What’s for Dinner Tonight?

Dinner will be some of Saturday's prime rib dinner leftovers so things don't go to waste and so I have time to work on the batches navy bean and also split pea soups I've got started. Neighbor had a big family get together for the holiday and ordered two hams with the catered meal. Since she doesn't cook she asked me if I would possibly use the bones because she knows I have in the past. I figure it will be enough to make a dinner and a lunch size for my inlaws' freezer of each type, a dinner size serving for the neighbors of each type and probably a lunch serving of each for myself.

Luckily we went out for dinner yesterday for the first time ever for a holiday meal. Otherwise there's no way I'd be up for tackling extras tonight. It seemed very strange not to be prepping like a maniac for a holiday and I felt somehow guilty, but I have to say I did not miss all the work. Apparently our plans left some family and friends in shock. One of my girlfriends told me that she and a couple other friends talked about making a bet that we wouldn't go through with it.
 
The recipe I have is super easy.

1/2 Cup of room temp. butter
1 Cup of powdered sugar
1 tsp of vanilla extract
7oz Marshmallow fluff

Beat butter and sugar until fluffy, mix vanilla extract and fluff in until incorporated.

It’s supposed to be enough to cover two 8” cakes. I happened to use it for two 6” cakes. It IS a sticky frosting so to work it down around the edges of the cake, I dipped an offset spatula in hot water. I didn’t wipe the spatula off before “molding” the frosting down. Just note, it’s a very sweet frosting. The kids LOVE it. 😂It worked very well with a darker chocolate cake.

Just got home after being away all weekend so I am not sure, but... DD/SIL were supposed to take a hash brown casserole to his parents' for Easter brunch, but they didn't make it. I think I'll make it for dinner and either cut up chunks of ham and mix them in, or heat up some sliced ham to serve on the side. I'll heat up some sort of canned veg and call it good. DD and I are going out, so I really don't care what the menfolk eat, hahaha (hm. Maybe this will be supper for TOMORROW night and I'll let them fend for themselves tonight!)

Took a group of prepped and portioned foods out of the freezer so they’ll defrost and I’ll have something to eat for the remainder of the week.

Tonight I’ll eat the leftovers of the artichoke dish which I really enjoyed.
Trying to cut more meat out of my weekly diet and I think it’s doable but strangely enough the less meat I eat the more carbs I want. Think I’ll have a conversation with my nutritionist about what direction to go in next.
