What’s for Dinner Tonight?

Tonight is going to be a combo of leftovers and scrounging things out of the freezer.

But I did figure out enough to make my grocery list and get through the next couple of days ... Sunday will be grilled chicken, stuffed sweet potatoes, salad, and pasta, and then Monday will be pancakes, strawberries, and veggie sausage for dinner.
 
Leftovers- There's leftover homemade pepperoni pizza, homemade asparagus flat bread, and about a half of an asparagus/leek/bacon quiche in my fridge. It's been a long, cold day mudding and sanding ceilings in DD's new house, as well as cleaning plaster/mud dust and unclogging the bathroom sink (ick, the stink of sewer gas). I just don't have it in me to cook, so it's everyone for themselves. SIL is heating up Campbell's chicken noodle soup and making a sunbutter and fluff sandwich for the little guy as we speak... well, type!
 
I went to a St Patty’s Day parade viewing party yesterday. I brought an Irish soda bread, fries with a loaded potato dip, and cookie o’puss (ice cream cake). We also had shrimp cocktail, ranch roll ups, salad, deviled eggs, corn beef, mashed potatoes, carrots, wings, and cupcakes. Super fun day. I have seen the parade in probably 20 years.

Not supper, but a late lunch. Mrs. wabbott spoiled me for my birthday and put together my two favorite Disney dishes.

Bobotie: She makes her version in a casserole instead of a skillet, as is done at Boma. I actually like hers better, since it is a bit more moist.

And zebra domes for dessert. Very, very close to what is served @ Boma.
 
Tilapia, heavily seasoned and sautéed in olive oil in cast iron pan-so good. I got this recipe from a restaurant in the Caribbean forever ago and it’s always how I cook fish now. With rice, lemon butter sauce and veggies. Haven’t decided which ones yet-either roasted Brussels sprouts or broccoli. I don’t have asparagus or I’d cook that.
