What’s for Dinner Tonight?

Tonight is Caprese sandwiches (on English muffins) and sweet potato fries

DH has requested Salisbury Steak tonight after a full week with no red meat. Not sure if I'll serve with noodles or mashed potatoes, but I got some perfect asparagus to roast also.

I think we are going to grab something out tonight. I have a meeting that will last until at least 5:30 (I am a teacher, so this is late for me.) The meeting is right by one of our favorite gastropubs, so we will get something there.

Ate at the club level of the hotel we’re staying at before we fly out tomorrow. They had a nice appetizer set up with salad and charcuterie. That was good enough for me. I think hubby just went downstairs to find a sandwich.

Dh made bacon cheeseburgers, corn and his fave…rice-a-roni. I was hoping I’d get home in time to make some homemade French fries, but he was already making the rice.

Tonight DH is having chilaquiles.
Not sure what I am having. I will dig around in the freezer.
DGD is coming over today to bake, so after that I will think about my dinner

Does that mean the hotdogs are served with all of those toppings, or is that the Carolina selection that's offered?
What type of slaw -- creamy? Vinegar?

If I get home from work in time, we'll have bacon/leek/asparagus/swiss quiche. If not, it's BLTs and I'll do something tomorrow with the leeks and asparagus! (maybe flatbread)

All of the toppings. Some people will omit the mustard, but all of it is standard. I grew up in the mountains of NC. No vinegar based slaw for us. Mayo for the win.

Interesting. That's new to me. Actually sounds like it tilts toward a Korean-style palate in a certain sense.

The slaw actually sounds more appealing than kraut-style dogs to me, even though I do love sauerkraut itself. I would probably omit the mustard.

It's gonna be one of those pull the rabbit out of my hat days here. No inspiration, no motivation to even be inspired, let alone actually cook. I think I'm going to pull some chicken tenders out of the freezer and figure out what I'll do with them when I absolutely must.

I feel ya! The asparagus has been in the fridge since Friday and I am hoping it's still salvageable. I just haven't had enough energy, been inspired enough or home enough or whatever to use it. I have 3 dozen eggs stocked up (from Trader Joe's in Portsmouth, NH, at $3.49 a dozen instead of $8.99 a dozen here in Bangor) so I want to use them before I lose them!

Leftover shrimp scampi for me. DH and youngest DS are on a plane to Vegas as we speak. They are playing in a hockey tournament. This is DS’s first time bc he’s old enough now. He’s so excited!!! I’ll be alone for a week and I hate cooking for just me.
