The What's For Dinner Thread - October'11 (recipe index in OP)

So my brain is not working very well... My night to close is tomorrow night. Not tonight, so I am heading out to the subway...
 
I have a spreadsheet of my freezer and my alcohol... It is funny to see how much we have...

Now that the son has moved out :woohoo: it will mean that the food will last longer.

I have almost emptied out my pantry, I just have staples, and some chocolate (that is a staple right)

I need to do the same thing. When I was out shopping last week I called my DM to see if we have any lite coconut milk, we had regular, and then forgot to get a can. It was a good thing because we have 3. :sad2:

When my BFF's oldest went to college her grocery bill cut down a good bit.

And of course chocolate is a staple. :thumbsup2

That's a lot of food to have in the house for two people, it kind of sounds like my house!

Yeah and DM went out today and bought more food to put in the freezer. :headache: Other than fresh fruits and veggies and things we completely run out of that are absolute essentials I am going to try and live with what we have in the house for the next 6 months.

I did find a good breakfast recipe for the quinoa, may try to make it tropical with coconut milk. :rotfl:
 
WooHoo it's supposed to be close to 70 out today. Spring really is coming. But I wouldn't hold my breath too long cuz I just bet we will be hit with a monster snow storm yet. Our worst ones always hit in March. But for today I will throughly enjoy it. Maybe even take Cooper for a nice long walk.

It was warm here too. But windy as all get out! I almost blew away!

Yes, the enchiladas did not happen... We ate left overs and I went straight to bed. Like at 8:15 and did not get up one time until this mornings alarm....

I have to stay late tonight, I have to close the facility, and I will not get home until after 7. So it will be fast food tonight.

Dinner tonight will be salmon, one of the many rice medleys I have in the pantry, green beans and leftover cauliflower.

I got almost all of the pantry and all of the freezer cataloged this past weekend and oh my stars! :sad2: We have too much food for 2 people. I have 3 boxes of quoina, we have at least 15 boxes of different types of pasta (spaghetti, different noodles, orzo) :sad2:, a LOT of different rice packets, enough stuffing mix to feed 50 people for Thanksgiving, about 10 lbs worth of shrimp, and on and on and on.....

I'll be fine in the event of a Zombiepocolypse. :rotfl: However I don't have any Twinkies. :headache: ;)

Sometimes I peek in our pantry and then I feel overwhelmed, so I just close it again. :lmao:

I got all off track when we had our stuff. First it was Irene, my town was fine but our weight loss center was hammered and out of power for ten days. I just went back after Donny's wedding and then Storm Alfred..............I could have stayed on but in my house it was comfort foods for a crowd and I dove in. After that it was this wicked stressful winter. You don't need to worry about cutting back, not now. I am a firm believer in one thing at a time and not setting myself up to fail and stress and diets equal failure for me.

DInner is going to be chicken of some kind, salad and a green veggie. I need to go to see Bud's mom after the girls go home so this meal needs to be fast

You've done great on the weight loss! SO proud of you.

Texas is truly living up to the "March comes in like a lion" legend. It was SO windy here today. The sky is brown with dust. :sick:

Work the rest of the week should be fairly easy because students are participating in state testing, so I won't get the opportunity to see all of my kids.

We had chipped ham sandwiches for dinner tonight. They were yum!

Nan ~ You are doing such a good job. I am really considering joining WW. I would love to do it online though. What do you think? The only thing I really need to understand is the point system as I have a few WW cookbooks. How do they decide how many points you get each day?

But I will eat one to be nice plus by that time I will be starving as I don't go home between services. Doug will join me and so will Elizabeth & Jay and the boys so all in all it will be a fun night in spite of the food.

I promise I've been reading along, but the Nyquil has made me loopy, and I don't remember much!

Dinner tonight is chicken with mango salsa over rice. Except... I didn't have any mango salsa, so I substituted a peach salsa instead. I think it will still be yummy!

Got word that my uncle passed away yesterday. We've been expecting it, and it's quite a blessing as he had cancer that had invaded his entire body, and he was in a lot of pain. His wife died 10 years ago, and I know he's been lonely without her. The funeral will be next Tuesday. My sister and I are planning on going to it with my father. This will be a hard one for him, as he and my uncle were very, very close.

Thanks for all your prayers for Adam, as well. Unfortunately, I don't have much good news to report on that front, either. As of last night, he was still in the ICU. He's in a medically induced coma, as they try to figure out what to do for him. Every time they try to wake him up, he goes into convulsions. Keep praying. This will really be bad, if he passes!
 
I am sorry to hear about your uncle, mines funeral was today.

Prayers are coming your way and I wish I could give you hugs and help with everything.

I feel bad complaining about my foot. I am finally on the train home and had to almost run to make it. Now I am hurting so much, I can't wait to get home.
 
Glynis- I am so sorry that teh news is not better. I simply have no words but that my heart breaks for this family. :grouphug:

Ellen- I have to admit that I don't know much about the new WW plan. I used to follow the CORE plan and it worked well for me. I lost weight and was not hungry. I am following Ideal Protein now and really am satisfied. It is not for everyone but so far I have had good results. I need to make it to maintenance to know for sure though................I always make my goal but never follow through. My sister got all the material for the maintenance plan but did not read it so she put on 10 pounds. Is she my sister or what??????????????? :lmao:

Marilyn- my storage shelves are loaded with stuff too. I make a plan to just use it up but honestly, there is a lot of food I should stay away from but love!

Jen- thanks for asking about Buddy's Mom. I don't really know. I went last night after the girls went home and she was curled up in a ball. I got the nurse and she has pneumonia. Today she is much better, totally not what we thought. She is still in a lot of pain though, I think that is going to be always. Her legs and arm is constricted so they fall asleep easily. I started rubbing her feet when they hurt and not I am her massage therapist. I am going to have the softest hands, I slather her with lotion and massage her legs and feet the entire time I am there. She asks and I cannot say no.

tonight we are grilling chicken breast that I marinated in a Mccormick thing, a stirfry of squash, zucchini, mushrooms and yellow and green peppers with garlic. I am not supposed to have cooked onions and I admit i usual;ly cheat but not tonight. I made a green salad with sweet onions and cucumbers and celery. I am wicked starving!!!!!!!!!!!!!!!!!!!!

Donny gave me salted caramels wrapped in chcocolate and I am having one before dinner!

GUess What!!!!!!!!!!!!!!!!!!! My Sis IL has tix to Les Mis Friday night and they are not going. SHe called Marisa so we are going :cheer2::cheer2: This is one of my favorite shows.

Sloppy Joe's (which J used to call "Sloppy Ho's" :lmao: before he grew up and knew better) are not one of my favorite things. But, as they say, it's food! And it nourishes us when we need it!

Tonight Fran took me out to dinner at our favorite dive. It was great, where else do you get a lobster tail dinner with soup, salad, potato, toast and drssrt with two glasses of wine for $25?!

Morning, everyone. A quick post before heading out to the store, and then to register Jacob for middle school! Can't believe he's heading into 7th grade!!!

Anyway, just wanted to thank you all for the good wishes. I haven't heard any news about Adam lately, but I'm hoping to talk to his mother today. I'll let you know.

Dinner tonight will be a pasta dish I pinned several weeks ago. It's meant to be a side dish, but I'm adding some Italian sausage to make it a main dish. We'll have garlic bread, and a large green salad to go with it. I've got tons of tomatoes and cucumbers from our basket that need to be used up!

For those of you that like Les Miz (and who doesn't), may I suggest a trip to my father's theater in Cedar City, Utah this summer??? They secured the rights to it, and will be performing it from the end of June through October. Should be pretty darn incredible! He's awake, and out of ICU. However, he will spend quite a while in the psych ward of the hospital, as he's still talking about killing himself. After some intense therapy, it was decided that he can't come home while his father is living in the same house. John, the father, has been severely depressed since the first two deaths in the family, and he refuses to get any help for the depression. Adam's therapist believes that John's condition is a hindrance to Adam getting better. He still has residual guilt for being the one to find his brother after his brother shot himself, then with the whole girlfriend thing, he's really a mess.

So, Connie had to tell John to leave. I honestly don't know how much more she can take. She's lost 2 sons, 1 tried to kill himself, and now she's had to kick her husband out of the house. Hopefully, this will be the thing that will get John to realize he needs some help.

On the positive side, it doesn't look like Adam will have any major lasting effects from the drugs in his system. No brain damage.

I'm thinking something with chicken. I'm torn between chicken marsala or chicken picatta. Yummy with a fresh ceasar salad and some garlic bread.
 
It's been a while since I've posted here and I've just given up on trying to catch up. There's so much going on in everyone's lives and it moves so quickly that I'm sure that anything I post will be waaaay behind the times.

To those that have lost dear ones or have not so well people around, I will be praying and thinking of you all.

To those with food porn....:thumbsup2. Although....all it makes me want to do is eat.

I've been really busy at work and most days I come home pretty exhausted and don't feel like cooking much. Simple and scratchy meals is probably the sum of my cooking lately.

I don't see a let-up in the schedule this side of Easter...heck...I don't see a let-up in the schedule this financial year!

The weather is getting cooler here but it is March, autumn, my favourite time of year. March in particular is jammed-packed with festivals in Melbourne. It's Moomba time again this weekend and I'll be out and about to enjoy some of the carnival rides, free entertainment and ambience that this entails.
Next weekend is the F1 grandprix which brings a different carnival of sorts to Melbourne.

We're also having 20 days of Food and Wine festival in town. I'm ignoring this year's....not by choice but out of necessity (and the fact that I want to lose weight). It's hard...there are lots of masterclasses going on, lots of foodie events and dinners...and some of the best chefs in the world (e.g., the chef from Noma restaurant) are in town.

It's also Fringe Jazz Festival time and the latter half of the month brings in the Comedy Festival. :faint:

If nothing else, the city is buzzing with people and it makes for a great time to be out and about; even if I'm not attending or participating in some of the festivals.

She is one strong woman, it is amazing what we CAN and DO in our lives. Hugs and prayers for her and her family!

I am glad to hear that Adam will survive without any lasting effects.
