What do you cook with salmon?

This is for Mother's Day lunch - the salmon will be grilled in a light, asian-inspired marinade that contains soy sauce and spices.

I want side dishes that are light, but filling. Needs to go well with the asian flavor, but I don't want an asian meal (so no noodles or tempura).

What do you serve with your grilled salmon/fish? TIA!
 
I usually make wild rice and green bean almondine to go along with salmon.
 
I usually serve rice and egg rolls. Do you have a good Chineese restaurant nearby where you could get egg rolls?
 

Love the way a good creamed spinich goes with salmon!

don't like spinich at all the rest of the time though.

How about a pasta (angel hair maybe) with a light cream sauce - nothing that will compete too heavily with the marinade on the salmon?
 
We usually make brown rice with it, but because it's Mom's Day I would make a nice pilaf or some wild rice.

As for veggies with salmon I broil asparagus mixed with olive oil, salt, and pepper. Or I stirfry spinach leaves or mixed baby veggies (ie Japanese veggies) with olive oil then I mix in a little sesame oil in it after it's cooled a bit.

If I really have time and taste for it, I make a Korean side dish with seasoned bean sprouts (namul) or a Japanese side dish with seasoned cucumbers (namasu). That would be pretty adventurous, though, for some. :)

I would make rice, but please pass the creamed spinach :flower:
 
We usually have rice pilaf, green bean casserole and a loaf of fresh, french bread when we grill salmon. The flavors blend together really well and it's one of our favorite meals :)

stir fried vegetables with sesame oil...brocoli, snap peas, mushrooms, water chestnuts.....
 
zucchini, sliced thin and sauteed with olive oil and garlic with a little locatelli cheese on top. And a stuffed potato.
 
I'll second the zucchini! I actually mix zucchini and yellow squash and steam them.

The creamed spinach does sound good! :)

I grilled talapia this week and I served it with asparagus and rice pilaf.

We grill salmon frequently. I like it with Thai cooking sauce (a sweet chili sauce.)

We usually have salad or steamed fresh green beans for the vegetable, and garlic mashed potatoes or french bread (or sourdough) or saffron rice for the starch.
