Morning, all. We are in the middle of a weird spring storm... at times it's rain, at times it's snow. Luckily, it's not cold enough for the snow to stick around long.


Dinner tonight will be pasta with a meat sauce.

So being the amazing wife that I am, I made food for DH to have while I am out, I made fresh Stromboli and Mariana sauce, Pintos, Coleslaw, and steaks (ready to grill). Burgers are ready to grill and fixings are in place. He has fresh cut and roasted turkey for lunches while I am away also.

I get fast food and he gets all the nice stuff...

Plus the lef tover cake we shared for our B'days.... Lemon Layer with Lemon Curd and Marscapone cheese...
 
Hey all! I am so sorry I've disappeared for so long. I was busy for few days and didn't post and time just got away from me. It's pure laziness and I will get on with updating the index :)

I've been sick with a bad sinus infection this past week so today is the first day I've cooked in a few days. Spring break is going on so I offered to make Kevin and Amanda dinner today. They are coming by to get it when they finish at the zoo. I made spaghetti and meatballs (I have a new recipe I will post later), salad, bread with an herb butter I made for it, a pitcher of sweet tea, and a yellow cake with mocha icing.

After all that, I decided Scott and I would have a pizza for dinner, lol.

Meatballs*
1/2 pound ground veal (I use 1lb. of ground beef, 1 lb. of ground pork. I can't find veal in 1/2 lb. here)
1/2 pound ground pork
1 pound ground beef
1 cup fresh white bread crumbs (4 slices, crusts removed)
1/4 cup seasoned dry bread crumbs
2 tablespoons chopped fresh flat-leaf parsley
1/2 cup freshly grated Parmesan cheese
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
1 extra-large egg, beaten
Vegetable oil
Olive oil


Place the ground meats, both bread crumbs, parsley, Parmesan, salt, pepper, nutmeg, egg, and 3/4 cup warm water in a bowl. Combine very lightly with a fork. Using your hands, lightly form the mixture into 2-inch meatballs. You will have 14 to 16 meatballs.**

Pour equal amounts of vegetable oil and olive oil into a large (12-inch) skillet to a depth of 1/4-inch. (I would use the biggest skillet I had. Mine is about 12 inches and when I make the meatballs mini- sized, like a walnut, it took me 4 batches.) Heat the oil. Very carefully, in batches, place the meatballs in the oil and brown them well on all sides over medium-low heat, turning carefully with a spatula or a fork. This should take about 10 minutes for each batch. Don't crowd the meatballs. Remove the meatballs to a plate covered with paper towels. Discard the oil but don't clean the pan.

**You can make them any size you want. I made them the size the recipe called for and served them with mushroom gravy over egg noodles. I cooked them all the way when I did this. Today I made them for spaghetti. I cooked the meatballs only about halfway and let them cook the rest of the way in the spaghetti sauce.
 
I fell off my diet wagon big time this weekend. Friday night was fish and chips at Red Robin. Bud and I went shopping for him, which was a bust We do not eat meat on Friday in Lent and there we were, starving in the middle of a bunch of steak houses :headache: We ran into RR because they have fish. Saturday was a 40th Anniversary party int eh afternoon and a Jack and Jill in the evening. YUM!!!!!!!!!!!!!! Sunday was movies with the girls................popcorn and butter! I saw Hunger Games.

Today I think I am going to make a pasta with meatballs. Buddy,s cousin cooked up a storm and sent us her meatballs and sausage with sauce.

Don't think of it as a diet but a lifestyle change and you just had an off weekend. :thumbsup2

Had a busy Saturday. Went to the gym, then to the store for good for me foods. Dropped all of that at home, had a shower then went to a ladies night out event where they had vendors selling jewelry, purses, food, makeup, etc.

They had wine, cheese & crackers, fruit and veggies and meatballs, had way to many of those. They also had two vendors that did free massages and acupuncture. I did both. Was quite relaxed at the end of the night. ;)

I got my DN two Easter gifts, ones for two coworkers, and got myself some really nice bags from Thirty-One. I also got myself some cookies, which came individually packed and are in my freezer until after Lent. And since they are individually packed and I can just grab one out when I want a little something.

Sunday was quiet although I did go to Trader Joes late, after 8pm.

Dinner tonight was salmon, oven fries and roasted butternut squash. Tomorrow night I am making stuffed peppers with red peppers, orzo, turkey and not sure what else yet.

WFDT? It's Tuesday and a work colleague of DH's has invited us for dinner. I have it on good authority that there is 3 courses and risotto (mushroom) is on the menu. I need to be good. I need to be good. I need to be good......and watch my portion sizes. :upsidedow

So today I am making me and Scott the meatballs and mini-farfalle for dinner today. I am looking forward to some good comfort food. Honestly, I've been so plugged that I can't taste a whole lot so I haven't been eating much. Don't you hate that?

Dinner last night was salad and chicken breast... 2 glasses of red wine

Tonight is well I don't know yet.... i am trying to be good, so we will see.

I did not sleep well the last two night so maybe I will get a couple more glasses of wine and try and sleep thru the night.

This weekend was CRAZY!!! On Friday night, Katie, Jacob and I went to see The Hunger Games (Loved it!!!). Saturday was spent running kids from one activity to another all day long! The only time we got to sit still was at Leslie's school play. It was cute, but I'm glad it's about over. Rehearsals at 7:00 in the morning is a bit too much for elementary kids! Yesterday, I stayed in bed with a nasty cold, all day long! It hit me really hard! Sinus pain, sneezing, coughing, scratchy throat... the whole 9 yards. Today, I feel a bit better.

Dinner tonight will be pasta with a meat sauce.

I saw it on Sunday with the girls! Loved it! Now I am going to read the books

I am not sure what I am going to make for dinner. Buddy is cranky and I am too. I had to call and ask that his Mom be reevaluated for Hospice care. They did and want us to sign the papers tomorrow. Buddy is so flippin conflicted. I understand to a point but I told him if he feels that he cannot sign these papers then he needs to have a plan that will help her. She is in pain and right now her pain management is scheduled. I had an argument with an LPN the other day over Tylenol...............Tylenol!!!!!!!!!!!!!!!!!!! I called the nurse supervisor to discuss but honestly, her pain level is going to increase and we need to make sure we have everything in place for her. I am seriously rethinking that he can make decisions in the event something happens to me.

Question for the WFD ladies: what is your favorite cabbage recipe? I got a HUGE cabbage in my CSA box this week. I really have only ever used green cabbage for cole slaw, but this cabbage would make slaw for about 70 people! I need other ideas. It's just a basic round green cabbage. Thoughts? (Besides John's suggestion, which was to feed it to the rabbits in our yard! :laughing: )
 
Becky- I would make a lazy man stuffed cabbage. You know I don't have a recipe but you brown ground meat and drain any fat. Saute chopped onion until translucent and toss the browned meat back in the pan. Slice teh cabbage teh way you would for slaw, not all chopped up but thinly sliced and add it to teh pan with a little chicken stock if you need it. Add some diced canned tomatoes and some tomato soup or ketchup and simmer. I used to buy some brown rice from a chinese restaurant and add it at the end. I always salted liberally,, added pepper and a pinch of sugar.

Very homey food but good.

The ketchup is from Buddy's aunt. She used to make the best stuffed cabbage I ever had and used a dutch oven on the stovetop. just like my Mom. She also criss-crossed forks on the bottom of the pot and never had a scorched cabbage roll.

Pioneer Woman has a recipe on her site for Edna Mae's Escalloped Cabbage. We really like it! You could totally make the recipe your own, though. It's basically, parboiled cabbage leaves spread in a baking pan and covered with a cheese sauce. Then baked. It's really yummy, but I'm sure that if you put your mind to it, you could gourmet it up!!!

I like Nancy's idea of the stuffed cabbage, too! I'm a cabbage lover. However, most of the time, I just like it plain, boiled in chicken broth.

PIO, Brandi, Nan - good luck on staying good, as Marilyn said think of it as a lifestyle change and you indulged a bit, but time to get back on track! After dining out or ordering delivery for the past week, I could use to take my own advice!

Tonight is my first home cooked meal in well over a week! :eek: (Although I did make lunch for 40 last Saturday. I'm making stuffed peppers and I'm going to saute up the leftover salad toppings (celery, mushroom, onions, etc) from Sat into my meat filling.

*sniff* *sniff* sniff* did someone say BACON????? I distinctly heard bacon....oh yes, bacon was definitely mentioned. definitely.
 
I made a yummy, although a tad salty, dinner tonight. I made stuffed red bell peppers with ground turkey, orzo, red onions, zucchini and home made tomato juice. :love:

And the salty came from spilling too much salt into the orzo while it was cooking. :headache: I forgot to put it in the water before I put it in and when I went to put some in the lid popped off of the shaker.

I'll put the recipe up tomorrow, have to write it down as it's all in my head. ;)

At the bold, that's too funny! Fran told me I didn't put enough salt in the dinner. I salted the meat when I cooked it, then when I put in the veggies, again when I added the rice.. and when I finally served her the stuffed pepper she said it needed salt! I tasted it the whole way through and really did not want to over salt things (since I often do)

Just fies to shie that everything is a matter of taste!
 
Morning, all! Lunch today is leftover spaghetti and meatballs (actually mini-penne). Tonight is church and since it's spring break for both city and county, there is no meal. Scott said he will pick something on the way to his study and I will probably will, too.

Nan, I'm so sorry to read all you guys are going through. Know we are all thinking of you.

Jen- LOOOOOOOOOOVE your pics! I was just picturing myself in the middle of the wildflowers with a glass of sweet tea and a good book. Parked never to move again, lol. :)

Dinner from last night.


1st course was a porcini mushroom risotto. I had no hope of staying good. He put a whole hunk of cheese into the risotto.

Main course comprised of sashimi grade tuna that he marinaded in rosemary and a whole bunch of herbs...surprisingly, all dried.

He placed the tuna in his BBQ and served it up on the undercooked/rare side.

He made a plate of panfried eggplant, coated and crumbed.

Dessert was home made custard with fresh berries. The custard was lovely and I was most restrained by only have a tiny serve.

Hi all, I know I havent posted in a while but still check in for new recipes. I saw that Becky was looking for cabbage recipes. This is a recipe of my Mom's that I always loved.

Braised Cabbage and Celery

2 tbs butter
4 cups coursely sliced cabbage
1 cup sliced celery
1/2 cup diced green pepper
2 tbs boiling water
1/2 tsp sugar
3/4 tsp salt
1/8 tsp pepper

Melt butter in a large skillet, add vegetables and remaining ingredients. Mix together and cover tightly. Cook just until vegetables are tender.
