What’s for Dinner Tonight?

Today: Hawaiian bbq chicken
Monday: Tortellini
Tuesday: (@parents) Lazy Chicken Cordon Blue & Rice
Wednesday: Crock pot beef stew
Thursday: (home) no idea

*We had a big flood in our basement as the hot water heater failed while we were away (I'm not complaining as I am well aware how other people are suffering incredibly much more right now in the country and not in any comparing our relatively minor issue- just explaining our circumstances that need to be dealt with), but while we are trying to dry out the things that were down there and the basement itself the meal rotation or travel to parents may be subject to change.

I hope you didn’t have to much damage. I had it happen a few years ago, it was such a mess! Once we cleaned up we ran a dehumidifier down there for a week, it made a big difference in drying the space.
 
Stir fry with steak, yellow bell pepper, snow peas, garlic, cilantro, soy sauce and Italian dressing with edamame noodles mixed in and green salad
 

Wrote this late last night/early this morning and apparently forgot to hit “post reply”.

Tonight I consumed a quart of garlic soup.

Normally a poached egg goes in it but I just had the broth, snipped green onions and a few croutons.
And what did we learn from this, class? Lighter soups make you eat more, not less 😉.

And now tonight’s meal:

Had a hankering for ratatouille but as a soup. Really simple to pull a ziplock bag out of the freezer and just add herb seasoned chicky broth to it.
Glad I made enough for another night’s meal.
 
We got back from WDW on Saturday. Getting back in the routine of cooking is a drag.

Sunday- smash burgers and French fries
Monday - crockpot tomato soup and grilled cheese
Tonight- spaghetti and meatballs
 
The last of the ratatouille soup on the menu tonight; added a bit of grated Parmesan cheese to it this time; nice.
 
Swedish meatballs over egg noodles with a green salad. That uses up a batch of meatballs in the freezer.
 
Made some beef empanadas today as a make ahead vacation meal. Used store bought dough and sadly it showed. Threw the first batch of 6 in the garbage which was very painful as I hate waste and the filling was on point. Oh well, start again tomorrow.
Defrosted some French white bean soup and it helped take the blues away.
Sharp cheddar with pear and apple slices for dessert later this evening.
 
I went to dinner with my friend whose brother’s wake I went to last week. It was great to see her. I had soup (clam chowder) and salad.
 
I love garlic soup and it’s so simple to make.
So I made some again today and will serve it with a beef empanada for tonight’s dinner. Think I’ll have a glass of Tokay for dessert.
