What’s for dinner?

Korean braised chicken in the slow cooker. It was quite good, but I have a feeling it would be even better on the stove instead. So next time will try it that way. I did something to my back and have pain in my lower back, hips, and legs. So a slow cooker meal was what I needed today! I just ate the stew with a mini naan. Will make some noodles tomorrow most likely to have with it.

I use my hands as much as possible and once I get a good round shape I’ll use a rolling pin to really get a nice thin crust.
Yours looked so round—I reread your post a couple of times because I was sure I misunderstood that the crust itself wasn’t store bought. I am very impressed! And inspired.

The thread about the Kitchenaid stand mixer made me realize I could be doing much more with mine—made yeast rolls yesterday and pizza dough today. I’ve had the mixer since I got married almost 25 years ago and I don’t think I had ever used the dough hook before.

Ha...well, trust me, we are what....8-9 months into this pandemic, and my pizzas in those first few months....did not look like my pizza looks now. I'm a pretty good home cook...but I have never been a baker in my life before this whole thing. And never made homemade pizza dough. I have fiddled more with the pizza dough than anything I've made. We like pizza. I settled on the Tyler Florence recipe with adjustments, realized that the flour really matters with pizza, and then found that after the dough rises that refrigerating for 1-2 hours, and then working with the dough is best. Then I find it's pliable enough to be able to handle, but not too warm that I cause tears in the dough. But I'm not good enough to get it as thin as we like it without using a rolling pin at the end. It's cold in South Florida tonight & getting colder for the next few days. :cold:Dinner tonight was 15 bean soup & corn bread. We're probably going to have some type of soup or chili for the next few nights.

I always wonder where people are from when they write what they had for dinner, anyone else?

I always imagine the people making Pot Roast are somewhere cold. I live in California and that doesn’t seem to be a common dinner here.
 
We accidentally received one of those meal subscription boxes (long story) this afternoon. The stuff in it was pretty surprising; ingredients for 5 different meals, none of which I chose. When we had originally discussed doing this it was with the intention that DH and DS would choose the meals and do the cooking a time or two a week. Well, at least that part worked out and worked out great!! We had teriyaki-glazed chicken with roasted carrots and diakon slaw with edemame. They are not cooks but they did pretty well actually - all the ingredients were pre-prepped and the instructions were very clear. It was a lovely evening. :cloud9:
