#2 but with 1 1/2 at mk(full day plus am) then 1 and 1/2 at epcot with full day and a 2nd evening- you can even ride the monorail from MK to EP and have a nice dinner
 
My favorite is EPCOT, so as an adult, I would spend EVERY DAY there. :) (I am doing the Thrills tour in May 2017 as well! Maybe we'll cross!)
 
The Ultimate Day of Thrills tour dosn't go to Epcot. We considered doing Universal instead of Discovery Cove but didn't think one day there would be enough

It doesn't do the entire parks that it does go too and it's guided so your basically ride hopping for 7 hours with a nice lunch break. You may want to see each park in addition to this tour.

I didn't see any mention of children, if it's an adult only trip you'll probably enjoy epcot more than others unless either of you are star wars fans than HS might be worth a couple hours before hopping elsewhere.

Ultimate Day of Thrills
2 days in Epcot
1 day in MK
1 day at Discovery Cove

We also have a full day in AK and HS each as well as a rest day at the resort.

Which would you choose?
Choice 2 for me.
