Good night. I'm heading into work tomorrow...so I won't be on as often. :sad2:



I've been making cakes by brute force for quite a while now. I use a fork and make sure that the butter is at room temperature or warmer.

Do you have a hand whisk? They are as much as $30 these days.....as that's for a Breville...

The butter was reasonably warm...but I just didn't realise JUST how tough it would be.
Part of my error was making too much at once. (novice error)
More room in the bowl would have made it easier.

A hand whisk? As in a normal whisk? Wouldn't it just go twang with something so tough?
We do have a barmix...I contemplated that...but decided it probably wouldn't work.


Question -
How cool do the cupcakes need to be before icing? :confused3

I must have missed part of the conversation again, because I thought she was making an Easter cake. I was picturing a bunny or something like that, lol. One day, I am just going to give up on trying to figure out what everyone is talking about!

Good and cold, as the frosting will run off of them other wise. I will take one when there done. :thumbsup2

I've worked out that my bamix can be used for cake making. You need the proper blade for this. I used it to whip cream last night and it was brilliant.

To soften butter, I pop it in the micro for a few seconds. How much depends on how hard the butter was to begin with and you don't want to end up with the butter completely melted.

Your cupcakes need to be pretty much completely cool to ice. Otherwise the frosting/butter will melt and slide right off.

I'd LOVE to know the blades you use. This is an old bamix mum had. Still works great for blitzing things up with the "normal" blade. Quick and easy smoothies especially. But I've used if for muffin mix before too.

I'm just enjoy my well deserved T-Bone steak and veggies...

I've learnt a lot. I'm taking them to work. So in the future I'd ice them there. But I just didn't know exactly how things would go.
These guys eat anything and they DO taste good...so messy icing won't phase them... :lmao:

Ok so first up the recipe used

Vanilla Cupcakes
By: Bill Granger From: Bill's Food

For the cakes:

250 g unsalted butter, softened
250 g caster sugar
4 eggs
1 tsp natural vanilla extract
185 g self-raising flour
60 g plain flour
185 ml milk

For the icing:

250 g white chocolate chips
300 ml soured cream

Method
1. For the cakes: preheat the oven to 180C/gas 4. Grease a 12-hole 125ml non-stick muffin tray.

2. Put the butter and sugar in a bowl and beat until pale and creamy. Add the eggs, one at a time, then add the vanilla and beat until well combined. Sift the flours together and fold in while adding the milk. Stir until almost smooth.

3. Divide the mixture between the muffin holes then bake for 20 minutes. Remove from the oven and leave to sit for 10 minutes in the tin. Turn the cakes out onto a wire rack to cool.

4. For the icing: while the cakes are cooling put the white chocolate in a bowl over gently simmering water.

5. Once the chocolate has melted stir until smooth and remove from the heat to cool slightly. Gently beat in the sour cream until you have a thick creamy icing.

In case I failed in the icing I bought some ready made Pink Buttercream Icing as well. Although I did a double batch of cupcakes (24) I only did one batch of icing which actually nearly went all the way. It could have if I'd realised it would and been better at it. But...anyways...

Cupcakes look lovely and I'm going to remember that white chocolate icing recipe.

I used this youtube clip...for working out my blades and which ones to use for the whipping cream. I figure if the butter was pretty soft, it would do the same job. I have 3 of the 4 blades shown and my bamix is at least 15 years old.

Not nice to be awake in the middle of the night.

Connor was up 5 times in the middle of the night from 1am when I went to bed until 8am when he woke up. One time was my fault. Alarm A is the one I use on days DS5 goes to preschool set for 7am. Alarm B is the one I change for other things. I set alarm B but accidentally switched on alarm A.
