The What's for Dinner Thread- June 2012 (recipe index in OP)

Kimmar - Chicken nachos for dinner? I see another chicken dinner on the cards this weekend.

PigletGirl, Gumbo - We decided we were all cooking a roast chicken dinner of any description this weekend. And then we were going to share recipes; or post pictures. Hope you'll join in the fun!


Maslex - Ziti? What's your recipe for ziti?


WFDT? DS is coming home from school camp today. So we figured he gets to pick.
What coincidental timing! I'm making a roasted chicken on Saturday! I find I can control the salt content more than what Costco does (although that is a deal if you are crunched for time!)

Yes, I love seeing what others have for dinner.

Today was our UMW Spring Breakfast. We had a Muslim Woman come to speak. She was VERY interesting. I really learned a lot about this religion. Very interesting. We were served yummy cinnamon rolls with a raspberry fruit slush.

Tonight we are going to Doug's sisters for dinner. His Aunt and Uncle are in town and they are talking about some land that we all inherited from his Uncle that passed in January. This is either going to be good or bad. I plan on not saying ONE word. I will be very very quiet. Say a prayer for a good outcome please.

WFDT ~ I have no idea, but Kathy is a great cook so I am sure it will be good.

David is taking me out to McCormick & Schmick's Seafood Restaurant Friday night... I really have no idea what I will be having. Something good and fatty and gooey!

That sounds nice and tasty! We ate there in February and it was really good. I had shrimp stuffed with crabmeat!
 
Change of plans.....saving the grilled chicken for tomorrow night.

Tonight is take out.....pizza for DS17 & me. BLT deluxe for DS18 and a ham grinder for DH. Just not in the mood to deal with cooking tonight. ;)
 
Alison - Enjoy dinner with Bret. I'll be watching out for the pictures and if Chef Andrew Sutton comes round to talk to you all, make sure you tell him about me!!!! I hope to be able to eat at his table.......at some time.

Ellen - DS was away for 3 days. I think he had one shower whilst he was away during that time. He didn't stink but there was a definite miasma in the car on the way home.
Was the Muslim Woman dressed in her burka or was she more moderate?

Hope the discussion with Doug's family went well.




Today is Anzac Day, public holiday. It's our Veteran's Day and there was a dawn service and a march to commemorate the Anzacs. Shops won't open till 1 pm; so I might head into the garden instead and get a bit more weeding done. I've been putting in winter vegies garden bed at a time (as the weeding gets done). Here's hoping I get a semi-decent crop.

We've got friends visiting from Sydney this weekend; so we're going out for dinner. It will be the local Italian place around the corner from us and we're all looking forward to a nice dinner and catching up on life tonight.

I'll be heading to the market tomorrow morning; so I'll get my chicken for dinner then. :thumbsup2

I might do Boston Chicken on Sunday...we got tix to see Sebastian Maniscalco at Bananas this weekend at 6PM....who feels like cooking THEN? popcorn::

I am excited for the chicken this weekend. I got a new roaster and I can't wait to try it out. This is gonna be fun!!

Hope your dinner went well, and Yes I am trying to be good. I had some flat bread with tomato sauce for lunch with a salad, and it tasted SOOOOO good :) But it was a very small plate.

I was sitting still and another car t-boned me... Hit me right in the driver door. I am sore all over and having headaches.

I did come into work today, and we are still going out tonight to celebrate my 8 weeks of detox, but not sure how "up" for everything I will be, but I promise pictures!

Roast Chicken Dinner



It's the last weekend of the month and the second 2D group dinner! I suspect that the What's For Dinner Thread is going to be implementing a new fun tradition for us all.

On the menu for the last weekend of this month is Roast Chicken.


I tend to go real traditional with my roast dinners; so it's a pretty standard recipe from me.

Preheat the oven to 190 C.

Baton cut some potatoes, sweet potatoes, carrots and pumpkin. Toss in some olive oil and rosemary. Cook in the oven for 1 hour.





For my star protein, I got some breast on the bone from my chicken shop. DS likes the breast and rather than roasting a whole chicken, it is easier for me to get two breasts on the bone pieces. Breast on the bone also takes less time to cook than a whole chicken, so whilst the vegetables were cooking, I prep-ed the protein. (For those wondering, DH got some salmon for dinner tonight)






In a hot pan, fry the chicken, skin side down, for about 3 - 4 minutes to brown the skin.







Whilst the pan is still hot but no longer on the heat, place a generous knob of butter, parsley and thyme.







Spread the butter/herb mix over the skin of the chicken, place in the oven and cook for 35 minutes; or until the juices run clear.







When cooked, rest the chicken and transfer the roasting juices into a pot. Add some stock and reduce the liquid for 5 minutes. Then add flour, salt and pepper and cook until thickened.







I timed my chicken roasting so that the vegetables finished cooking at the same time.







Serve with any other sides that you like.

Beef & broccoli in the crock pot. DH doesn't like rice, so I just might make some mashed potatoes.
