Alan just called me. All the kids have now been picked up by parents. He said it was tough going, though. He was traveling to work along a road that was closed (getting video for news), and there were about 50 abandoned cars along the side of the road, that were buried up to their roofs. Search and rescue spent most of the night evacuating people! Kudos to them!!!

Now, the sun is out, and things are melting once again! That's the way I like it!

Happy Valentine's Day everyone!!

Tonight we're having an appetizer of Le Cellier cheddar cheese soup then a main course of these humongous shrimp served over linguini, I'll saute them in olive oil, garlic, shallots, a little fresh grated parmesan...then dessert is peanut butter kisses (peanut butter cookies with a Hershey's kiss on top!) I don't buy for my dh so this is my gift for him!

Seriously, I am a huge 30 minute meals fan (29) DF is (35), well I love the food network in general but adore 30 minute meals. I got the ENTIRE line of Rachel Ray cookware at my Bridal shower a couple weeks ago! I even get told I look like her!

well, we've had a very productive morning 'round here. Both kids got haircuts, v day party at school, and gym workout. Now it's time for a quick nap and then off to ballet. DH called and said he wants to take us out tonight. Nice that I don't have to cook, but waiting for a table on V day with 2 small kids, not my idea of a good time

Here's my intro:
I'm Stephanie a 32 year old SAHM (Laura, with you on the "stay at home" part) to Emma 4 and Matthew 2. I, do, however, also work 3 part time jobs--babysit out of the home, gym daycare worker, and pharmacist. A jack of all trades, I tell ya! Scott, I and the kids live just outside Little Rock, AR. He's an electrical engineer for an international paper products company. I love to cook, sort of like my one creative outlet. But most nights, it's just do or die around here. Both my kids are extremely picky and DH works long hours. But when I do have the time (and someone to eat it) I love to cook elaborate, usually Asian inspired meals. We are a family of Disney fanatics. My parents and friends think I'm nutso to go so often, but we can't get enough. Last year we made 4 trips to WDW. This year, looks like only 3 trips:sad2: School tuition just getting too high; it's cutting into my vacation budget!
 
Here's Kat's recipe. It seems I have missed a little...be back later. Trying to get cleaned up before Tom comes home...


Spaghetti with Bolognese Sauce

1 tbsp. EVOO
2 onions, finely chopped (3 cups)
3 carrots, finely chopped (1 cup)
6 cloves garlic, minced
1 lb. ground beef
1 lb. ground pork
1/4 c. tomato paste
Coarse salt, ground pepper and any other seasoning or herbs of your choice
1 c. dry white wine
1 can (28 oz.) crushed tomatoes in puree
1 c. milk
12 oz. spaghetti
Finely grated parmesan

In a Dutch Oven or 5 Qt. saucepan, heat oil over high heat, add onions, carrots and garlic; cook stirring until slightly softened, about 2 minutes, Add beef & pork; cook, breaking up meat with a spoon, until no longer pink, about 5 minutes. Stir in tomato paste; cook 1 minute. Season generously with salt, pepper and any other seasonings or herbs you've chosen.

Add wine and tomatoes. bring to a simmer; cook partially covered, stirring occasionally until thickened about 1 hour. Add milk; simmer until completely absorbed, about 15 minutes more. Taste and season again. I normally let it simmer on a very low heat until we're ready to eat. At this point it's ready to serve with pasta & freshly grated parmesan

Who wants a 13 yr old boy? I will pay someone. The child has given me more gray hair that I can afford to get. His crime was he didn't answer the phone for over an hour this morning. Why he was busy "doing busy stuff":confused3 I think it translates to playing video games.:rolleyes1

:lmao::lmao: Janice, just ask any Mom of a 13 YO girl! They'll trade but you will be sorry. I did not like my DD much from 13 to 18. I really did not like my niece Debbie either until about 19, and I still am not fussy about my niece Kim. Girls take until about 20 or so to be bearable :confused3

My sister said her son resembled a Neanderthal for about 5 years :rotfl:

Now my DD is getting a taste of her own medicine.......Kady is the spitting image of her mother only she is 6 going on 16, complete with the Valley Girl thing.

:lmao: :lmao: I feel the same way Nancy. I should be ashamed of myself to admit this, but I blew a gasket at Kenny after Christmas this year. He is the WORST when it comes to gift giving. After several holidays of "I didn't have time" or "I didn't know what to get" or "You know I hate to shop, just get something for yourself and I'll pay for it"; I finally lost my cool. I told him that on the very next gift giving holiday he had better arrive with a box in hand, gift wrapped, with a bow on top. No excuses. So I received my guilt inspired gift this morning, a cute pendant not at all my tastes, but given by a smiling husband. I really do love that man. Why he loves me is beyond me.

The first time Buddy told me to pick out my gift I did, and then I paid for it. That was the last time:headache: At least Kenny gets a little embarrassed, Buddy really does not. I did get a guilt dinner out one night though. He had to go to the Eye Ear hospital in Boston and we did leave very early. We hot traffic just within sight of the Hospital...close enough to see it but stopped almost dead. We sat there forever and then Buddy started yelling out the window at the river :confused3. No response there. So he opened my window and yelled :scared1:. I was "Are you kidding me?" The next night he called and said not to make dinner and told me after a few glasses of wine that he felt badly that he lost his temper. I never have told him that I thought it was kind of funny. I told you .....he amuses me :dance3:.

My big sister Laura (liamandcaili) is my best friend and my sous chef. I make her obey my every command in the kitchen ;) , and we turn out some pretty good food once in a while.

Do not believe her! These two women turn out the most amazing creations I have ever seen, and they do it every night! Even when they are sick!

This sounds great. I have started a file folder with some great recipes from here. I can't wait to try the spicy slaw, and this bolognese one.

I left some info out of my intro... I am 38 , Ron is 47 and I forgot to mention my step grandson 2 1/2...yep, grandson is older than DS. :laughing:

Hey! I got a necklace for Valentines. Its really nice...its a long silver chain with a pendant. If you hit the middle of the pendant, it calls the police!!!! :eek: Yes, my husband ordered me a panic button!!!!! :scared1:

There is a reason why I don't do youth ministry! Teenagers, esp middle school boys, are not my thing. I adore my 5th grade boys but the love stops there. :laughing:

Julius' dad has a friend who owns a meat and fish shop and we get all of our meat and fish for free. We have a huge freezer full of tilapia, shrimp, crab, chicken, deer, bear, bacon, venison, etc. Its absolutely fantastic. The only problem is there is almost never any beef, and it gets a bit repetitive so I have to be creative.

I am green with envy.

I decided to make Paula Deen's corn casserole for our VDay party tonight. It's easy, cheap, and I've yet to take home leftovers after a party. I'm also bringing 3 liters of wine =)

Because a woman (some of us) always wants flowers! :) I don't care if they are bought on the corner or at the gas station, I just love flowers. Its always nice to be surprised too.

I just pulled out some disney glow cubes so we can put them in our cocktails later. I think we are going to do cosmos.

Have fun at the party! You guys really need to forget the last few weeks and have a great night.

It's SO good!!

Corn Casserole Recipe courtesy Paula Deen
Show: Paula's Home Cooking
Episode: Country Cooking - Southern Sides

1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package corn muffin mix (recommended: Jiffy)
1 cup sour cream
1/2 cup (1 stick) butter, melted
1 to 1 1/2 cups shredded Cheddar (good with or without this)

Preheat oven to 350 degrees F.
In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

I saw this and amso glad for the recipe. I made a corn caserole, much different than this one, and thought it was good. So I made it again. ANd was going to make it again when DD told me it was awful! And she called his cousin to make sure I knew how bad it was.

Anyway I am glad that you posted this one because it looks so much better than the one I made.

We had broken up and he decided he could not live without me. The guy that I had been dating had been sending me flowers at least once a week and was bringing me bouquets every few days. And taking me out to eat and dancing several times a week. So anyway, I agreed to see Buddy again and he shows up ready for dinner and dancing (this guy can dance!!!!!!!!!!!) with a rose from a gas station that was dead. I have to tell you, I had been getting these gorgeous flowers but this dead little rose, with it's floppy head just made me melt! :lovestruc It has not happened again....but someday I'll tell you how he came home with a purse that her thought I'd like

My older sister's DD was staying with Gail and my Mom was watching the little ones. Mom was running up and down the stairs doing laundry, Gina's room was downstairs. Gail turned the Rec room into a big room for her. Somehow my Mom knocked a double louver door over on top of herself and was trapped on the floor under it :scared1: She is yelling Help Help Help!!!!! Gina is not ten feet away playing some video game.....no help there! Finally she crawls out and asks Gina why she did not come help her. "You called me Memere?????"

You can always count on bail money from a Mom of a teenager :thumbsup2

For what it is worth ....I think it is justifiable homicide and would let her go with a bottle of wine :thumbsup2
