What’s for Dinner Tonight?

Fried chicken, collard greens, mac and cheese and cornbread. I forgot who the lovely lady's name was, but when my order took quite long, she upsized my portions at no cost to me!

I made one of my standard taco mixes last night:

Ground beef
Onions
Bell peppers
Black Beans
Garlic
Taco seasoning
Salt, pepper, chili powder, and cumin

I start by slowly cooking the beef to render the fat out. Then I remove the beef and use the fat to cook the onions and peppers. Once those are golden brown, I throw everything else in and let it cook together until the beans are warm and soft.

Tonight we had pasta, DH had meatballs with salad.

New England weather, I have air back on it’s stupid humid.

Ooh, chicken pot pie soup sounds perfect for a cozy, foggy night! I love how comforting soup can be when the weather's like this. As for me, I’m just hanging out, catching up on some reading and probably scrolling through a few more random things online. Keeping it lowkey tonight. What’s your go-to side for soup? Crusty bread or crackers?

Last nights Mississippi roast was phenomenal! Such an easy dish to make and oh so tasty! We served it with rice pilaf.

Tonight is a night we've been waiting for, for a long time. We have reservations with some friends at Gordan Ramsey's Hell's Kitchen! I already know I'll get the beef wellington. I've never had one, and it's their signature dish.

You will love it! I have not had it there, but did have it in London in July at a restaurant called Ship’s Tavern near our hotel in Bloomsbury. We actually ate there twice, as we liked the food so much. Enjoy!
