The What's For Dinner Thread - March '11 (recipe index in OP)

BCB - That looks so good!!! Hope you have fun with your pool!

Aimee - Sorry you are feeling sick. Please take care!

Vickie - I'm sorry that you are dealing with family crap. Please know that our little family will always be there for you (even if we are separated by a big "pond".

Princess - Have fun tonight!

Kathy -- Have fun!

But a chipotle is nothing but a dried, smoked jalapeno, that usually just gets put in adobo sauce, which isn't hot by itself

I didn't know that. I still think chipotles are hotter than jalapenos, though.

Janice -- I think you are better sticking with the arborio rice for risotto. I haven't tried using other rice, but I think you want the thick short grains, so it absorbs lots of liquid and turns creamy.

Nancy -- Congratulations to Debbie!

Maybe we'll go to our favourite Middle Eastern shop down the road and get falafels and shwarmas for dinner.

Yum...sounds great.

This week is killing me - I've been running all over creation and clocking very few hours actually at my desk at work.

I hope things slow down!

Vickie -- I am sorry for your loss and all the difficulties you are dealing with right now.

Liam's game got rained out tonight. Unlike BCB, we are not expecting pool weather anytime soon. I would settle for seeing the sun! Dinner tonight was completely unhealthy...fish and chips and onion rings. It was good though.

Kat -- Have a fabulous time!!!!

Vickie -- Hang in there. Families certainly can be the biggest mixed bag... My grandmother's siblings don't talk any more. It is really a bad deal. I remember when I was little how close we all once were. Now, in the twilight of their years it is all gone... Be strong, do whatever is best for you. We are thinking about you.

BCB - your dinner looked great!

WFD -- We had the chicken stroganoff -- mmmm Good!!!! Thanks for that, Glynis!!!!!!

I hope everyone has a rain-free weekend!!! Not sure it will happen here, but I'll take as much dry as I can.

We are off to the midnight opening of Pirates of the Caribbean Stranger Tides! I won tickets this morning from the radio station!!! :cool1: :cheer2:
I napped tonight, so hopefully I'll stay awake.

Julie

I actually think I may be getting sick... I'm unusually tired, achy, and fevery. This morning, I missed an important meeting out of town in favor of sleep and rest so maybe that'll help.

Aimee- give in to it and just rest. I have found that fighting it off too ling just prolongs the agaony. I hope yo ufeel better!

I came home early today I had a rotten sinus headache My sinus' are not happy this year.

Oh no! Feel better today! This weather seems to bring them on. Buddy told me to go outside and that woul dcure mine. Umm.............it is the weather outside that is the culprit
We had the WETTEST summer in a long time in Australia. Heaps of rain and lots of ark building everywhere. At one stage, we had two states flooded out. Queensland was 80% underwater and Victoria (where I live) was 60% underwater.
We're now over the WET Summer and into the makings of a COLD Winter.
This too shall pass.

WFTD - Tonight I'm heading out to see an accapella group sing. DH, DS, a friend and her 15 year old daughter will be going with me. Can't wait! Dinner will probably be in a cafe somewhere.
But I have to get through work today first. :sad2:
What is with the weather this year??????????????

Have a great time tonight!

OK, my version of Crash Hot Potatoes before cooking:

Next we have my Chuck Roast ( marinated ) and just hitting the pan:

And finally, after a quick sear, before heading into the oven to finish cooking:

You have got me licking the screen this morning! My pot roast is good but it does not look like that! Do you know if I could use a grill pan like that on my ceramic cooktop? If not, how about the burner on my gas grill? I never use it so I have no idea how hot it cooks.

The pressure I am under just now to " forgive and forget " is a joke.
It will not happen, its going to end in more arguments and I will be the bad one.

.

Vickie- I think you do what is comfortable for you. I don't understand forgive and forget, there are times when letting someone go is the best thing. Somehow it seems that the people who have been wronged are the same people who are villainized if they refuse to let it happen again while the person who behaved badly in the first place is sympathized with. I have an older sister who I love but I don't like her at all and avoid her and her husband whenever possible. I refused to even breathe the same air they did for years and only relaxed that when the strain was too much for my Mom. I used to get so angry when I got grief when she and her husband had been so bad.and I mean really bad. God forbid that they were uncomfortable around me.:sad2: . Anyway, I think if if feels wrong to openthat door with your family then keep it closed, you know how you feel and what is right for you so you need to follow your gut. I am so sorry that you are going through this :grouphug:

I liked dinner last night but sadly, I was alone in that. I made morrocan chhicken, couscous and steamed yellow beans with a big garden salad and homemade Italian vinnagrette. Buddy hated every bite of the chicken, refused to touch the WW couscous and let me know in his own colorful way what should happen to whoever invented it :scared: He sure was regretting that i did not take him up on his offer to go out to have dinner ;)

We will see what this evening brings. I think Marisa wanted to run errands so if I got that right we will probably pick something up out. If not I think Bud and I will head out, he will not want to take a chance on my chicken again :lmao:

Nancy Now you have a new menu idea to pull out when Buddy gets out of line;) We like the Morroccan spice mix I think I got it in Target. I put chopped carrot in the broth when I am cooking couscous. It stays a little crunchy since it doesn't cook long.

I think pizza is on the menu for tonight. I have a Groupon to use up. I know darn no cooking.

Thanks for the advise on the rice. I didn't want to experiment.

Vickie I am sorry for this added stress. Hugs to you.

Janice, you asked earlier about using sushi rice for risotto. I think it might turn out too sticky.

Nancy, your menu sounded good to me! Tell Buddy I will eat his leftovers.

Dinner last night was really good. Here's a picture:

WFD: some kind of fish, whatever John picks up at the market this afternoon.

Nancy, I don't know about the grill pan, but I just saw something on TV that is cool... you can cook right on the cooktop without pans! Like you just cook right on the surface.... and it cleans right up with window cleaner and water. ( This is a special cooktop )

Kat -- Have a fabulous time!!!!

Julie

Glad you enjoyed it! Definitely a keeper! Enjoy Pirates! I'm really jealous! I don't think I'll get to see it until Alan and I are done with the documentary. Too much to do and too little time to do it in!

BCB - That dinner of yours looked YUM!

I sooooo need this week to be over.
My Auntie died this morning.
My family and hers have not spoken since my dad got ill and died....they gave us no support and quite frankly behaved disgustingly.

You lassies know me,I pride myself on my Mafioso style of love.
I will defend the people I care about to the ends but if you hurt me of mine...yer gone.

The pressure I am under just now to " forgive and forget " is a joke.
It will not happen, its going to end in more arguments and I will be the bad one.

With the other stuff going on I could do without this.

I'm sorry for you loss and wish you long life and peace.

You're not the "bad one".....your feelings matter and you should stay true to them.
We're here if you need to vent.

I liked dinner last night but sadly, I was alone in that. I made morrocan chhicken, couscous and steamed yellow beans with a big garden salad and homemade Italian vinnagrette. Next time, I'll be happy to come over and have dinner with you. :goodvibes

Dinner last night was really good. Here's a picture:

Looks good too.

It's nearly midnight and Saturday the 21 May will be upon us. In the event that the doomsayers are correct and the end of the world is nigh, it's been really nice knowing you all...albeit shortly.

In the event that the doomsayers are not correct and the end of the world is NOT nigh, I'm heading to the market tomorrow and we'll see what produce looks good for dinner.

Princess- It was nice meeting you too! If it wasn't for the dis I never would have known the world was going to end so soon, I thought we had until next year. We had to have someone arrested at my work last year, let's just say they were going a little overboard with preparing for 2012.

Nancy- Sorry you were the only one that liked dinner, it sounds good to me.

Julie- Hope you were able to stay awake for the movie, that is so cool you won he tickets! I'd love to hear how you liked the movie, so far it looks like we can wait until it comes out on dvd.

Laura- It always amazes me how close we are and how different our weather is. Yesterday it was in the mid 60's and sunny, we were supposed to get rain. We have sun now too, hope your getting a turn with it.

Vickie- I'm sorry you have more stuff to deal with. We are having trouble with my inlaws and I don't get the forgive part either. I'm sorry if it makes me a bad person, but I am unable to forgive the things they have done and said.

Dinner tonight is roast chicken from the store, a big salad, and beans and greens. I'm off to work for 2 hours, right smack in the middle of the day. Have a great day all.

Truer words have never been spoken.

Speaking up and making our feelings known give people the excuse to run to others like the house is on fire. There are always three sides to every story and when people become so wrapped up in the in the rumors and drama it makes you look back and realize all the times you were there for others and supporting them when they fell or needed support.
Understand that people use words like love, care, friendship, family, concerned, "can you feel this hug", "prayers offered" very lightly.
I warn you to tread lightly and understand that you may be standing alone and treated like a contagious virus.

Learn from what has been experienced here and don't set yourself up for pain and rejection you deserve better than that.

Congrats on the win!! How did you like it?

You are far more patient than I am

 Vic. Your plate is overflowing right now.

I am off today and while I thought about calling some friends to do something, I decided to lay on the couch instead! DH is chaperoning a retreat tonight so I'm on my own. I'll just pick up something.

AImee- I am not patient but I have to admit that Buddy make me laugh :rotfl2: I knew he was going to hate dinner when I made it but since I usually make things he likes ;) If you could have seen his face when he thought I needed the spice mix for my diet:lmao:

We are debating whether to go out to dinner or chance dinner at home.....I told Bud we can have chicken, which he loves, but he is a little gunshy today......

Quick fly by to tell everyone to have a great weekend! The sun is shining here and I think it is supposed to be sunny tomorrow as well.

We are starting our weekly neighbor happy hour this evening. I believe the host is making carnitas...is that the word? pork tacos. I am bringing white trash and spanish rice.

Andrew has a late game tonight so we are only staying for a bit. Games tomorrow and Sunday too.

I will catch up sometime this weekend. Just wanted to pop in a say hi.

Another long day and I have decided I am done, no more paper today for me! :yay:

Who am I kidding, I have several hundred confirmations I have to sign. :rotfl: But I will do that tonight will I sit on the couch in my jammies. :thumbsup2

I am going with my BFF and some of her church group girls to see Pirates next week.

Have a boring class to go to tomorrow, then will probably go shopping. I have decided I want to be a mini-couponer. Harris Teeter has triple off up to 99 cent coupns this week, going to see I can save $10. ;)

Oh and since the workd is going to end tomorrow, it was nice knowing you all! :flower3:
