Morning, all! I am doing a quick flyby because our alarm didn't go off this morning so we majorly overslept! I feel great, though. It's amazing what almost 2 hours of extra sleep will do for you, lol.
Kinky Spaghetti and Meatballs is a take on a 30 Minute Meals recipe. It's spaghetti and meatball stoup. I made a few changes and renamed it kinky spaghetti and meatballs. For you newcomers, you will learn really quick that my goofball husband and I give everything silly names

Here is my version:
Kinky Spaghetti and Meatball Stoup
1 carrot, diced
1 medium yellow onion, chopped
3 garlic cloves, chopped
1 (14 oz.). and 1 (8 oz.) can of tomato sauce
3 cups chicken stock
1 package portobellini mushrooms
1 pound ground beef or turkey
½ cup Italian bread crumbs
½ cup grated cheese
1 large egg, beaten
2 T. chopped parsley leaves
½ lb. spaghetti, broken in half
1 cup basil, torn or shredded
1. Combine beef/turkey, cheese, bread crumbs, egg and parsley. Roll into 1½ inch balls. Set aside.
2. Heat a medium soup pot over medium heat. Add EVOO. Sauté carrots, onion, garlic, and mushrooms for 5 minutes. Add tomato sauce and stock and cover pot. Turn up heat and bring to a fast boil. Cook for about 5 minutes.
3. Remove lid and slide meatballs in soup. Bring back to a boil and add noodles. Reduce the heat and simmer soup for 10 minutes or until meatballs are done and spaghetti is tender. Stir in basil and remove from stove. Serve with bread and cheese.
