Which day are the water parks more busy?

Saturday's for sure due to the local population, work schedules, kids out of school etc.

Based on other posts, Monday/Tuesdays and Fridays tend to be a bit slower

Weather must play a role as well - they have been known to close during severe weather

Best advice is to arrive before official opening to be among first on the slides
