Tonight is a Slimming World fakeaway, chicken tikka masala dirty fries. Homemade chips/fries with tikka masala marinated chicken, a tikka masala sauce drizzled over the top and a salad.
We've got wind, humidity, warm and thunderstorms on the way before a big cooldown. The pressure and the pollen equal massive headache. I plan to see if I can get away with omelettes for dinner -- maybe even just veggie scrambled eggs if DH ends up taking over.
Tonight will be a Caribbean style oxtail stew with coconut rice. I wuvvvv rice cooked this way so made sure to only cook 1/4 cup; too easy to OD on otherwise, lol. Dessert will be mango slices with vanilla gelato.

I don’t use any dried fruit but that’s a personal choice. If you can’t find coconut cream just use coconut milk as a substitute.
Use any long grain rice such as jasmine, basmati or Carolina’s but not a parboiled rice such as Uncle Ben’s or Minute Rice. Make sure the pot cover remains in place for the final minutes. You are looking for your rice to “crater”-with small holes between clumps of grains. When that happens your rice is completely cooked neither mushy or crunchy and the water has dissipated.
