The What's for Dinner Thread- June 2012 (recipe index in OP)

Good morning all!

Brandi ~ You don't eat ice cream either. Good grief lady, what do you eat these days? :rotfl2:

Alison ~ Your evening sounded about perfect. You are one very very lucky lady. I would give anything to be able to do the things you do. How exciting. Now - tell us all about it..........we want details.

PIO ~ No computer program yet. I waited about 15 minutes after 1:00 and called. Pam was out again, but did find out that her husband had emergency surgery. Things happen and I am hoping for 10 am this morning.

We had a ball at the fair last night. Ethan was excited but Liam was beyond excited. Oh to be 2 again. I got to take him on his first Merry-Go-Round ride and we ended up riding 2 more time and once on everything else. The highlight of the night was Ethan and I went and played games. Poor thing can't tolerate any of the spinning rides. Last year he went to 3 different County Fairs and ended up really sick at all of them. So he did a few things but not many, so I decided that we would play the games. Off we went and the first one that caught his eye was the one that you throw basketballs in to get your choice. The guy was so nice and let him go closer to the rail. I bought 6 balls for $5. On the third ball - it went in. :cool1: The guy was amazed (of course he was - that hoop is smaller and not round) and Ethan choose a huge - I mean almost bigger than he is - Red Bull!! It was priceless and perfect. He was so excited (his Momma - not so much ;)). Everyone congratulated him and made him feel so special. It is something he will NEVER forget.

Doug and Jay are golfing tonight so I think Elizabeth and me and the boys are going to go out tonight to eat again at the 4H Café and look at the exhibits.

WFDT~ Hummmm........maybe another 4H burger (they are so good) or maybe a roast beef sundae. All I know is I can't wait.

Friday evening and all's well in Melbourne.

I was supposed to go see the fireworks at the Docklands tonight; but the City Council cancelled the display. Tonight's display was going to be specially coloured Red....in celebration of the International Aids Society conference that is being held in Melbourne. Sadly, there seems to be a number of delegates that were on board the Malaysian Airlines plane.
I walked to one end of the city instead. All the flags are at half-mast.


Ellen - I hope you got your program by now. Sounds like you had a great time at the fair. So fun to read about Ethan and the hoops he went through for the Red Bull. :thumbsup2
 
...what was for dinner last night? Chicken/turkey meatballs, sausage, and zucchini in red sauce with ziti....
 
Frenzyed Friday ~

PIO ~ Yes I got my program set yesterday, now I just have to learn to work the program. :rotfl2: A bit frazzled today, but it will get better.
I was just dismayed about the Malaysian plane going down. Such a sad sad day.

Kimmar ~ I make a good turkey meatball myself. I haven't had them in awhile, I need to get those in the rotation. Thanks for the suggestion.

We went to the fair again last night. We had dinner in the café and I did have the Roast Beef Sundae. It was amazing. They put mashed potatoes in a bowl and then brown gravy with roast beef in it over the top. YUM!!! We then looked at all of the exhibits and even took in part of the Dog show. We had a great time and the boys were so good. Not once did they ask to go to the rides. Home early, even before Doug.

We have tickets tonight to the Bart Crow Concert at the fair. So as soon as Doug gets home we will head to town. Tomorrow, Doug and his Dad are working in the bedroom. We are at a standstill and can't do much else until the pull the new wires in and set the outlets and the entertainment on the wall. After that the new windows can be placed and then it will all fall into place. I just might get my new bedroom done yet.

WFDT ~ Back to the 4H Café tonight - I am gonna have the 4H Burger again!!

I took boneless skinless chicken out of the freezer with intentions of making something with it, baked potatoes and a veggie.

But today turned into a 10 hr work day, so it's turning into a "call an order a big ole pizza" kind of night.
 
Kimmar - Sounds like a good dinner. Turkey meatballs? Do you make them yourself?

Ellen - How long is the fair on for? I don't blame you for heading there as often as you can if it is only a 2-week fair. Bart Crow? How was the concert?

Maslex - Pizza dinner is always good. Are you planning on using the chicken tomorrow night?



I went to the Vic Market today and we bought some bone marrow. I've got a soup on the go.....and will need to skim a bit of the rendered fat off. Hope it turns out to be decent stock!

WFDT? I have no idea. We bought all this stuff from the market and I forgot to think about getting something for dinner! LOL! It might be pizza dinner......:rotfl:
 
Stock is all made. I think I'll make a vegetable broth with it tomorrow.



WFDT? We decided it was easier to get Shanghai Dumplings aka pot stickers. Right now, I'm sitting here with a bottle of Rekorderlig Pear Cider. Time for some chill-ax tonight.

We have been at the Disneyana Convention all week. The last two days have included lunch with our admission. Both days we ended up at DLR after lunch. But last night we crashed the Grand Reopening of one of the restaurants. We didn't have a reservation, but the bar allows some guests to "drop in" based on availability. We had sliders, crab salad and a peach dessert.

Tonight is the Gala Banquet. No idea what we're having for dinner, but I suspect it will be Beef or Chicken with potatoes and vegetables accompanied by a salad and dessert.
 
WFDT? Well, I'm making something with boneless chicken breasts, but I'm not quite sure what yet...:confused3
 
Alison - Sounds like a great but busy week. Look forward to seeing your view of the dinner. Is the 'drop in' place somewhere you'll be frequenting a bit in the future?

Kimmar - Hope you worked out what to do with the chicken breasts.



It's Sunday morning here and I'm just going to take it easy today. We have a Japanese exchange student coming to stay with us (arriving next Saturday) for 2 weeks. DH and I plan to make sure her room is ready for her today.

Next weekend is the last weekend of the month. We've got the baked lasagna dish planned for our monthly cook-in.

...what was for dinner Saturday night? Summer Squash with Chicken Alfredo:

6 boneless, skinless chicken breasts (not the thin-sliced ones)
2 chopped garlic cloves
1 t. garlic powder
6 slices bacon
1 medium yellow squash, sliced (about 1/4")
7 or 8 campari tomatoes, sliced in half
6 sun-dried tomatoes, diced (dried, not packaged in oil)
1 lb penne pasta, cooked
6 T. parmesan cheese
15-oz jar alfredo sauce (I use Classico Lite Creamy Asiago Romano sauce)
2 T. butter
4 oz. light cream
1/4 c. sliced almonds

Spray saute` pan with Pam, or some other non-stick product. Cover and saute` chicken and garlic, about 8 minutes on each side. Slice and set aside, keeping dippings of chicken. In another small pan, cook bacon till crispy. Drain on paper towels, covering with paper towel ( to crumble). In same pan, sauté squash till edges are golden brown. Halfway through, add campari tomatoes. In 'chicken' pan add butter to chicken drippings. Add half of parmesan cheese and light cream, stirring to melt cheese [on low flame]. Add jar of sauce to heat through. Place chicken on large serving platter and pour cooked pasta on chicken. Lightly toss to mix. Pour heated sauce over chicken and pasta and toss. Pour veggies over mixture. Sprinkle with remainder of parmesan cheese, crumbled bacon, sun-dried tomatoes, and almonds. Serves 4-6.

maslex ~ After a 10 hour day you deserved a night off.

PIO ~ Our Fair ran from Tuesday night till last night (Sunday). Our State Fair runs for 2 weeks and Doug and I hope to get a day or 2 in there also.
Bart Crow is country western singer. Not real famous, but Doug and I were surprised that we knew a few of his songs. We had a really nice time.
Yes, I have my lasagna recipe ready for this month. Hummm........next month could be a crock pot meal (you know I love my crock pot) or maybe some sort of salad. I know you are in the middle of winter but it is summer here and we all are going to have an abundant of fresh produce soon. Just a thought!!

Alison ~ I have had fun following your adventures on FB. Your weekend sounds like a lot of fun. Now you and Fran need to take it easy for awhile and catch up on your sleep. How is the new house moving going?

Kimmar ~ Yes the Roast Beef sundaes would be great at home, especially for on the patio or on the go. They were really good.

I had had such a rough week and had put in over 10 overtime ours. It was 5 (I am suppose to be off at 4) on Friday night when I said ENOUGH, packed it all away and went home and had a beer. :p And told myself that I wasn't going to think about it the rest of the weekend. I was pretty proud of myself and did a pretty good job. I am back at it today and it's still a mess, but I know it will get better and will eventually be just fine.

The boys got all of the wiring in/pulled and also put in our new living room window. They worked from 10am till 9pm. They were pooped and really really dirty and stinky. We went into Kearney yesterday and got all of the insulation, inside and outside trim. So now comes the fun stuff. I can't wait!! We went to see Marty, Stephanie and Lilly. She was so glad to see us. Dad took us all to eat at Valentino's for pizza. YUM!!

It is supposed to be triple didget today. No golf for Doug tonight - even too hot for him. I hate the heat, so I am staying inside all day where it is cool. I feel sorry for Doug having to work outside in this heat and I know he will come home really wiped out. Bless him!

WFDT ~ Crab salad stuffed tomatoes, Wheat thins and brewed tea. Something real light in this extreme heat.

Brandi - I did see the recipe. I'm not sure that DH is into nutritional yeast; but I will try and put the rest together and substitute with something.

I think it has a cheesy taste to it. So it works well. But if he does not like it, I am not sure what to sub for it.

Right now, everything I am eating has to come from a plant. So all veggies, nothing processed, (Except my black bean burgers) I buy them pre-made.

I eat nothing from an animal (no diary, no meat, no cheese, no eggs....)
Nothing but naturally occurring sugar, has to come from a fruit
No caffeine
No added salt to anything

It is very different but DH and I are eating out weight in veggies, and my skin is looking so good, my nails are growing like weeds and are super strong. my hair is so healthy and shiny... I am loving it. I have so much energy.

I am going to be a Nana again!!

Stephanie and Marty are expecting in January. She went to the Dr. this morning and he confirmed that she is 13 weeks and her official due date is January 24th. They are thrilled as we all are. Lilly just has no idea how her world is going to change.

They told Doug and I on the 4th of July, but asked to keep it quiet until she had gone to the Dr. Wow, that was hard.

I couldn't wait to get in here and tell you all.


Doug worked on the window last night and realized that the trim was only 10' and not 12' so we didn't have enough. We jumped in the car and headed back to Kearney for another 2 boards. We stopped for ice cream so the trip wasn't too bad.
