The What's For Dinner Thread - November '09(recipe index in OP)

Michelle, I have been to the Bahamas twice but just for cruise stops. I have to admit I wasn't impressed by Freeport or Nassau... now, there is some good food to be found (authentic) but the stores were either chain stores found here OR junk made in China sold in the straw market and various giftshops. The locals can be a little pushy when selling goods but tourism is their industry so it makes sense that they are aggressive in making a buck. I've wandered quite a bit around and always felt safe just wasn't much to look at. However, the water is gorgeous so it's a great place if you want a beautiful beach to lay/play on. We didn't pay to venture to Atlantis but of course saw it from afar from the port. Gorgeous!

Tonight is a production at church that we are attending with another couple. We are having dinner with them prior. Could y'all keep one of my employees in your prayers? She coordinates our child care and has been in her position for almost 30 years. Her mom has had numerous health issues and last night went into renal failure after surgery. She is expected to pass anytime. This also threw a kink into my plans since we are doing child care tonight and I need to figure out what she has planned as far as workers without interferring with her time at the hospital so I can get it covered. I hope to still see the production so I can cheer on the other kids I have involved but may need to be both places. Been there, done that before!
 
Could I ask for some prayers and good thoughts please? I'm going to my doctor this afternoon, Johnny finally talked me into it. Some of you may remember I felt faint on Monday at the dentist's office and since then my heart has been "fluttering". My Dad had congestive heart failure so I'm kinda scared.:sad1:
 
It depends on how many projects his "class from hell" instructor gives him.

Well I hope he gets to have some fun. Teachers like that make me so dern mad. :mad: Life is to short!!

Marilyn ~ I am worried about you, they say another possible 3' of snow. Oh my sweetie you have really been dumped on. Please stay safe!!

We're okay Ellen, the heavy snow is missing us. We are just having some flurries and really high winds. They keep predicting several inches of snow for us but the wind is blowing too hard for it to be able to stick anywhere.

School is off again today and its still snowing.

After a week of vacation, a snow day would not have made me happy. I hope you get shoveled out soon.

With all the weight you lost & have kept off, working out, etc. As I said on the Nola thread, it's sounds a lot like my Mom & Bob's mitral valve prolapse, which is not serious. I am really happy that Johnny convinced to go to the dr!

I'm trying to get Bob in to the dr. He came home early yesterday & figured out ths morning he has a uti. For some reason we have 7 days of a 10 day prescription for it. He wants to just take that & hope for the best. :mad:


Becky, Can I have the recipe for the eggs in purgatory? I've never had anything like that!

Sheryl, we are having shrimp too! I am making a Mario Batali recipe for rosemary grilled shrimp with white beans, arugula, and mint oil.

Sheryl, here is the egg recipe.

Eggs in Purgatory

For each serving you need:

1 cup tomato sauce of your choice (I used some homemade sauce that I doctored up with lots of extra cracked black pepper)
2 eggs, seperated
2 tbsp. parmesean cheese
2 tbsp slivered basil

Bring tomato sauce to simmer in a small skillet. Make two wells in the sauce on opposite side of the skillet. Pour one egg white into each well. Cover and simmer until whites are almost cooked through, four minutes.

Uncover skillet and top each egg white with an egg yolk. Sprinkle with parmesean cheese and salt, cover, and cook until yolks are warmed through but still runny, two-three minutes. Uncover skillet, sprinkle with basil, and serve with toast.

As always, you can skip the seperating eggs step, but I find I get the most tender white and perfect textured yolk by doing it that way.

And now, for Ellen:

Chicken Stock

4 tbsp. olive oil
3 lbs chicken wings
4 carrots, roughly chopped
1 large onion roughly chopped
4 stalks celery, roughly chopped
stems from one bunch of parsely
2 tbsp. tomato paste
20 whole peppercorns
4 quarts cold water

Heat 2 tbsp. oil in large dutch oven or stockpot until almost smoking. Add chicken wings and cook until well browned, about 10-15 minutes. Remove from pan (don't rinse the pan).

Add remaining two tbsp. olive oil and heat until shimmering. Add carrots, onions, and celery, and cook, stirring, until tender, about 10 minutes.

Add the chicken back to the pot along with the peppercorns, tomato paste, parsely stems, and water. Bring to a boil.

Immediately reduce the heat and cook the stock at a low simmer for two hours. You want it to bubble every once in a while, not boil.

Skim the scum from the surface of the stock and discard. Strain the stock through a colander into a large clean bowl (don't be dumb like me and set the colander in the sink without a bowl under it therefore pouring your lovely homemade stock down the drain! Yes, I have done this.) Discard solids. Cool stock overnight if possible, and then remove any fat that rises to the surface. Your stock is now ready to use. If it's cold it should be nice and thick--gelatinous.

Soup coming up soon, but I have to go back to work now!
 
We're having Thai Turkey Burgers and sweet potato "fries"! I'm hoping my dh and ds will TRY the fries... they're so tasty and so much better for you than regular fries!

I am wondering if it is that as well. My DM has that. Back when she worked as a Resperatory Therapist she was running to a Code Blue, had an episode and passed out in the hallway. She was fine, just a little embarrased to wake up surrounded by her co-workers.

SHeryl- Men! Buddy would do something like that too. Only he "saved" antibiotics so that he would have some in case he needed them in the future. My BIL is a PA and could give him a script if he needed one so this was just plain silly but MEN!

Dinner is :confused3 I really want a fish sandwich. WE thought we were going to meet up with the guy we rent land from but he has not called us back so my plan of giving in to that Micky D's fish sandwich are up in smoke.
