Did not much of anything today. Friday DM and I went out to dinner w/ sis and the girls. Yesterday I went to my DN's swim meet and was gone most of the day.

This week I am determimed to get all my sewing done and get my cards out tomorrow and Tuesday. I have a dinner meeting Thursday that I have to shop for as well.

Another reference to Creamed Canned Corn? Well.....that reminds me about something and is such a great segue for me and this next thing.
Scotlass wanted us to report in when we used the word bawbag into standard conversation. I said I would just slip it into the conversation on the Dis when I could.... remind you of anything??? :rotfl2:

So I made the Sour Cream Enchiladas tonight, they were really good, but I think a little too heavy for me. The Enchiladas Rancheras that I normally make are just about right with a dollop of sour cream on top.
 
So does anyone here follow the Next Iron Chef! OMG on the outcome tonight! I had wanted Robert Irvine, then Anne Burrell, tonight I wanted everyone to win! I don't know who to root for!
 

I like ann and robert irvin. I may have to learn to post recipes here, oh lord have mercy with the waist line.:eek:

After a bananas weekend, I am ordering pizza today and spending the day finishing up any online shopping, wrapping gifts, and picking up my house. It kind of went to pot over the weekend, lol.

That's the other thing. Things are not too spicy, and rarely are they too heavy. :lmao: Things CAN be too sweet though. :teeth:

It is the last Monday before Christmas break. :cool1: I'm doing a jig even though it's 5:30 in the morning. :lmao:

I have to shop today, so dinner will be easy. We're having tacos.

Marilyn- you are one busy woman!

The guy is coming this evening to fix the mantle so dinner needs to be easy. I am going to make a meat sauce and serve it with Spaghetti and Sausage and a salad.
 
Morning, everyone! I woke up when Alan left for work, and wasn't able to go back to sleep. Grrr! I'll pay for that later today!

I need some help with figuring out dinner. I got 4 avocados in my basket on Saturday, and need some help using them up. Tell me, aside from guacamole, what is your favorite dish that uses avocados?

Today will consist of grocery shopping, a little present wrapping, and a whole lot of laundry! Have a great day everyone!
 
Is anyone sick of me posting cookie recipes, yet? I've got a couple more, if you don't mind. One is a recipe I promised to post for Nancy, and I finally found it, in my mixed up files! The other one has become a family favorite at any time of the year.

Brown Sugar Snickerdoodles

1/2 C. butter, softened
1/2 C. shortening
1/4 C. granulated sugar
1 1/4 C. firmly packed brown sugar
2 large eggs
2 tsp. vanilla
3 1/2 C. flour
2 tsp. cream of tartar
1 tsp. baking soda
1/2 tsp. salt

Topping:

1/4 C. granulated sugar
4 tsp. cinnamon

Heat oven to 400 degrees. Lightly spray baking sheets with no stick cooking spray. Beat butter, shortening, 1/4 cup granulated sugar, brown sugar, eggs and vanilla in large bowl with electric mixer at medium speed, until well blended.
Combine flour, cream of tartar, soda and salt in a medium bowl. Beat flour mixture into shortening mixture at low speed until combined. Shape dough into 1-inch balls.
Mix topping ingredients in a small bowl. Roll balls in sugar cinnamon mixture. Place 2 inches apart on prepared baking sheets. Bake 6 to 7 minutes, or until cookies are puffed and crackled on top and the edges are set. The centers will be soft. Allow to cool 1 minute on baking sheet. Remove to cooling rack.


Root Beer Float Cookies

1 C. butter, at room temperature
1 C. granulated sugar
1 C. packed brown sugar
1 large egg
1/2 C. vegetable oil
2 Tbs. milk
1 tsp. vanilla
4 tsp. root beer extract or concentrate
3 1/2 C. flour
1 tsp. cream of tartar
1 tsp. baking soda
1/8 tsp. salt
1 1/2 C. white chocolate chips

Preheat oven to 350 degrees. Place butter and sugars in a large bowl. Using an electric mixer at medium speed, cream. Beat in egg. Continue to beat until mixture is fluffy. Beat in oil, milk, vanilla and root beer concentrate.

in a large bowl whisk together flour, cream of tartar, baking soda and salt. Add to butter mixture and mix until combined. Fold in white chocolate chips.

Drop about 2 tablespoonfuls of dough at a time onto ungreased cookie sheets. Bake 10 minutes. Let cool 5 minutes on the cookie sheet and then remove to a wire rack to cool completely.

Don't post any spoilers on Next Iron Chef!! I am watching it but am behind a week.

I need some help with figuring out dinner. I got 4 avocados in my basket on Saturday, and need some help using them up. Tell me, aside from guacamole, what is your favorite dish that uses avocados?!

I like them sliced and addded to salads. I have a recipe for creamy avocado soup which is really tasty if you'd like that. It is served cool though, not sure how appealing that would be given that it is cold outside!

Other ideas, halve and pit them, then fill the middle with chicken or tuna salad for a light lunch. Avocado smoothies are also tasty. Here is a quick recipe (this is two servings):

Avocado smoothie

1 ripe avocado, halved and pitted
1 cup milk
1/2 cup vanilla yogurt
3 tablespoons honey
8 ice cubes

Blend all together in a blender and pour into two glasses. That's it!

WFD: coconut shrimp curry and thai sticky rice
 
If we all pull together and cross fingers,toes ,arms, legs and eyes I might ,just might, have something " cookery* " to report !!


* Probly more bakery but I get confused.
 
Nancy & Becky - I hope I didn't post any spoilers on NIC, but I am so far happy! The problem is that I liked all the chefs on there so seeing almost any of gem go was hard!

Glynis - The cookie recipes sound good, I would like to try the snickerdoodles, but it's been so long since I baked anything. Shortening, is that the stuff we used to use to grease pans before the spray stuff? :confused3 No clue on the avocados, I'll eat guacamole, but I even pull them out of my sushi.

It's raining, how did Lindsay put it? Canines and felines? :lmao: For those of you who live in places with weather you don't realize the havoc it creates in So Cal. Our sewer systems can't handle it nor can the drivers. It's sheer pandemonium;

I think that lasagna soup will be perfect tonight;

So help me out... What to do with the rest of the ricotta?

Good Sunday, all! I'm home from Church with Timmy today. He had a hard night last night with a bit of throwing up. No fever, but it made for a long night. I just felt so badly for him. He'd snuggle up to me, telling me his tummy hurt, and to make it go away. I felt so helpless! Needless to say it was a sleepless night for the both of us. He's fine this morning, but I kept him home from church, just in case. I'm hoping we can both take a nap!

No idea what's for dinner today. I'm leaving it all up to Alan. We are having some neighbors over after dinner for a pie night. Yes, another one. This is actually one we were going to have before Thanksgiving, but our neighbors couldn't make it. So, we rescheduled for tonight. So, I've got a peppermint pie in the fridge, and I just finished making a Banoffee pie. Next up is a Derby pie, then pecan. Can't wait!!!

Nancy - I'm so sorry that your IL's are still being pains! I'm glad you feel like you can vent to us! We are here for you!!!

I am in the midst of baking Glynis' cranberry chip cookies. First, my house smells wonderful. Second, oh. my. word. they are good! I'm sure Glynis posted the recipe here somewhere. ::yes:: If not, let me know and I'll post it.

Wow, those sound lovely... I heart anything with Cranberry in it...

I'm a big supporter of local animal rescues, but some have gone completely overboard which drives (some) people back to irresponsible breeders. I understand some questioning, as these are often animals who have been through the ringer already, but some of it is ridiculous.



My last surgery was really long and unexpectedly, a friend came to sit with my ILs, dad, and DH. She was a total lifesaver! They were, evidently, all sorta on edge about it and she entertained them the entire time. She's my friend that often teeters on annoying but it was perfect for that situation. They were so busy listening to her that no one had a chance to get too worked up :laughing: Anyway you have a friend that would be willing to come entertain him?

Most surgery centers have wifi; you might want to check and see if yours does - that would help keep him entertained if you have a laptop or tablet.

Poor guy. :hug:

I have an event tonight so dinner is there... though I'll probably just stick with mac and cheese at home. Still trying to eat mushier foods just in case.

Thank you for listening to my complain about the surgery.... I can't vent at the house, because David would be wound up even tighter, so you guys are my Happy Place.... I hope you don't mind...

David has a smart phone that he plays with so, that should work, but I really don't think I have anyone that might drop by... All our friends will be working and I hate to ask them :confused3

I am sure he will be fine... after they let him know I am in the recovery room.
