe? And did you use the quinoa or bulghur for the tabouli?

I am pretty sure the recipe was posted on the old thread. Here it is again (this is from memory, so Beck, please confirm this is correct!):

Cauliflower Gratin

1 head cauliflower, cut into florets
2 tbsp butter
2 tbsp flour
2 c milk, warm
2 c grated cheese (gruyere or cheddar)
1/2 c grated parmesan
Salt and pepper
1 c fresh breadcrumbs (we just use firmer white bread and cut into cubes)
2 tbsp butter, melted

Parboil the cauliflower either in simmering water or in the microwave.

In small pot, melt the butter then add the flour. Cook until bubbly (about 2 minutes) then add the warm milk. Whisk to smooth and continue cooking until mixture thickens. Add grated cheese, plus half of the parmesan. Stir until cheese is melted. Add salt and pepper to sauce as desired.

Put cauliflower in a baking dish, pour sauce over, toss to coat. Sprinkle remaining parmesan cheese over gratin, then add bread crumbs. Drizzle the butter on top. Bake at 375-400 uncovered until the sauce is bubbly and the breadcrumbs begin to brown...about 30 minutes.

Finally gonnae try something.

Lemon spaghetti.....easy?

Super easy! And yummy too! :thumbsup2 I would just recommend setting aside a ladle of the pasta cooking water before draining the spaghetti just in case the sauce is too thick at first. Add the water to the sauce if necessary.
