I'm Jen. I'm newly married to fellow DISer Uncle Remus.

We have a 15 y.o. son, J, and my cognitively disabled BIL, Big C, also lives with us.

And we love to eat. :teeth:

Well I have no idea where in the Great State you are from, but I grew in a small town in Texas and we never had a McD's for the there.

I remember a stoplight at the bowling alley but that was it.

We live in MD, work in DC and home is Texas, it is a small town that has a couple of redlights but no McD....:laughing: Maybe that is one of the reasons why I love it.... it is 40 Minutes to a chain grocery store.
 
PIO - All I can say is WOW!!! If our fair was anything like that, I wouldn't have to drag Alan to it kicking and screaming!!! Very nice!!!

It's almost time to get the kids out of bed, but I'm enjoying the last few moments of peace and quiet before they wake up. Ah, silence!

Dinner tonight will be soup of some kind and sandwiches.

No cooking for me tomorrow night. It's Alan's "stepdad's" 80th birthday and there's a huge family shindig. I'll try to remember to take some pictures.

Good Morning Everyone!!

I wanted to check in and give some updates on Nans vacation. She made it to Myrtle Beach with no delays and checked into her resort. This was a surprise for her, but since Buddy still calls the computer a "television" I booked the whole thing. They were a little disappointed because the ocean front room was an angled ocean view. But I think the jacuzzi in the room will make up for it:banana:

She said they rented a cherry apple red camaro. Think Hawaii-50!!! So she is having a great time and wanted everyone to know she made it!!

I read every day but usually just lurk lately, but for all the Newbies:

Ellen – Yes, we watched the game Saturday, it was funny with Cruso and the tiger head!!!! Good luck to Elizabeth on the test, I had gestational diabetes, it wasn’t so bad back then and it’s probably much easier to manage now. That’s a sweet hubby you have there.:goodvibes

Game day this Saturday is going to be in Wisconsin. We are playing them!! :scared1: This is our first year in the Big 10, and this will be out first Big 10 game. We are predicted to lose - which will be hard because we don't lose very often. But this year will be a real learning curve for us. Who knows - as I always say on any given day any team has a chance. I know for sure Cruso will NOT be wearing a Husker head on Saturday - he HATES us. Never ever a nice thing to say about us......oh well.

I am all in for a NOLA meet.... say the time and we will be there. :thumbsup2

WFD? I'm going out to an Oktoberfest at Disneyland and staying over night in the Villas at the Grand Californian!!! :cool1:

dgbg ~ Welcome.....I am Ellen, married to Doug and have 3 grown children. Our 2 daughters are both expecting - Elizabeth & Jay in December and Marty and Stephanie in March. We have one Grandson (Elizabeth & Jay) Ethan who is 7. Our son Matthew (our baby) is a Senior at the UN of Nebraska. I work for our Church and we live on a farm in Nebraska. Glad to have your part of our family.

Marisa ~ HI! It is so good to see you. Thanks so much for the update on Buddy and Nan. They so deserve this time away. I know they will have fun and that Camaro would be a dream for Doug. He wants one so bad.....I told him to go trade in his new pickup and he can have one. He thought that would look a little funny pulling the horse trailer. :rotfl2: So I don't think we will be getting one anytime soon. But he REALLY wants one.


Well Elizabeth's test yesterday showed she was a bit elevated. So now (of course she does) has to go in for a more indepth 3 hour fasting test. I swear this girl has had it - I will be so happy when this baby comes and this is over for her. She has NOT had a good pregnancy. I so worry about both of them. But on the other hand Stephanie is feeling great and sailing along. Her next appt. is October 7.

I have had the last 3 days from He**. I so hope the rest of the week calms down and I can get some work finished. I am so glad I don't have weeks like this very often. I am just way too old for it anymore.

Ellen- December is so soon!!! That little guy will be here before you know it. I forgot to mention to you, my parents were in Nebraska not that long ago and had a fantastic time at the Omaha zoo. They were just "passing through" but always love Nebraska.

Pio- Love the fair pictures, my kiddo is already planning her entries for next July's fair!

Becky- I wish we had food trucks! Johns's lobster roll looked awsome. Too often they are ruined with filler.

I am pleased to report that last night we had a balanced meal, don't really remember the last time that happened! We had roast chicken, acorn squash, and german potato salad. I just discovered Trader Joe's sells bacon ends for $3 a pound. It's really good quality and big pieces too. Anyway, had to find a use for it so I made the potato salad. Tonight we are having burritos. Have a great day all!

PIO, great pictures! That fair looks like a really fun time. I really liked the photo in the first set of the midway rides.

Robin, John said the lobster roll was really good. It was served warm with butter rather than cold with mayo. It was from Neptune Oyster in the North End.

Marisa, nice to "see" you! I am glad Nancy is enjoying her vacation so far.

Aimee, sorry you were not able to get the car Jason wanted. Hopefully something else good will turn up soon.

Hello to everyone else--this is as far as my memory goes today!

I am grumpy today. Stupid Red Sox :headache: Plus it is a really blah and dreary day outside.

So, I bought a crock pot yesterday. I have never owned one before. I was thinking it would be good for the weekends, for making big pots of red sauce with meatballs etc. Or maybe melting down onions for onion soup, or sausages in sauerkraut etc. I know a lot of you have crock pots. My dilemna is that I am out of the house for extended time during the week. I leave at 7:30 AM and arrive back home at about 6:30 PM. I am thinking that is too long a period to make something in the crock pot during the week. Do you ladies agree? It is one of those set it and forget ones that have the keep warm feature, but I am still a little leery of leaving something all day.

WFD: I have to go pick up my csa box in a bit. Supposedly there is broccoli in it--they don't always give us what they say they are going to. If there is broccoli, I want to make broccoli cheddar soup.
 
Roasted Pork with Honey and Orange

Ingredients:
3 lbs pork loin (boneless)
salt and pepper
1/4 cup honey
4 tablespoons orange juice (I used a Fresh Orange)
Orange Zest
4 tablespoons olive oil
1 teaspoon thyme
1 cup chicken broth

Directions:
1 Preheat the oven to 375.
2 Season the pork with salt and pepper and place in a roasting pan
3 Zest orange and juice into separate bowl
3 mix together the honey, juice, oil and thyme.
4 Pour over the pork.
5 Add the broth to the pan.
6 Bake until internal temperature reaches 150 (45-60 minutes).
7 Baste frequently.
8 Strain the pan juices into a saucepan.
9 Reduce until slightly thickened.
10 Serve over the sliced pork.

I would also love crockpot ideas. I made chicken once and i had to add cream cheese, and since I had no clue what i was doing, i just cubed it and threw it in. when i got home it was still in cubes, stuck to the side and dehydrated.... I would love some great recipes also!!!
 
Becky I use mine from 6:30am to 6:30pm. You just need to watch the recipe for the times. I have a Hamilton Beach digtal crock pot that I love. I haven't burned anything yet.
 
I have used crockpots in the past, and not so much now... but some of them have delayed timers, so it would not turn on until you needed it to.
 
Hands down, the BEST sour cream enchiladas I've ever had.

He said I should be more progressed, and my right lung now sounds awful. Going for another xray and if the results aren't great, a CT Scan. Another round of a 3rd antibiotic. He's concerned, due to the asthma and Crohns, and taking it seriously which I appreciate.

Did you get a big one? I have two small ones - for dips and such - and then a huge one. My big one turns off and onto "warm" at the end but it runs SUPER hot and I have burned things. For something like a roast, or soup, it works find for a long time but for boneless chicken, it doesn't. Just dries out too much even on warm.

Maybe try it on a weekend when you can check on it and see how hot it cooks?

I'm actually from Eastern New Mexico, but right on the Texas border, so I was already an honorary Texan before I moved here a bit over a year ago.

We're between Dallas and Waco.

Don't know where you're from, but it sounds smaller than here. :lmao:

I am NOT a small-town girl, so this has been an adjustment. But I've ended up loving Texas, and small-town life. The people who talk bad about Texas just don't know better. :rotfl:

I'm a crock pot girl. I use it for chiles, stews, soups, meats, etc. Mine's also a set it and forget it, but I've never had to use that function.

Chicken Lo Mein

Ingredients:

1 lb. chicken breasts, cut into bite-size pieces
1 package linguini
1 large onion, halved and sliced
1 package mushrooms, sliced (I've used button and cremini)
2 cups green veggies (I've used snow peas, snap peas and green bell peppers. My favorite is snap peas)
1 bottle stir fry sauce

Boil pasta as directed. In large saute pan, brown off chicken. Remove chicken from pan. Saute onions and mushrooms until just tender. I add my greens after the onions and mushrooms tenderize, because I generally like my greens crisp. When all veggies are cooked to your liking, dump in bottle of stir fry sauce and chicken. Simmer for a few minutes. Add drained pasta to saute pan and mix.

Easy and yummy!

I miss them, too. I keep hoping that they'll come back, as things slow down, but I guess they just don't slow down, huh? Boo!!!

Count me in on the hopelessly behind. Our schedule has just been crazy. However, I never disappear entirely.

Dinners this week have been beef and broccoli Monday, pasta fresca Tuesday, Caili and I ate out yesterday, and tonight was a clean out the refrigerator night.
