Virgin Island Excursion Questions?

DH and I will be traveling with our two children, 2 & 10. We also have a tag along friend who is 11.

Can the kids go on one excursion while the adults go on another. I think I would be nervous letting the 10 & 11 year old go on their own. Am I being to cautious?

Do all of the excursions leave in the morning? I thought I read somewhere that you leave the ship before 8:00 am? Are their any that leave later in the day?

Are there any excursions we can take the 2 year (nearly 3 year old) with us? I don't mind leaving him at Flounder's Reef, but would be nice if he could join us.
