The What's For Dinner Thread - November '09(recipe index in OP)

Last year the kids went right up until the last day allowed so this year provisions were made to take days from Spring Break after the built in snow days were used. We have been spared the big storms so I think that the kids are safe. If you all get another doozey is that a solution or is it too late?

I really don't know. There was that option on the table but people had a fit about it. Now, there is one day that is not being made up but we do not have to make up days where there is a state of emergency and there was technically only one day during the week that was considered that.

Marilyn -- I'm glad to hear you are starting to get out from under all the snow. I hope you aren't scheduled to get anything from the storms this week..

We have a chance of flurries several times this week. The next big thing on our weather is possible for next week.

Dinner tonight is salmon with some sort of pasta and creamed spinach.
 
Yep - no pain! I haven't eaten a meal without a pain pill 30 minutes prior in months (Septemberish) so this is nice. I have even had a salad, snacked on a few peanuts, etc. No issues! :goodvibes

This news just makes my day. I am so darn happy for you. Make having the surgery worth it!!

We got home around 10:30 last night. Yesterday was the first warm day, so we had to let A try out the pool slide. So we checked out the room & let her swim. Then had lunch out by the pool. WLV & BLT was great! We had an MK view at BLT!!! That was so cool.

I'm sorry my brain is still on vacation. I'll have to come back later & catch up with y'all.

It was a DIS crockpot recipe.

Crockpot Shredded Italian Beef

3 lb chuck roast
1 jar pepperoncini (I used 16 oz jar)
1 packet Good Seasons Italian dressing mix
1/2 cup water (I used au jus instead of H2O)

Mix pepper juice, water and salad dressing packet together. Place chuck roast in crockpot and pour liquids over roast. Placed pepperoncini peppers on top. (I also added a half of an onion) Cook on low 7 hours. Pull beef apart with a fork. Added some of the liquid to the finished meat.

I am going to serve it on a baguette with melt swiss.


****update after eating, I liked it. DH on the otherhand said it was ok. If I do it again I wont put the peppers in it was a bit to spicy.****
Freezer space needed for one fussy hard to feed DH.

Gretchen- I hope that poor Jessica does not remember this part of her recovery. I cannot imagine how hard it is for all of you to see her like this, :hug:

Timmy's GF is from Albania and works three jobs and goes to college. She waits tables where we went but is also tending bar. She gives her money to her Mother to help support their family. We really were swept away by her. She tried to buy our dinner! Then she refused to take the tip. I needed to explain to her that Gail and I waited tables and would have kept the tip.

Aimee- how nice that you are able to eat without pain. I have worried so much about youl. Now about ace......................:confused3

Dinner was leftovers for me and chicken soup for Buddy................with tuna sandwiches. He is fighting a cold and did not want anything else. I watched Nola so that Welby could go to a recipe swap thing with the girls while the guys were out on the lake for a Snowdeo. She made shrimp scampi and brought some for Buddy but he wanted to save it for tomorrow, he really needed soup.

So dinner tomorrow is scampi for hima dn something else for me.

YES I am very sick of it!! I hope Buddy feels better. I hate the Man cold. And yes, I do agree I also have a hard time letting someone else cook for me.

Kat I loved the picture from the Blue Zoo My daughter and I split that appetizer .We loved the Blue Zoo. My brother in law who is in the food business said it was one of his best meals and he's had some good ones. I told him I was going to duplicate it and use mashed potatoes instead of cauliflower and he said "you Irish people , you got to stick a potato into everything" well...yeah...

Busy weekend over here. We spent Saturday morning at a swingset store picking one out for Zachy. He had the time of his life on all of the models in there. We customized one we know he'll love. They told us to call once we can see the ground. Optimistically they put March 18th as the installation day but we still have lots of snow on the ground and our yard is surrounded by woods and very shady. Realistically it'll probably be well into April. Mike and I went out with some friends Saturday night. Dinner was at a western-themed BBQ place. I had the bison pot roast. Today we went to Disney on Ice. Zachy had such a good time that I was in tears most of the show. Dinner tonight was salad and a pizza with roasted garlic, tomatoes, chicken, broccoli, and olives on an asiago crust. It looked nothing like Becky's pizzas :lmao:

What a fun weekend you have had. I bet the swingset will be a blast. My kids always loved theirs.

Although there are a lot of people, myself included, who think we are probably going to get another storm or two before Winter is done, just hope they come on the weekends and don't cancel school again. We have no days off until Spring Break the first week of April and have no other days to make them up with. School will end June 23rd and they used two teacher inservice days as make ups.

I know, you thin blooded Southerners! :sad2: ;) 40's for us means no gloves, hats, scarves and just a jacket. When I mean cold, I mean below 30. :thumbsup2

This is so true!! The first day it gets above freezing we take bets on who will have shorts on first. Give us Northerners a 40 degree day and there will ALWAYS be someone with shorts on. :rotfl2:

Good morning everyone! I am home today....I have had a cold since last Wednesday and decided to see if taking a day off would help kick it out of my system. I always feel guilty taking sick days but I am also sure that my colleagues won't miss my hacking and sneezing.

I fell asleep at 11pm, woke at 130am, asleep at 7am, up at 10am, asleep at 11am, up at noon. AUGH! My sleep is so screwed up since the surgery. I have an appt in the morning for a neck/back massage to help with some of this pain I'm having. I think that will help a lot.

We have food here but DH really wants to use our coupon for mexican food tonight. I think he's tired of all the homecooking we've been eating :laughing: I need to start labeling and freezing some of this stuff before any of it goes bad.

Two weeks? It's been two months since I've done any real cleaning. I noticed this weekend just how dusty everything is, not to mention the hairballs hiding under the furniture from the dogs :scared1: I definitely need to do spring cleaning.

I was trying to get whatever she picked up out but it was way too late for that! Thank goodness Welby has dogs because she just laughed when I told her. She told me Nola gets into everything at home so an old cookie or something else the kids dropped was not too bad.


Now I admit we were all a little :eek: when Nola wiped her little nose on a tissue and then climbed up to wipe Buddy's after that. He turned :sick: but all our laughing just made the little dickens want to do it again. I guess after that teh floor looked good to him too :lmao:

We're headed to St Louis for work.:guilty:

Rick and I are becoming real homebodies. From one extreme to another!:lmao:

Welby just left. She went to the Dr and was "spoken" to. She needs to slow down a lot or the Dr threatened to park her keister in a hospital. We have told her that even though she thinks she is not doing much she is doing more than she realizes, Nola alone is a handful. Brian does as much as he can but she is not used to turning over her "stuff" to anyone. Now you know she got some fussing when she came today....Yup...the Stern Nan Voice

How right you are!! We're in the 60's today and I'm SOOOOOO HAPPY!! Actually didn't wear a jacket today, just long sleeves!! Sheryl, this has me really looking forward to our trip in November. We have a MK view reserved. I saved those points and borrowed from next years so we could see the castle decked out for Christmas. I hope our view is as nice as yours.

Hi friends!

I missed all of y'all too!! Just was too pooped in the evenings to get on the computer & my phone was acting quirky the whole time we were there. (Kathy & I couldn't get a hold of each other & weren't able to meet up, which was sad.:sad1:)

We had a good trip, but the crowds were really bad. I wouldn't want to go back during Mardi Gras & President's Week again. It wouldn't have bothered us, if it had been warm enough to hang by the pool, but it was really chilly all week. Alexis had a good time & that's all that mattered to us. In fact she her new word for the week was "Grawesome!" She explained that means " It's really Great & Awesome!" :rotfl::laughing: Gosh I love that child! :lovestruc

I did really well with my neck & back, had some trouble with my feet but then Alexis did too, so we must have done a lot of walking. But y'all know me, I always have some kind of health problem. During the week I developed pain & a little swelling in my knee! Don't know why, but I think I'm going to have to schedule an appt with an orthopedic dr. :mad:

We only had one "fancy" meal @ Cali Grill. We ended up cancelling Tutto Italia & Le Cellier due to either me or Alexis just being to tired. Also watching Wishes from our room was so awesome, it was worth picking up food & eating in the room. Besides we kept trying to pass off flatbreads as pizza & Alexis asked " Can we get some real regular pepperoni or cheese pizza please?! " :laughing:

Gretchen, I didn't have any info in the room on the bedding. I asked for it downstairs when we were leaving & they didn't have it either. They said I could call & ask for the housekeeping dept to find out. I didn't want to ask our housekeeper because she was awful, but that's another story for another day. I will try to make the call for you & see what I can find out. (p.s. We didn't request a MK view! Just lucked out! )

I think they're just exhausted. Thankful, but exhausted. I spoke to her Mom at the hospital and Kenny saw her Dad last week. I think they're both still operating on adrenaline.

Ok Marilyn, I hate to tell you, but to us Southern girls, the mid 40's is still dang COLD!!!!! We're supposed to hit the mid 60's tomorrow and I'm thinking that's more like it. Heck, it's only 49 right now.

Oh, and Liam went to a weeklong ski camp, so he had 25 hours of instruction. I am SO happy that he liked it. Ever since he quit gymnastics, I have been wanting to find another activity for him. Skiing will be great, especially next year, because the middle school offers a lot of ski trips.

I am glad he found something he likes better! I'm impressed you have your kids in so many activities! And congratulations to Caili!

I'm not sure if we get amnesty for state of emergency days. :confused3 They do allow us to make up days by adding minutes to existing days. We have to have the equivalent of (I believe) 177 days of school (360 minute days). Since my school has 450 minute days, we don't have to have 177 of them!

Last year, my friend's school had to add 30(?) minutes to their day for a month or so to make up for the days they missed for Gustav.

You're recovery from a big surgery! Don't worry about your sleep schedule! I do agree with whoever said you may be sore from lack of movement. I hope your massage helps.

My surgery was 3 hours & more complicated than expected. I am in some pain & have to return Monday for part 2.
I have to say I'm happy I didn't know ahead all this was going to entail.

Dinner was lentil soup for me & leftover turkey for Gregory.......
 
Quickly checking in to say hi. Dinner tonight was honey-dijon salmon with rice and roasted broccoli.

Aimee- I tend to be very "achy" most of the time and get lost of knots in my muscles. I get a massage every other month or so and find it works wonders. I hope you get some relief from yours.

Sheryl- we had a similar view on our last trip and also wound up spending every night on our balcony watching wishes. Sounds like an amazing trip!

Nancy- Nola sounds like such a spunky little girl! When Zachy was crawling I can remember thinking my floor was spotless and of course he would always find the one little speck or crumb left in the house and eat it.

Oh, that view is amazing!!! I'm glad y'all had a good trip though I know the crowds put a damper on things. That's one of the reasons why I did LOTS of recreational shopping offsite when we were there during Christmas. After going so many times, I have no patience for long lines or big crowds.

Well, we are getting snow again overnight and that may screw up my morning massage appt. I haven't driven since the surgery and don't think I'll be doing it on ice/snow for the first time :laughing: We'll see how much we get overnight.
 
Michele, Nancy I remember when Alex was little he got into the cat food and was eating that. He just kept saying something about kitty cookies. Of course this was not on my watch:rolleyes1. Needless to say he has survived as well as me.

I think I would like a less hectic life. Sometimes I have what seems like not much to do and lately I am lucky if I see the inside of my house more than 5 hours a week awake.

We have to have 180 days doesn't matter what the time is. If schools close early for any reason, scheduled, weather, emergency they are counted.

They don't build in any days that the kids don't have to make up. I went to High School here in this county and we always had two days but they did away with that. Of course we now have off one or more days per month for teacher inservice, holidays, etc. They also close schools on Election Day which they didn't do when I was in school.


Had the salmon and some PW's Crash Potatoes. I added a little roasted garlic to mine.
 
Sheryl loved the pictures what a view from BLT . We tried to go over to see it and the private lounge, but even flashing our DVC cards couldn't get in , only guests staying there were allowed
