Vegetarian meal ideas needed!

Hi everyone,

My BF from high school just had her first baby and I am going down on Sunday to visit. Her DH is a vegetarian, so I am looking for some suggestions as to what kinds of meals I can bring to them.

I am Italian and make baked ziti all the time, so that's one. What else that will freeze well? I love to cook, so that's no problem. She is also breastfeeding, so I didn't want to bring a heavy tomato sauce/spicy foods.

Any suggestions would be appreciated. Thanks!
 
Vegan or Vegetarian? Our Vegetarian DD likes Eggplant parm, Mac and Cheese (homemade, of course) and veggie chili. As long as nothing is too spicy, breastfeeding mom should be able to handle it.
 
I'm vegetarian... here are a few of my favs.
eggplant parm, stuffed shells (with ricotta, spinach & mushrooms),
spinach & black bean quesadilla, veg. chili, creamy potato soup, fried rice with egg & veggies, portabello fajita.
I also make a dish thats kinds like a mexican caserole. I layer tortillas with refried beans, cheese, cream cheese, salsa, peppers, onions... and bake it. My DH loves it!

I'm not sure how these things would freeze, but I hope it's helpful. Good luck!
 

Each breastfeeding baby is different, too! I ate very spicy foods, which didn't upset my DD, but one bit of broccoli and she had really stinky gas! I mean at two weeks old, the whole room could stink up!

So, maybe find out what she's either avoiding or likes.

We also make a southwest casserole, with black beans and tomatoes. I use chicken breast, but it would be great with tofu - firm tofu and squeeze some of the liquid out first.

Soups are nice, too. You could make some plain vegetable soup, add a can of tomatoes and some kidney beans, some italian seasoning, then right when you eat it add a little pasta - Minestrone.
 
Stir-frys are great and can be tailored to the mom's likes. We make a beef stew that is totally meatless, but is thick and yummy just like the real thing. (I found the recipe on www.vegweb.com) There are tons of different soup recipes that freeze well. Also, think about subbing meatless products, like soy chorizo (sp?) for the real thing in recipes.
 
What about cheese enchiladas, then they can spice them to taste. :) Lasagne can be made meatless (I prefer it that way), Chili with no meat, soup, quiche? I guess it depends on how strict a vegetarian he is and whether he eats cheese or not.....good luck!
