The What's For Dinner Thread - March '11 (recipe index in OP)

Last night I did make General Tso's Chicken, but no recipe since I used a jarred sauce. But what made it really good was the way I make my rice.

1. I used minute rice and I use chicken stock, not water.

2. I quarter and onion and throw it in the pot, and simmer it for 10 minutes before adding the rice... makes it soft and I eat the onion. :thumbsup2

3. 2 tsp of tumeric in the stock to color the rice a cool yellow.

4. 1 TBS granulated garlic in the stock.

5. 1 TBS cayenne pepper in the stock.
 
Kyle's summer break ends today. He is taking two summer classes, which are followed by baseball training and he landed a full time job with the Gulf Restoration Network which begins today!

How was Kyles first day at new job and classes?

It really is amazing the difference between yesterday and today. I even feel like I could jog, if I actually jogged. :rotfl: Yesterday the pain was a 9 out of 10.... today it is zero most of the time, and 3 out of 10 when I make certain movements.

I may even make dinner tonight. :)

Not sure on dinner... we ended up with ChickFilA last night. Neither one of us felt real great but around 9pm, that sounded appetizing.

New classes - great! Job - disaster, not what he thought it would be so he's still looking for something.

I am staying on track....I went to an Alternative Health store yesterday and the guy gave me a full body report:faint::blush::scared: He said he could fix me for $1200. :rolleyes: Lets just say my dinner was a soup and salad.

I think I get to stay home tonight but whenever I have plans to stay home something comes up.:rolleyes1

I did not buy a thing from him and will not step foot in there again. He was a hard see and refused to even talk about basic detox, which is what I wanted. He thought he had me hooked, although in fairness, I was almost mesmerized for a while....picture Jim Jones dangling a glass of Kool Aid :dance3:....all the while I was leaning over to grab it! What killed it was that he said that Buddy needed to come in and follow his plan as well in order for this to be 100% successful. Are you kidding me??????????????? Just as much chance of that as me breathing under water :lmao:

I liked the CS from Keurig as well. Helpful and friendly. I did not get a new one but I guess I did not need one.

I don't know what we are doing for dinner. I have chicken thighs thawed so I know I am cooking them. We need to meet up with a friend to go over our farm expenses, we are sharing the agency and lodging expenses of Joe and Den and need to keep the labor straight so this is tonight or tomorrow. Also, Dan and Erica are trying a restaurant for a guys dinner night honoring Donny but if they go this week we probably will not join them. We committed to dinner out with friends on Friday and two night out will throw me under the bus. I have the will power of a slug. :guilty:

Janice, Yes it's a good thing he can cook! It was Zatarain's jambalaya in a box, so I probably COULD have made it if forced, but I'm glad I didn't have to! :laughing: I CAN make cornbread.

WFD- My friend is coming today, so we'll likely get something out and about.

We might have leftover jambalaya for lunch though. It just screams "Welcome to New Orleans! Have some leftovers!" Gotta love some Southern Hospitality! :rotfl:

Actually, the original plan was to have fast food. We are trying to do a quick turnaround between the airport, my house, and an activity. So leftovers may actually be preferable! I'll let her pick. :upsidedow She'll be here 6 days, so have no fear, she'll get plenty of food!

I'm just about to start one with .... wait for it ..... my husband ....(for us to have a chance of it being "100% successful") :lmao: .... believe it or not...it's true! We're using this brand of products.

I think we paid Aus$250 for 2...it's Aussie pricing, which means that it probably is about 40% more expensive than anything you can get in the US.

DH has used this before and quite likes it to the other product we used to use. This will be my first time...
 
Nancy, $1200 is crazy! I am glad you resisted.

Here is a picture of last night's pasta. It had roasted peppers, tomatoes, spinach, basil, sping onions, and chicken sausage. Cleaning out the fridge before tomorrow's CSA delivery. The whole wheat pasta was actually nice, I think we might switch over to it:

Not that it matters, but I wanted to follow up.

After being in pain for 4 months, and forgetting that I fell on Sunday, I feel almost 100% today.... and now I think I know why. After over a year of debating on whether to buy a new mattress, we finally bought one and it came yesterday. I always sleep on my right side, and my right hip / thigh is what was hurting. The old mattress was horrible. :sad2:

Well, with the new mattress, my leg is SO MUCH BETTER. By tomorrow I might be at 100% for the first time in many months.

I dropped my car off this morning to get the hail damage repaired. I truly have an unhealthy love for that car... thankfully, they upgraded me to a full size so I have a brand new Impala to drive around. My last rental, per ins coverage, was a tiny clown car that I swear had a gerbil in the engine.

Tonight when I get in from work I'm going to make Giada's chicken tetrezzini. I'm not usually a big fan of tetrezzini, bc it often has cream soup in it, but hers doesn't and is highly rated. So, we'll see how it is!
 
If any of you guys have a kindle, I follow a kindle blog- books on the knob, where free books are posted. Anyway, today there are a few cookbooks posted. They are for hungarian, romanian, and mexican food. Not sure if they are any good but figured for free I'd try them out. Just wanted to let you know.

School is out next week and I can't wait. They have crammed more stuff in the last couple of weeks then they have done the whole school year!

Aimee- Glad your car is getting fixed. We've had some hail in the forcasts but hasn't happened, I'm very thankful after you described the damage to your car.

BCB- I can't believe what a difference our new mattress made. The only problem is this one is a cal king and I can't flip it by myself.

Becky- I don't mind whole wheat pasta, it has it's place. I wouldn't use it in mac and cheese (with that many calories, what's the point!), but we use it a lot. I prefer Barilla plus though.

Bethany- Have fun with your friend!

Nancy- That must have been an interesting experience! Are you sure Buddy wouldn't have gone for it ?!?

Janice- I hope you have a spare coffee maker until your new one gets here. I've only heard good things about their customer service.

Kathy- Glad Kyle's class is going well but sorry the job isn't what he's looking for. Are summer jobs easy to find?

We are having spicy honey glazed something or other chicken for dinner. We've had it a few times and it's tasty, but I forget what month cooking light the recipe is in. Not sure on the sides.

BCB- I believe you about the mattress! WE have had mattress issues they are no fun! The last one I was supposed to try it for a month before giving it back, I lasted 3 weeks before I had a dream that I was hitting the button to let the air out of the lumbar pillow in my old bronco! Called the next day.

Becky- I use WW pasta most of the time. I cook it a little longer than is suggested.

Robin- If I told Buddy I needed 1200 because I was sick he would have said Okey Doke Spank! 1200 for him? Not a chance!
 
Becky – We switched over to ww pasta about a year ago and we all love it. I agree with Robin on the mac & cheese though.
