What’s for Dinner Tonight?

This is in fact my last weekend in Deauville, so decided to make it worth my while. The scallop festival season is in full swing now so glad I was able to catch one of the better known ones as well as a smaller one held in a local village that’s still trying to make its deserved reputation (Villers-sur-Mer ).

For two days, I overindulged on pristine scallops, herrings and les bulots (sort of like mini conch shells) cooked in sooo many different styles: smoked over grape vines or applewood (the grape vine version was better IMHO), simmered in cream sauce, sautéed in brown butter w/ a Calvados finish…..just ahmazing!

Today, I’ll just eat green salad as reparations.

I’m so jealous! Scallops are my favorite seafood and a festival for it. 💗
 
Tonight I’m making chicken fried rice. Using up a half bag of frozen peas, 2 carrots left over from when I made soup over the weekend, chicken I froze when I crockpotted a whole chicken a few weeks ago, and leftover rice.

I love a meal that uses all the odds and ends.
 
Made tacos on Sunday (just basic americanized versions) and still have plenty for leftovers tonight.

Tomorrow I am making some ravioli that I picked up at the farmer's market with garlic bread and some broccoli.

Friday I am making pot roast for Samhain.
 
Breakfast for dinner tonight. We never do this, but my DH loves breakfast! Spinach and cheese omelettes, blueberry pancake for me and chocolate chip pancakes for DH and DS. Maybe some tater tots too.

Edit: Oh and bacon too!!! How could I forget that? Haha
