What’s for Dinner Tonight?

How did you prepare the greens?
Removed the hard stem from the Swiss chard, mustard greens and spinach. Lay the leaves of all top of each other and rolled them together like a cigar; slice thru the “cigar” about 1/4” apart till finished- it’ll look like thin ribbons.
Place steamer, filled with greens, in simmering liquid ( could be broth, water, or whatever you fancy), cover and cook for about 3-5 minutes or until the greens darken. Serve immed and if you like, sprinkle with lemon juice.
I don’t use salt on most of my veggies but that a personal weirdness, lol. Season as you like 😎.

Finished eating the braised pork chop leftovers today. Still tasty.

I made several soups last month and now awaiting the arrival of a new long lasting cooler that will let me bring make ahead dishes on our December vacation. When it arrives I’ll pick and choose what will fit into the overall menu.

Err..elder sister announced me “overly haunted” which is a Caribbeanism that means obsessed but I beg to disagree 😉. I’ve time on my hands and using it as best as I know. Now back to reading cookbooks, hahaha
 

I attempted to get back on track with meal planning this week but we attended a wake tonight so we ended up stopping for dinner after. I had pesto pasta, it was a ridiculously large portion.
 
Tonight we had potato/cheese pierogies, frozen from Sam's. I threw together a veggie fry of a little diced bacon, a sliced onion, three diced apples, and 1/2 head of Napa cabbage, seasoned with S&P, smoked paprika, and garlic. After browning all this I threw in a little cider and let it all simmer. I also made a brown apple gravy from cider and a packet of brown gravy mix. It was all just thrown together, based on what was in the cupboard/fridge, but man, was it good! DD and SIL mixed sour cream in the apple gravy and it was even better!
 
No idea,,,,just got home from vacation last night.
I need to go to the grocery store.....something else for sure
We just got back a few days ago and had to hit the ground running at work. Tonight is the first night I've cooked; a very quick chicken recipe I ripped off of Tony Roma's many years ago, with rice pilaf (from a mix) and frozen peas for sides.

I had suspended our meal subscription service while we were away but we should get a delivery tomorrow, so there will be a few things to choose from for tomorrow night.
 
There are only a few locations in CT, NY, and NJ. If you do go let us know and we can make some recommendations. ☺️
We'll definitely stop, if we see one. Just in case we happen upon one, what would be the recommendations for two people "on the road" with a microwave (at most) to cook in?
 
DH was feeling better tonight, so we were able to go out. We started with an heirloom tomato salad, then shared a Hot Brown, Derby Pie & Mint Julip to complete our "when in Louisville, KY" meal.

They do a lot of prepared food, everything I have had has been good so any of that could go in a microwave. I usually always get their fresh lazy man lobster and make lobster rolls, their house made donuts are great, as well as their house made potato chips, I like all of their house made dips (it’s a frequent stop for football snacks), they also sell dole whip in hand packed pints and at their ice cream/coffee shop. They do a lot of season items. Their caramel apples are great. My DH loves the cookie milk they make at Christmas.

Adding to the fine list @LoveDaisy started: smoked tuna salad, mixed seafood salad (Montauk is this household’s fav but others to choose), can a chicken pot pie go in the nuker? I would definitely check; the “wing bar”, where all sorts of chicken wings are sold already cooked plus smoked brisket and beef and pork ribs. The made on site rice cakes for when you feel virtuous; DGD could watch them being made for an easy five minutes non stop, lol. An entire aisle of hot buffet food: Italian, Asian, Latino, etc. And all this with robotic cows mooing, the Chiquita Bonita girl dancing and free samples.

Yes to all of this! I totally forgot about the rice cakes. Those are a must try!

Countdown to Vegas, so it’s salads every day this week. There will be no calorie counting on vacation! Today’s salad is roasted butternut squash and garbanzos on a bed of greens and mixed veggies. Warm salsa for the dressing.

A busy day giving my new vacuum sealer a work out. Put up a skirt steak and boneless chicky parts in individual marinades; re-sealed soups already frozen in Ziplock bags so there are less concerns of leakage. Also harvested herbs into individual pouches.
I’m really liking this new machine!

I made one last (possibly) soup today that used up almost all my frozen leeks:
potage poireaux with many fewer potatoes than tradition calls for but there’s that low carb thingie happening still.

Supposedly, eating this soup will change around my desire for tasty but less healthful foods. So tonight starts a full week of soups and salads.
 
We're staying at a Drury Inn for the first time. After a long day, we decided to stay in & partake of their Kickback offerings for dinner.

For anyone who hasn't stayed in one & is curious what to expect, they offered Spring Salad, Chicken Noodle Soup, BBQ Pulled Pork Sliders, Baked Beans, Coleslaw & White Cheddar Mac n Cheese. You could also have unlimited coffee, tea or soft drinks, plus 3 alcoholic beverages each.

Our hotel is located in chain restaurant hades, so we may eat here again tommorow night.
 
Pizza eaten in the hallway outside of my lab prep room. Labs on Thursdays run noon-4 and 5pm-9pm, so I have to be here the whole time. I believe they had turkey burgers w/swiss cheese and avocado at home tonight, but I won't get there until 9:30- at which point I'll go right upstairs and drop into bed!
