What are the peak times?

I've read in a couple posts that at peak times, you generally need the 11 month window. What exactly are the peak times? I'm assuming Christmas week and Easter week, and BWV and BCV during Epcot's F&W, but what are the other peak times during which it will be tough to get a reservation at the 7 month window or less? Also, are there times when it's really easy to get a reservation on short notice or does everything book up pretty much in advance?
 
Add the first two weeks of December to your list. I think the easiest to book is September prior to Food and Wine, and summer is easier through DVC than the other resorts. That being said, you will usually be able to book something shorter than 7 months out as long as you aren't too particular about which resort and don't need a GV or studio.
 
Additionally, peak times at HH and VB are all summer.
As far as getting reservations on short notice, that can be a relative question, 3 months short notice or 3 weeks short notice?? I guess in general, if you are flexible with dates and accomodations (size and location wise) you can probalby get something within 3 months for large parts of the year.
 
Any dates in Dream Season are really hard to book, though you can get lucky with the wait list.
 

Just about any time the points are low. And holidays. And Oct-Jan.
