Tonight it’ll be a dish I made up in my head: ratatouille and cannellini beans over couscous. Hopefully the couscous will calm the raging craving for carbs. Doesn’t happen often but maybe it’s the lack of meat that has me wanting them desperately .
Think I’ll dig into the lemon gelato I found in the freezer for dessert.
Thai take out tonight. DD's movers came today so we were all busy. DH and I drove about an hour in a UHaul truck to pick up some furniture. It's all solid maple and crazy heavy. I'm so tired...
Korean BBQ Tacos today — absolutely delicious! Starting tomorrow, I’ll be switching gears and trying to follow a strict 900-calorie diet based on what I read here https://betterme.world/articles/900-calorie-diet/. So today feels like my last chance to truly go all out and add every topping, sauce, and extra I’ve been craving. Gotta enjoy it while I can, because from tomorrow on, it’s all about discipline and focus
tonight is usually leftover night, but DH will finish the meatloaf for lunch.
He is getting dinner out with DD and the grand kids between Ninja Warriors and basketball.
So I will find something easy in the freezer.
Ended the leftover ratatouille and bean dish tonight solo, no rice, no pasta, no nothing. Still good but tbh not as filling. Oh well, Sunday is almost here.
Finally have the London broil marinating. So I’ll grill that up tonight with mac & cheese and a green salad.
I wasn’t planning on hosting Easter, but since hubby didn’t have surgery…yet…I’m having a small dinner with a few friends and the kids that are town. Thank god for Honey Baked Ham online. It was delivered and I can add a few side dishes, make rolls and call it Easter dinner!
