The What's for Dinner Thread- June 2012 (recipe index in OP)

Last night was a salad... David had some chicken with his.. So boring I know, but Friday it is over!
 

I applaud you for being able to do this. No way that I could.

It has not been as hard as I thought, but I do miss things... I so bad, I mean crave a slice of pizza... But really it is the bread/crust of the pizza with sauce that I miss the most.

Everything else has been kinda easy!

Kimmar ~ I LOVE Boston Market, but sadly the one closest to us (35 minutes) closed.

maslex ~ I agree with Alison. It is just Doug and I now and I still will cook a roast or casseroles. Just because it is just the 2 of you, you still need to eat and it might as well be what you like. The freezer can be your friend. ;)


We had a wonderful Easter. Way to much food but it was all so good. The kiddos loved their baskets even the big kids liked theirs. It was suppose to rain in the afternoon but it held off and we had a nice evening. Everyone left around 6 pm except Doug and I so we went for a nice long walk and then sat on the patio with a glass of wine. Nice way to end a beautiful day.

Monday I was going to do nothing - well that lasted till about 10am. I am so not a sit around type of girl. It was a beautiful day out so I cleaned the patio and got all of the furniture out and washed up. Cleaned the front porch, cleaned my main flower bed up and planted my herbs. I felt so good when it was done. I even got a slight sunburn on my arms and legs. By 4, I went in and cleaned up and when Doug got home we had margaritas on the patio. Was a neat way to end a great day.

WFDT ~ Spaghetti with a home made sauce (I am so proud of myself), green salad with bread sticks.

Ellen - You and I were out in the garden weeding and planting over Easter. I put in winter vegetables. :thumbsup2
 
I made a double-decker grilled sandwich.

Marble rye
cheddar-jack cheese
ham
salami
muffaletta mix
provolone cheese

Grilled 1/2 like you would any sandwich, and the other half "open face", then stacked the deck :)

Welcome to all the new folks!

I'm making my chicken tomorrow night. We have dinner at Napa Rose with Bret on Saturday. I have to make a turkey Sunday. We are supplementing Olga's diet with roasted turkey for her dinner since she doesn't seem to like most of the canned food she is able to eat.

I am so ready to take off on our road trip vacation, but not ready in a real sense I have a ton of things left to do before I am actually ready!

Maslex - Ziti? What's your recipe for ziti?


WFDT? DS is coming home from school camp today. So we figured he gets to pick.

No real recipe, really. Just threw together a spaghetti sauce, let it simmer for about an hour or so, boiled up some pasta (DH likes the spiral). Browned up some hamburger/onion. Mixed up a ricotta mix (ricotta, egg, parmesan, mozzarella, salt/pepper). Once the pasta was cooked, I tossed it with a ladle or two of sauce and half the ricotta cheese mixture. Then just started layering everything into a 13x9. Sauce, pasta, ground beef, ricotta cheese mix, sliced mozzarella (makes it extra cheesy :thumbsup2 ) then sauce, pasta, ground beef, ricotta and mozzarella. Throw it in the oven for about 25 mins or so and call it dinner.

David is taking me out to McCormick & Schmick's Seafood Restaurant Friday night... I really have no idea what I will be having. Something good and fatty and gooey!

Your "lazy" day sounds very productive, and love the way it ended....:flower3:
