The What's For Dinner Thread - March '11 (recipe index in OP)

Okay, that is all I have for today. We had the big discussion about Santa last night with Caili. Liam brought it up. Caili was fine with the news. I don't think she was ever comfortable with the idea of some strange man sneaking into the house, even if it was to leave presents.

Still the end of a chapter, mom :hug:

We just finished with dinner. OMG. Aimee, those enchiladas were delish! J came out and promptly said: "Those were delicious, mom!"

I'm glad it was a hit! That lemon pie looks delicious... is it very tart? DH just LOVES very tart lemon stuff and I'd love to try making it for him.

Hope you like the mongolian beef! I loooooooooooved it.

I wasn't here Friday because I had a dentist appt. It was supposed to be the prep to order the crown, but I told him the tooth was still bothering me. Well I had to have the root canal in that tooth done again! Only for him to see that the tooth has cracked down to the gum line since the 1st root canal! He thinks the root may also be "cracked" and that's causing the pain. He wants me to wait 2 weeks to see if the pain improves, if not I'll have to see an oral surgeon. To have the tooth pulled! Thank God it's on the top & the last molar in the back. He said I may or may not feel that I need the tooth for chewing. If I feel like I need it, I will have to have an implant. I was in terrible pain last night but it has improved today & I was able to eat.

Augh, tooth pain and ear pain - I think - are the worst pains there are. I think I would have had them take a pair of pliers to them right then and there :laughing: I hope it improves some for you :hug:




Today went off GREAT (everyone promoted, we kicked things off, yada yada) and I'm T.I.R.E.D. Thankfully, there is nothing planned tonight so I can just rest! I picked up a Iced Venti Dirty Chai on my way in and it had enough caffeine to get me through the morning sans food :laughing:

I have found that I can tolerate mac and cheese (not the good kind, the box extra mushy kind) and ramen noodles which seem more substantial than just a can of Boost or chicken broth. Anyways, I'm eating that still but have seen some improvement in how I feel so it's worth it. I can certainly stand to miss a few meals :laughing:
 
I made these last weekend - finally got around to blogging it! They were very tasty. They're like a cake donut with a sugary glaze on to. Dense but moist.

Glazed Donut Muffins
For the donut:
1/4 cup butter
1/4 cup vegetable oil
1/2 cup granulated sugar
1/3 cup brown sugar
2 large eggs
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon ground nutmeg
1 teaspoon cinnamon
3/4 teaspoon salt
1 teaspoon vanilla extract
2 2/3 cups all-purpose flour
1 cup milk

For the glaze:
3 tablespoons butter; melted
1 cup confectioners’ sugar; sifted
3/4 teaspoon vanilla
2 tablespoons hot water

Preheat oven to 425 degrees F. Line 12 muffin cups with muffin liners or spray with nonstick cooking spray.

In a large bowl, beat together butter, vegetable oil, and sugars till smooth. Beat in eggs, one at a time. With the mixer on low speed, add the baking powder, baking soda, nutmeg, cinnamon, salt and vanilla until just combined. Stir the flour into the butter mixture alternately with the milk, beginning and ending with the flour and making sure everything is thoroughly combined.

Spoon batter into cups, filling the cups, and smooth the tops. Bake until the muffin tops are a pale golden and springy to the touch, 15 to 17 minutes, rotating halfway through baking time. Cool for 5 minutes then transfer to wire rack and cool 10 minutes before glazing.

To make the glaze, in a medium bowl mix together the melted butter, confectioners’ sugar, vanilla and water. Whisk until smooth.

When muffins have cooled slightly, dip the muffin crown into the glaze and allow the glaze to harden. Once hardened, dip a second time and allow to harden.
 
Hello again! I tried to post earlier,but had to quickly shutdown my computer. We had a thunderstorm and the lights were flickering.All is good now.

What is up with the wicked weather??????? WE got some of your storm but not as wild as the one you experienced.

I talked to my doctor last night and I'm on a mostly liquid diet for the weekend to give my "system" a rest. Hopefully it'll feel better soon.

I saw that you can tolerate some soft food but please be careful with what you eat. You have been suffering much too long :sad2:

One of the worst moments I think. I hated seeing my kids grow out of believing in Santa. I know it is silly but that is when that little innocent age changed and they really were growing up.

You are so right about missing my helper & feeling it! Jude isn't even moving around much, but I was up & down all day! Laying on the floor to play with him on his play mat, his swing, etc. Ugh, I sure did miss my girl! Don't know quite how I'm going to handle it when he starts getting around, but I WILL!!! ;)

I am sorry about the dentist problem, I think that any kind of tooth pain and what you need to do to fix it is horrendous! I sure do feel like you :upsidedow Sheryl- I am falling apart, Buddy is not one of those sensitive 90's kind of guys and he is asking what he can do for me ;)

I watchend Nola and Rylee Saturday night while Welby and Brian went to dinner. I was thrilled that Buddy got in early enough to take them for ice cream at a local farm that has a lot of baby animals to feed. I love those two monkeys but keeping up with them is easier if Buddy is chasing them :lmao:

We finally got our class assignments TODAY! Lucky for me (and maybe the principal, too), we ended up with the teachers we wanted. And the class sizes are manageable. 28 kids in a class instead of 38!

This is still way too many IMO. My niece was teaching second grade and had over 30 children. It is a lot for the teacher and for the children. Our school system has a 20 to 1 ratio. When we first moved to town our school system was in danger of losing accreditation. The community made a huge commitment to the children and our schools are now top rated. There is a nurse and psychologist in each school, dedicated reading and math teachers who come to the classrooms to provide additional support to children who are struggling, summer classes for reading and arts, music and sports are given a priority in the budget. We also have support for children like Kady who struggle with anxiety or other challenges. They are pulled into groups and through art are taught to work through whatever they are dealing with.

Parents and relatives are encouraged to come to school for lunch and in the younger grades they are asked to volunteer in the classroom. Buddy likes to have lunch with Kady but he cannot remember names very well. He is a big guy and showed up one day right from work so he looked like Paul Bunyan. He signed in at the office but could not remember the teacher's name. Hmmmmm.
He said no one said anything about that but as he was waiting by the cafeteria for the children to come teachers started coming out of the woodwork. They all tried to look like they were just strolling to the area but he was basically surrounded but a flock of people and they stayed until Kady saw him and ran over calling her "Pa"! Now I think he has a cheat sheet for names ;)

Dinner last night was good despite the mess I made cooking it. I had invited my neighbors to join us but warned them that they might want to turn and leave while it was still safe. We had Frenches onion chicken, chicken drumsticks, macaroni salad green beans and corn. I made a pineapple upside-down cake for dessert.

I burned the green beans the first time around. :headache: I also decided not to use my skillet for the cake and lined a springform pan with foil. That does not work so I ended up with the brown sugar syrup all over my oven, running off my counter top and down my cabinets. Thank goodness for wine.you cannot ruin a bottle of wine.

It was a busy weekend for us despite wanting to keep it free for the Sunday ceremony at the cemetary. Turns out that the whole extended family pitched up and there was 25 of us there. It was a very sad 30 - 40 minutes; especially for MiL and it was very hard on her.







And for a complete different change in topic, I didn't do a lot of cooking this weekend. So, I have no food porn to share. What I do have is from Saturday.....


Melbourne is celebrating a Winter Festival....of sorts. This is the second year it's in operation and I think it might become a fixture in the never-ending round of festivals that Melbourne hosts.

Princess - I love your photography!!! You amaze me!! The festival looks like a lot of fun, too! Glad everything went well, if a bit sad at times.

Nancy - The biggest problem with Utah schools, is that we have the largest number of students with the fewest number of teachers. Unfortunately, teacher's salaries are not in line with the rest of the US, so unless a teacher has worked here for a long time, new ones are not likely to join up. I can't understand why a state, who touts family, and children, will not increase the incentives for teachers and other educators to work here! It's mind boggling. I actually think we are the state at the bottom of the heap for teacher pay!

We get to go to back to school night at the elementary tonight! I know both the teachers already, but I like to go and visit, and let the kids deliver their supplies, etc. before school starts. I also need to talk to Mary's teacher about her allergies. She HAS to have an allergy pill every 4 hours, or she's snuffling like an elephant! Since our school nurse is only at the elementary once a week, I need to clear it with the administration and the teacher that I can either leave her pills with the teacher, or come and give one to her every 4 hours!

I also have to take Katie shoe shopping today. This is very frustrating for us all! Katie has very thick feet, so her "cheap" shoes cut into the top of her feet, and her heels. We just need to bite the bullet and pay for some higher end shoes that will last and be comfortable! Wish us luck!

Alan starts school today! He's very excited. He changed his work schedule around to accommodate his classes, and away we go!

No idea about dinner. I'm thinking taco salad. Easy, cool, and everyone likes it!

Glynis – I can sympathize with Katie and her feet. I have very wide feet and have never been able to buy the style of shoe I like but have to settle for what fits.:sad2:

My Birthday was wonderful. Friday night we all went to the winery. There was an awesome band and the wine was flowing. On Saturday my best friend took me for lunch and Sangria. We jabbered for 2 1/2 hours. Saturday night was a dinner and fun at the Country Club. Sunday the girls brought dinner in. So all in all I had a GREAT Birthday weekend.

Back to work this morning wishing it was still the weekend. Matthew was here and gone before I knew it. He was on the golf course all weekend with his Dad. They had fun and Matthew took 3rd place in the Championship flight.

He is back to school today starting his Senior year in college. Believe you me ladies, I have NO idea how that happened. Seems like just yesterday I was taking him to kindergarten.

I truly am a golf widow and I am starting to not like the feeling. At first I was looking forward to the time by myself now not so much. Doug has playoffs tonight AGAIN. I really do hope he wins, but another night by myself.

WFDT ~ leftover pizza from the weekend and a beer. Yep party time all by myself.

Hello all. Good weekend here although yesterday it just poured for a good long while. Went with a group of ladies to see The Help yesterday then had dinner at one of their houses. The movie was great although it was less of a comedy then most of us thought it was going to be.

This is the last marathon week before school starts and I will be exhausted by Saturday and have told my dsis we could take the girls. :scared1: I will need a major nap by the time it is all said and done.

Tomorrow it's real food...mongolian beef.

Glynis- shoes were the bane of my existence when the kids were little. There were only specialty shoe stores and the shoes were very expensive. I bit the bullet and bought them good shoes and purchased discount clothes. I could not afford both so the jeans etc were from big box discount stores.

Being Tuesday, dinner tonight was baked potatoes with the standard trimmings. Since I've been posting on this thread, I keep looking at Tuesday's dinner and wondering if I should rock the boat with DH and ask him to put something different on....but why rock the boat?? He might just throw his hands up in disgust and tell me to cook it myself! :rotfl:

Still, DS enjoys the Tuesday night routine.....

Well, Doug won last night so they are still in the playoff. And will play again Wednesday. Yea!!! :woohoo:

It is hot hot hot out today. We are having an unusual hot streak going right now. It is to be in the upper 90's, high humidity and rain. Oh JOY!!!

We are getting a new 55" flat screen today for the living room. We are so excited. So as soon as dinner is over we are parking our fannies in front of the TV. :rolleyes1

Ellen- Congratulations to Doug! It sounds like a lot of fun. Enjoy you new tv- I know I would! I forgot to thank you for posting the eggplant recipe, definatly somethimg I'm going to try.

Princess- My husband and daughter were going to make dinner on Sunday, the menu didn't appeal to me but I figured I would keep it to myself or the first time would also be the last! I ended up making it anyway though, long, funny story of my husband's good intentions- that failed miserably.

Nancy- Have fun at the zoo! I wish I lived closer to a zoo, I love going.

Kathy- How is Gretchen doing? I hope Irene misses her, I think it's still to early to tell, but not to early to be prepared. We aren't predicted to have any affects until Sunday and Monday, so much can change- hopefully for the better.

Goofy (Jen?)- That lemon pie looks awsome, and definatly not what I expected. We are huge lemon lovers around here so we'll have to try it soon. We are going to try the mongolian beef also, I always had great luck with any of Aimee's recipes I've tried.

Vickie- We don't have the Santa conversation either. When I was in college, Santa still didn't come until my brother and I were asleep.

Today is my Saturday and it is the perfect summery fall day out. I also had my boss watch a presentation I gave yesterday and she was thrilled with it so I'm still on that high. The chance of me getting a year round job there is very slim, but that certainly will help if my boss likes my work.

Not sure on dinner tonight, but I know it will have a meat, veggie, and starch. Not sure that we've had a balanced meal in a while. Have a great day all, I know I will!

First of all, I'm SO GLAD you had such a fabulous birthday weekend! :cool1:

Secondly, I can so feel you on the golf widow. I'm glad DH has found a hobby but it's getting old. He's playing 3 times a week, on average, which means usually one night after work and then Sat and Sun. Like you, I often love the time alone but it gets old after awhile - esp since dinner plans get messed up all the time because of it.

And of course, you can practically golf year round here. He's playing in the 107 degree heat right now so the weather doesn't seem to stop him :confused3

In the ongoing saga of this damn disease, I introduced some safe foods yesterday without any pain so things have calmed down. I'm going to steer clear of the old trigger food - salads, nuts, popcorn, fresh veg/fruit, etc for awhile.

We ate out last night but tonight I'm making tomato risotto. I really don't like raw tomatos but do like them cooked so I'm hoping it'll be tasty.

It's also meat free so we'll see what kind of reaction I get... :rolleyes1
 
Aimee - I'm so sorry that you are in pain! Do keep away from the trigger foods for a while! If the risotto is good, please post it! I love tomatoes in any form, and risotto is a favorite as well.

Ellen - Congrats to Doug! And congrats on the tv. Our big one died a couple of days ago, and we're trying to decide what to do. We either need to bite the bullet and get a new one now, or wait until Black Friday and hope there's a good sale. Right now the kids can't do anything with the Wii, as it was hooked up to the big tv. We may move the Wii upstairs until Christmas, just as a stop gap solution!

Kathy - Thanks for the heads up on Gretchen and Irene! Here's hoping Irene decides to pass her by! I'd love your recipe, too, please!

Well, it's the first day of school here, and all went well this morning. Katie successfully got herself up at 6:00, and was ready in plenty of time to have breakfast before heading out to catch the bus at 7:30. I made breakfast banana splits, and they were a huge hit with all the kids. Who knew my picky eaters would like Greek yogurt?!? Good to know! Jacob and the twins headed out the door an hour later and it's just me and Timothy now. He's kind of lost, and asks almost repeatedly where the other kids are. I think he'll take a good nap, since he woke up about 3 hours before he usually does. Here's hoping! I'd like a nap myself!

Alan's first day of classes yesterday went really well. He's excited about his class load, and has worked his schedule out with his boss, so all is well there!

Dinner tonight will be a new one from the blog Our Best Bites... Tortellini Spinach Bake in a Creamy Lemon Sauce. I've had really good success with the recipes from that site, so I'm hoping this will be good, too.
 
Pork Chops alla Pizzaiola

Recipe courtesy Giada De Laurentiis

Ingredients

2 tablespoons olive oil
2 (1-inch thick) bone-in pork loin center-cut chops (about 12 ounces each)
Salt and freshly ground black pepper
1 small onion, thinly sliced
1 (15-ounce) can diced tomatoes, in juice
1 teaspoon herbes de Provence
1/4 teaspoon dried red pepper flakes, or more to taste
1 tablespoon chopped fresh Italian parsley leaves

Directions

Heat the oil in a heavy large skillet over medium heat. Sprinkle the pork chops with salt and pepper. Add the pork chops to the skillet and cook until they are brown and an instant-read meat thermometer inserted horizontally into the pork registers 160 degrees F, about 3 minutes per side. Transfer the pork chops to a plate and tent with foil to keep them warm.

Add the onion to the same skillet and saute over medium heat until crisp-tender, about 4 minutes. Add the tomatoes with their juices, herbes de Provence, and 1/4 teaspoon red pepper flakes. Cover and simmer until the flavors blend and the juices thicken slightly, stirring occasionally, about 15 minutes. Season the sauce, to taste, with salt and more red pepper flakes. Return the pork chops and any accumulated juices from the plate to the skillet and turn the pork chops to coat with the sauce.

Place 1 pork chop on each plate. Spoon the sauce over the pork chops. Sprinkle with the parsley and serve.
