The What's For Dinner Thread - March '11 (recipe index in OP)

Hey y'all, I am hopelessly lost! I thought I posted yesterday. I tried to post earlier today. Our baby boy has turned in to a major screamer the past few days! I'm talking full out top of his lungs, face turns red, little hands in fist & back arched screaming! We can't figure out what's going on. Looks like a flat out temper tantrum but we're not ruling out anything at this point. It's been a rough week & it's only Tuesday!!!

Glynis, So sorry Jacob had such an awful hot day!:sad1: I hope he feels better quickly & the weather cools off for him! Are all of the classes in his grade in the un-aircondiitioned section of the school?

Poor Jude! It's so frustrating not to be able to understand what they want. I hope it all resolves itself soon! How old is he again?

Jacob's class is unique in that it is the only one in the school without windows or a/c. There are other classes that don't have windows, but they do have a/c. Jacob's class, however, is in the oldest section of the building, and is actually part of the old "stage". I didn't even think about the situation when requesting the teacher, I just knew that I wanted him in that teacher's class. We'll figure something out for him. Today, he's supplied with water bottles, and a pass from the teacher to go to the bathroom to cool down if he gets too hot. Hopefully, that will help!

Dinner tonight will be the tortellini bake that I didn't do last night. I plan on putting it together early afternoon, so all I have to do is throw it in the oven to bake in the evening!

Nancy - Some of the threads on here just boil ma blood. I have stopped readin most and just stick to readin and postin on threads that I share with friends.

Laura ~ Having a job that is unpredictiable is the pits. I know you love it tho. I am so glad to hear you and kids are getting along ok. You all are in my daily prayers.

Janice ~ That is just plain silly. What good is the bus if the kids still have to walk. :confused3 I hope it gets worked out soon.

Princess ~ The TV was neither one of our Birthday presents. It just happened that we wanted one and found the perfect one. IT WAS ON SALE....enough said. :rotfl2:

Sheryl ~ oh our poor Jude. This is such a hard age. I always say I love it when our babies got to the age that they could say - I hurt here. But if he is in that much pain, and so not like him, something is going on. I would have it checked out also.

Becky ~ I so wish we were closer as I will be alone again tonight. We could have a nice glass of something together. Wishful thinking I know.

Aimee ~ How are you feeling today? Your tomato rositto sounds heavenly, please share.


We had so much fun watching TV last night. That baby is HUGE - I mean HUGE!!! We have HD so everything is crystal clear. We were watching Bull Riding and Doug just about died laughing. You could see up the bulls nose and it felt like he was right in our living room. :rotfl2: Ok probably not that funny - I guess you had to be there. ;)

Tonight is the semis for Doug - gee I hope he wins again tonight. Like I told Nan, the first night they knocked off the defending champs. 90% of the clubhouse is pulling for Doug's team and 10% thinks it was just a fluke. It probably was, but oh well. Doug made the winning putt and everyone is treating him like a hero. So funny, as Doug does NOT do center of attention very well. :lmao:

I have Zumba then I am getting my hair cut. YEA!!!

WFDT ~ planned overs (sounds so much better than leftovers)!!! YUMMY!!!

So, we just got done with dinner. (Aimee's mongolian beef!) Aimee, Aimee, Aimee...you naughty girl. That stuff is delicious. All during dinner, UncleR kept looking over at me and saying: "This is delicious! I love this!"

Big C and J loved it as well.

Anyways, we've officially adopted you as an honorary family member because we figure if you're "cooking" for us this often, you might as well be a member of the fam. :lmao:

Y'all that tomato risotto was SO disappointing. It was tasteless :confused3. DH and I stood in the kitchen pouring salt, pepper, and parm cheese in it, taking a bite, adding more, taking a bite, etc. Then we decided to go get tacos :laughing: The dogs are going to have tomato risotto for dinner for a few days. They'll love it!

I'm working late tonight so we're grabbing something on our own.

I'm feeling okay, thanks y'all for asking :hug:

OH - ALMOST FORGET! After the dinner flop, I had to make something successful so I made roasted cherry brownies. Be.Still.My.Heart. Why hadn't I roasted cherries before? I could have just eaten the entire roasting pan but only ate one - the gut doesn't like fresh fruit right now. Then baked most of them in dark chocolate brownies. I'll try and get it uploaded soon!

Glynis, I really don't understand the school putting children in that room while the weather is so hot! They need to do something about that before a child ends up very ill. What about those standing room ACs?

Nancy, Glynis, et al, Jude is 4 1/2 months now. We honestly had not considered acid reflux. We still keep him sitting up after he takes his bottle, he still spits up some, but I don't think that it's more than the usual. Angelina really is thinking (& worrying that it's his temper). He occasionally screams like this when he is put in the car seat & driving in the car. It's new for him to do at home.

Nan, I am going to pay attention to the possibility of acid reflux. ( I'll tell Angelina to watch for it also.) I have noticed that every single time he is on his stomach for tummy time, he spits up. Today, an hour & 1/2 after he ate, I rolled him over on his mat for tummy time. No sooner than I did, he spit up, as soon as he did he started screaming. But he was also getting fussy already & it was time for a nap. I was able to rock him to calm him down.


I'm hoping dinner will be risotto & scallops. However that's high hopes! Alexis started with homework yesterday. Even though it wasn't much it involved reading & she struggles with that. Plus she is just so darn pokey with everything. She's the same way getting ready in the morning.

Sheryl just my 2 cents but have his doctor check him out. My cousin was about that age when she developed colic. She was not a pleasant baby to be around.:upsidedow
 
Sheryl - It sounds like it could be acid reflux. Could he be starting the teething process? My nephew started the drooling, red cheeks, crying because of the pain thing at 3 months, and no teeth showed up until 6 months. I hope it's not temper! Also, on the homework thing, can you make a game out of it? You know, "let's set the timer and see if you can finish this page before it goes off" kind of thing. I know that really helped Mary when she was getting distracted. As for the reading, nothing really for that, except to keep at it. Does she have to read to herself, or could she read aloud to someone? Good luck with it!

Someone mentioned a free standing A/C, and I don't know about that. I told Jacob to call me if he started to feel a headache coming on. So far, no call. However, if it looks like this is going to be a common occurrence, I'll pull him out of that class and put him in another one really fast. Alan is extremely worried that there's something more than the heat triggering these migraines. Jacob really does get them a lot. So, I guess we'll be finding a neurologist soon to see if there's an underlying cause for them. I'll keep y'all posted.

Sheryl – I’m sorry your sweet little guy is going through a rough time. I remember it being so frustrating trying to figure out what is wrong with them. I was going to suggest having him checked for colic as well. Kyle suffered horribly with it until they put him on some drops and he was a different baby.:hug:

Robin – They’ve been talking on the news today about how all animals sensed something was wrong before the earthquake even happened. Your poor pup was frightened. Good luck with the new job prospect!

Vickie – I hope your boy has a great birthday and good luck with the sleepover!

Nothing new going on here. Kyle started classes this week and next week he'll be getting up with the chickens in the morning. The coach has decided to hold practice at 7am so they'll avoid the extreme heat we're having.
 
To all of you in the northeast, are y'all preparing for the possibility of a hurricane? I am praying this storm changes its path and heads out into the ocean.

Alex is one unhappy camper. He has a paper and a test already both due tomorrow. As usual he has made his schedule pretty difficult. At least he has a study hall in the middle of the day.

The bus is crowded, he tells me there were 3 buses to pick up all the kids and still filled to the gills. I am not understanding how this is saving $$. I think the board needs to get a grip. The hired someone for a position that has a obscure title that pays big money but no money for transportation.

I think I am going to make a big salad for me. A is having dinner with his dad.
 
I forgot to mention again.:headache: All you on the east coast stay away from Irene. It does sound like she is going to play nice.
 
Jen - Whilst I appreciate you and your sentiments about your new best friend, how about I adopt you? That way, you can make my dinners for me. Afterall....Dinner made by someone else is always preferable to making it myself. :rolleyes1

As long as we get to live in Australia and frolic with kangaroos, you are free to adopt me. But, I come with 3 family members, 2 dogs, and one VERY moody cat who believes that playtime begins at midnight.

So, J had a great 2nd day of school today. He seems to really be enjoying himself.

I went to the middle school today and met all of my students who are in the self-contained special education room. I'm already enjoying all of them!

No work for me tomorrow. I have my follow-up with my surgeon and some other appts. to take care of.

We were so excited today. We got new Droids. Well, we started to set them up to transfer everything over and UncleR's didn't work. So, they have to send her yet another one! :scared1: She is not a happy camper. :headache:

Let me see, what else...tonight's dinner was BLT's. Tomorrow I'm making homemade pizza since I'll be home to do it.

Vickie - You and I would have been pregnant nearly the same time. My DS turned 11 in August.

Jen - You and I will get on really well together. I can be OCD with cleaning too. You, your 3 family members, 2 dogs and moody cat will have to blend in with me, my 2 family members (and let's not count my extended family) and 2 cats (one temperamental, the other skitzoid).

You'll have to be nearer the bush if you want to frolic with kangaroos.

Curry Puffs – Vegetarian style

My starting ingredients:

  • Pastry – store bought, either puff or shortcrust (or homemade)
  • 4 – 5 cups Mixed diced vegetables – any combination of green beans, onions, potatoes, carrots, cabbage, corn; even frozen vegetables like I’ve used here etc
  • 1 – 2 tablespoons Curry Powder – mixed with a little water
  • Curry leaves (optional)
  • Garlic
  • Ginger
  • 1 tablespoon oil
  • Salt and Pepper – to taste
  • Egg, beaten – for glazing

NOTE: You can add some minced beef, lamb or chicken to the recipe should you wish.


In a wok or large frying pan, heat the oil and fry the onion for 1 minute.

NOTE: If using meat, add the meat at this stage.


Add the vegetables in turn and toss for about 1 – 2 minutes each addition, starting with those that might take a little longer to cook….

…ending with the frozen vegetables, if you are using them.

Pour the curry powder mixed in a little water into the pan.

Add the curry leaves if you have them.

Toss all ingredients together for another minute and add salt and pepper to taste.

Allow the vegetables to cool completely.



Heat the oven to 180 C or as per instructions on the pastry pack.


I cut each sheet of pastry into 8 oblong sheets. Place a heaped tablespoon of the vegetables in the middle. Fold over and crimp the edges together. I use a fork. If there is not enough filling, add more to the parcel before completely crimping the last edge.

Place on an oven tray and use the fork to pierce the pastry so that steam can escape during the cooking process….and glaze with the beaten egg.

Bake for 30 minutes.

Good Morning!!!!!!!!!!!!!

I am normally a snow storm phobic who is over prepared but Hurricanes????????????? I plan to do my shopping today because I work tomorrow and refuse to deal with the grocery stores on Friday or Saturday. Buddy is going to fortify the sheds because they behave like giant wind tunnels. I will collect all the plants and furniture and toys that can blow around. We are inland and I worry about our coastal neighbors.

Sheryl- reflux does not always mean spitting up. Kady would have little coughs and started to sleep fitfully. If Jude is more comfortable with a bolster to raise him a little try that. Nola slept better in her little bucket than in bed, poor baby :sad2: I would discuss with the Dr and would not worry about temper. He is little .

Janice- tests already?????????????????????????? I am appalled at the way some of these administrators are allocating funds. In CT we are seeing some State Troopers laid off but the wasted money elsewhere is :confused3

Aimee- I am dying with your desserts. How do you feel?

Becky- I missed your pics!

I have a fitting tonight but there are supposed to be thunderstorms in the area. I am a terrible night driver and am worse int eh rain. I may try to postpone. If I do I can cook.

Dinner last night was BLT's for Buddy and Bacon and eggs for me. I had some of the awesome bacon thawed so it hit the spot after shoe shopping.
 
Hi, everyone! I am sorry I've been MIA lately. I've been under the weather and crazy busy. Looong stories I won't bore you with.

I'm cooking for Kevin and Amanda today. I'm making Mexican lasagna, Spanish rice, and salad. I also made them a lemonade cake for dessert. I actually have to skidaddle off so I can refill my coffee and get busy!
