The What's For Dinner Thread - March '11 (recipe index in OP)

Morning, all! I am doing a quick flyby because our alarm didn't go off this morning so we majorly overslept! I feel great, though. It's amazing what almost 2 hours of extra sleep will do for you, lol.

Kinky Spaghetti and Meatballs is a take on a 30 Minute Meals recipe. It's spaghetti and meatball stoup. I made a few changes and renamed it kinky spaghetti and meatballs. For you newcomers, you will learn really quick that my goofball husband and I give everything silly names ;)

Here is my version:

Kinky Spaghetti and Meatball Stoup


1 carrot, diced
1 medium yellow onion, chopped
3 garlic cloves, chopped
1 (14 oz.). and 1 (8 oz.) can of tomato sauce
3 cups chicken stock
1 package portobellini mushrooms
1 pound ground beef or turkey
½ cup Italian bread crumbs
½ cup grated cheese
1 large egg, beaten
2 T. chopped parsley leaves
½ lb. spaghetti, broken in half
1 cup basil, torn or shredded

1. Combine beef/turkey, cheese, bread crumbs, egg and parsley. Roll into 1½ inch balls. Set aside.

2. Heat a medium soup pot over medium heat. Add EVOO. Sauté carrots, onion, garlic, and mushrooms for 5 minutes. Add tomato sauce and stock and cover pot. Turn up heat and bring to a fast boil. Cook for about 5 minutes.

3. Remove lid and slide meatballs in soup. Bring back to a boil and add noodles. Reduce the heat and simmer soup for 10 minutes or until meatballs are done and spaghetti is tender. Stir in basil and remove from stove. Serve with bread and cheese.

dinner tonight will be Sausage, onion and peppers on a Hoagie....

Brandi - That looks really good!!! Looks like the hubby enjoyed it, as well.

Lindsay - I still make that soup, but I'm waiting for a really cold day to do it again. It's still too hot in the afternoon/evening for it. (Even though we did have soup last night. I don't count it because it came in a can!)

Busy day today! Bowling this morning, setting up for a birthday party this afternoon, and then the party tonight. It's Alan's step-dad's 80th birthday party. Siblings are coming in from all over, and it's going to be quite the shindig! My BIL is serving Texas-style barbecue (he dragged his smoker down here yesterday morning, and has been smoking brisket and ribs for the last 24 hours!). I'm excited about that, and about seeing relatives we haven't seen for years!!! I probably won't get back on until tomorrow, so I hope everyone has a great day!

We are heading to Vermont tonight to see Debbie. I am really excited, but not half as excited as Kady. She packed last week, was up at 6:30 to pack the car and was chatty all morning about going :cloud9: She loves Debbie more than anything :lovestruc

I am going to bring my camera because Debbie said it is in the middle of the most beautiful fall foliage right now. I will try to post pictures here and on facebook.

Aimee, I am sorry that you are continuing to struggle with the pneumonia. I hope it clears up soon. Good that your doctor is keeping such a close eye on it.

I did end up making broccoli cheddar soup last night. It was very good but still requires a little more tweaking, I think. It's missing an ingredient that I can't put my finger on.

WFD: not sure yet. I got some duck eggs at the farmer's market yesterday so maybe something with those.

Becky ~ I so thought about you and John yesterday when I heard what happened at the Red Sox game. I told Doug I had hoped you weren't at the game. That just sucks!!!
I love love love my crockpot. I have some wonderful recipes that I would love to share if you are intrested. But I agree with the others. I would use it on the weekend to get the feel for how it cooks before I left it alone for the day. I leave mine and have never had a problem but then Doug is home for lunch also.

Marisa ~ Thanks for your thoughts for Elizabeth. I will be so glad when this baby is born - she's already so done!! ;)
Like I told Becky I would love to share some crockpot recipes if you want.

Our BIG Church Auction is this Sunday. We always have so much fun but it is so much work to get ready for. Last year we made over $15,000, so it is a great money maker for us. But to tell you the truth I will be glad when it is over.

Doug & I are having Ethan for the weekend. Poor little scoot hasn't been out to the farm in over a month. We have missed him, so this is the weekend for some Nanny & Poppy time. We can't wait.

We play Wisconsin tomorrow - "GO BIG RED"!! :cheer2: We aren't predicted to win. This our first game against a Big 10 team...but you never know. We don't lose very often (in the Big 12) so this could be a real jolt for us. Wish us luck - Game day will be from Wisconsin tomorrow and I can guarantee Cruso will NOT be wearing the Husker head - he hates us!!

WFDT ~ Ethan's choice - Blue box Mac & Cheese and hot dogs and root beer floats. YUMMY!!! LOL

Becky - There are lots of great crock pot recipes that you can let go from 7:30 to 6:30. They just need a big piece of meat and lots of liquid. I used to do it all the time!

Brandi - That's an awesome Pork Loin Recipe! I will have to try it once we get out of this vacant apartment rut and I have some time. :rolleyes1 And the sausage and peppers looked great. That was cute putting a picture of David in there. Does he know you're posting pics of him eating? :rotfl2:

Aimee - I'm hoping you are taking it easy and recovering well. My spouse went through a very difficult bout of pneumonia which was very hard to recover from. Just give it time.

Jen - I hope Tooter is feeling better. The Lo Mein sounds awesome!

This morning when I can get Fran out of bed, I'm all packed for our weekend at Disneyland! :cheer2: Tonight WFD? We're going to Trader Sam's Bar at the DL Hotel and we'll probably have some of these:

I am an O's fan and I couldn't believe they beat the Sox. It was all over the news last night. How they got beat by the lowest team of the league is just beyond me. :confused:

Dinner tonight will be whatever I can get at the field or afterward, it's football night. Hoping for a good one tonight, this team is 1 & 3. They have to be on the ball like white on rice cause this QB likes to throw a lot and far. I did tell my BFF last night that I would pay her DS for sacking the QB. :rotfl: Last year I tried cheeseburgers but it didn't work, this year it's cold, hard, cash! :rolleyes1

Tomorrow I am going to the Amish Market and may try to get to the farm this weekend as well. They have broccoli, cauliflower, cabbage, beets, swiss chard and apples for picking.
 
Do you think it's the allergens and the dust in the air? You poor thing, it's so dry here, I can't think anything is good for your respiratory status. I hope you feel better soon.

I'm sure that's added to it - even non asthmatics can't breathe right now! We got a little rain last night and a really great thunderstorm - y'all get anything?

I'm off today and tomorrow so I'm resting some. We do have major housecleaing to get done, and maybe buying DH a car if he'll ever make a decision... he's reached the point of "I want something new now so I'll settle" which I'm trying to steer him away from. i want him to wait another week if it means getting the exact one he wants; he just wants something NOW.

Sadly, my instant gratification self married another instant gratification person...

Everyone sounds like they have some fabulous weekend plans. Our plans include two baseball games, skating and Nutcracker rehearsal. I bet that sounds like more fun than foliage, Disneyland and parties. :laughing:

So we're finally on our way. Several hours late, but what else is new? I wanted to check in by noon. We were almost going to leave at noon, when for some reason I decided to take a sack of soda cans for recycling back to the garage. What do I see? A puddle emanating from my freezer! To my horror everything has thawed. :sad:

Luckily we have a second refrigerator that was full of only soda. I removed those and literally moved about 100 lbs of meat and poultry. I threw away any frozen entrees, and when I get back I have my cooking cut out for me. Three turkeys, two hams, three standing rib roasts, two corned beef briskets, about a dozen pieces of chicken in a mix of bone in and out, two whole chickens, a tritip roast, four porterhouse steaks and a seven-bone roast. :faint:
