The What's For Dinner Thread - November '09(recipe index in OP)

Ann - Kyle's doing good! He's got one of those "killer" classes this semester that is obviously testing to see who is serious and who is not. He spends 75% of his time in the design studio. The class started out with 22 students and is down to 6. He is determined to stick it out. He could use some prayers as he is very stressed.

Dinner tonight is roasted turkey breast with sauteed green beans & sweet potatoes.

Greg wants us to move our Disney long weekend to the following week. His Aunt is celebrating her 80th birthday & all her siblings including my MIL are traveling to Tampa to celebrate. They haven't all been together in 20 years so Greg & I are trying to go & surprise them. My MIL is the youngest at 76.

WFD - Roast turkey and gravy, cornbread stuffing, scallion sweet potatoes and turnip greens.

We are having roast turkey and stuffing today too! Great minds think alike. ;) Our sides are green beans and eggplant sticks, and mashed potatoes.

I ended up making tons of pizzas for dinner last night. It was yummy. Here are some pictures.

Aimee ~ So glad you are on the mend and getting back to normal but please don't rush it. How are you really feeling once you eat? Are you seeing any difference?

Quiet day here. Up to early church and now am home for the day. It started snowing early last night and it is still snowing this morning. We have gotten about 6" so far. A real good day to snuggle in and stay put.

Tonight is my first night to be able to cook so with that in mind I'll put a ham in the oven, scalloped potatoes and cooked green bean with bacon and homemade rolls.

It is a beautiful day here.

The boy and I went out on the bikes earlier,it was so much fun.

He now has a 4 HOUR dance class !! :eek:

He will be shattered tonight but he really LOVES it.....he told me this morning that dancing was his passion,bless him.

Im going to have a long soak in the bath with my book,have a great day lassies.

Man, I wouldn't last through a 45 min dance class much less 4 HOURS! He's dedicated!

Aimee ~ So glad you are on the mend and getting back to normal but please don't rush it. How are you really feeling once you eat? Are you seeing any difference?

Yep - no pain! I haven't eaten a meal without a pain pill 30 minutes prior in months (Septemberish) so this is nice. I have even had a salad, snacked on a few peanuts, etc. No issues! :goodvibes


Not sure what we'll do for dinner tonight - we have leftovers but we also have a couple of B1G1 free coupons to use and I know we have someone bringing food tomorrow night. Whatever DH wants to do.
 
I hope everyone has a good day. It is just me and the baby this weekend so dinner will be quick. I picked up some of the low fat Hebrew National hot dogs so that is what I will have.

That's what we had last night. I really like hot dogs, but I eat them the southern way, with cole slaw instead of kraut. Yummm.


Gretchen--I wouldn't have been able to hold it together either. How are Jessica's spirits? What an awful thing for anyone never mind someone so young to go through!:hug:

It's hard to tell how her spirits are since she can't talk and her eyes had that glassy, medicated look. For which I am extremely thankful. I hope they keep her in as little pain as possible.

Gretchen ~ prayers to you and Jessica. It is so hard to see someone we love hurt so bad. I just PTL that you are able to go see her, the alternative would have been unthinkable. She will recover, bless her heart.

I agree completely. I think that was part of my emotional upheaval. Looking at her, it was impossible not to see just how close we came to losing her. She was very blessed to have survived.


He is the one who adopted Ace so Ace is here for the day with him. Such a cutie!

Were the other four legged children glad to see him? I know you and DH had to be. But I'm so glad he found a permanent home.


Ellen – I am so glad you are feeling better! The little Who Dat girl had a bigger crowd watching her than the drummers!!:lmao:

I'm sure she did. She was a real cutie pie!


Well, yard sales were a bust. We were looking for a couple of living room pieces to hold us over till we found something we liked....nothing. Not even one piece for me to decide I didn't like!:headache:

I got a WHO DAT at the football today,I has my Saints cap on and while I was taking my seat a lad about 20 rows away shouted.

It was too funny,I shouted back " We DAT,Won DAT " and we both gave a massive cheer and danced...cue weird looks and stares,weggie fitbaw fans just didnae get it !! :rotfl2:

We are supposed to get a lot of snow tonight. I hope we don't get much. I want spring to come. I am tired of seeing white.

That's true. But it also means she knows more than most what she's in for. And btw, I agree on the standard view points. I wish I could get DH to agree. I keep trying to sell the standard room at BLT, but I can't get him to budge.



Dinner last night was pretty good. The appetizers were awesome, very flavorful toasts with all kinds of toppings. WE also met Timmy's GF. Oh my she is sweet!

Glad you had a good time. What does Timmy's GF do in the restaurant? Just curious really. I waited tables through college and I keep joking that I may go back to it. I didn't appreciate what a good job it was while I had it. Now I know that 1) the harder you work the more you make, 2) if you don't like a customer, you only have to deal with them for an hour or so and then they are gone, and 3) when you leave at the end of the night, the job is done. You come in for your next shift with no work left over from the day before.


WFD- giving my crockpot another whirl...shredded Italian beef hoagies with chips.

We got home around 10:30 last night. Yesterday was the first warm day, so we had to let A try out the pool slide. So we checked out the room & let her swim. Then had lunch out by the pool. WLV & BLT was great! We had an MK view at BLT!!! That was so cool.

I'm sorry my brain is still on vacation. I'll have to come back later & catch up with y'all.

Eh, not really. Ace has little to no dog skills, which is why he needed a 1 dog home. He does really well with a cat though :confused3 My dogs don't appreciate his poor manners. He's also really whiny which drives DH crazy.

But what sent DH over the edge was when we went to dinner, we crated him in our room so he would be away from my dogs - and gave him a bully stick to chew on. Lucy has managed to let herself in and out of the crate so we have two latches attached to it to keep her contained. My brother latched both. Came home, Ace was still in my room because we shut the door but was NOT in the crate. But the crate was still latched! I swear he's houdini dog. But the worst part was in his attempt to get out of the bedroom, he clawed a huge hole in our berber carpet. DH was thrilled :rolleyes1 So, I'm calling a carpet repair company tomorrow since we have extra carpet and paying whatever it costs to get that patch repaired.

Gretchen, thanks for pulling for me. I just pulled the beef apart. It is so tender, looking forward to trying it on a sandwich later. It does have a kick just not sure if it is to much.

It was a DIS crockpot recipe.

Crockpot Shredded Italian Beef

3 lb chuck roast
1 jar pepperoncini (I used 16 oz jar)
1 packet Good Seasons Italian dressing mix
1/2 cup water (I used au jus instead of H2O)

Mix pepper juice, water and salad dressing packet together. Place chuck roast in crockpot and pour liquids over roast. Placed pepperoncini peppers on top. (I also added a half of an onion) Cook on low 7 hours. Pull beef apart with a fork. Added some of the liquid to the finished meat.

I am going to serve it on a baguette with melt swiss.


****update after eating, I liked it. DH on the otherhand said it was ok. If I do it again I wont put the peppers in it was a bit to spicy.****
Freezer space needed for one fussy hard to feed DH.

The Valentine Special - Mero Sea Bass, Sweet Potato cakes topped with baby root vegetables and arugula and a fennel, orange, olive oil vinaigrette and Wagyu NY strip with bernaise sauce. This was one of the best meals we had:

Hi Everyone! It has been a busy and tiring weekend for us. Liam finished up ski camp yesterday. He loved it, and he learned so much. He went from non-skier to skiing down the biggest trail and doing jumps! :eek: I was kind of glad I wasn't there to see that. I wasn't there because I spent the day in an ice rink with Caili for a skating competition. She skated really well and placed second. She was happy with that. We had lunch at a Japanese/Thai/Malaysian restaurant, which was very good. Caili had a teriyaki beef dish and I had cashew chicken. I don't know where Caili puts all the food. Hers was an adult portion, and she ate almost all of it, and she still had room for fried ice cream topped with whipped cream, hot fudge sauce and a cherry. (Pics will be on FB) Later in the day, her team won, so it was a good way to end the day.

Gretchen -- More prayers on the way for Jessica.

Wendie -- I hope you had a good Date Night. Wow, July? We get pretty big mountains of snow/sand in parking lots near the beach here, but it never lasts until July. The snow melts and they truck the dirt and sand away long before then.

Lauri -- I hope you got the return you were expecting. We generally get a pretty good return. Unfortunately, we know that, so it is usually spent before we get it!

Ellen -- I'm glad you have your laptop and your husband back. Count me among those ready for spring!

Vickie -- Your Who Dat story made me laugh. Your son is really dedicated to dance for four hours! I barely make it through my hour of zumba. :laughing:

I know I am missing people and I apologize. I did read back, but of course, I have been interrupted a couple times, so my retention is not what it could be. I hope you all had a good weekend, and I will be back on regular routine tomorrow.

The snow isn't too bad, it's when it gets really cold outside that I don't like. :cold:

There's no way I could do the cold and snow. I used to love cold weather but realized on this last trip that I can't handle it as well as I used to. Hoping it warms up a bit for you.:hug:

It was actually warm today and is supposed to be in the mid 40's this week. We're starting to see grass although there are still huge piles of snow everywhere.

Gretchen- I hope that poor Jessica does not remember this part of her recovery. I cannot imagine how hard it is for all of you to see her like this, :hug:

Timmy's GF is from Albania and works three jobs and goes to college. She waits tables where we went but is also tending bar. She gives her money to her Mother to help support their family. We really were swept away by her. She tried to buy our dinner! Then she refused to take the tip. I needed to explain to her that Gail and I waited tables and would have kept the tip.

Aimee- how nice that you are able to eat without pain. I have worried so much about youl. Now about ace......................:confused3

Dinner was leftovers for me and chicken soup for Buddy................with tuna sandwiches. He is fighting a cold and did not want anything else. I watched Nola so that Welby could go to a recipe swap thing with the girls while the guys were out on the lake for a Snowdeo. She made shrimp scampi and brought some for Buddy but he wanted to save it for tomorrow, he really needed soup.

So dinner tomorrow is scampi for hima dn something else for me.
 
Kat I loved the picture from the Blue Zoo My daughter and I split that appetizer .We loved the Blue Zoo. My brother in law who is in the food business said it was one of his best meals and he's had some good ones. I told him I was going to duplicate it and use mashed potatoes instead of cauliflower and he said "you Irish people , you got to stick a potato into everything" well...yeah...
