The What's for Dinner Thread- June 2012 (recipe index in OP)

....shame. Why not make it for dinner tonight? :confused3 I know it'll be a day late, but I bet it will taste just as good...
 
Last night was meatloaf, mashed potatoes and green beans. I used Fran's standard meatloaf recipe so we knew it was good. I made two so I have one in the freezer. I also made meatballs so we can have meatballs and mushroom sauce later this week.

Tonight needs to be something easy because we'll be working late with Darcy cleaning the house and planting. I'm thinking Frito Pie.
 
Kimmar - I don't think I've ever had corned beef and cabbage like that. When I was a child, Corned beef came out of a can.

Ellen - Funny you mention "keep it clean". I did my hip when I was cleaning down the showing. Bent down to scrub the tiles and when I got back up, my left hip didn't go back in place. I will trying cleaning and swinging from the chandeliers next time, though. It sounds infinitely more fun! ;)

Wednesday night and it's dinner at mum's tonight. We might end up with two dinners at mum's this week. One of the family members has a birthday at the weekend and I've heard on the grapevine that mum is planning a dinner at home. :thumbsup2
 
Corned beef has become a staple here just like Turkey and prime rib. Normally we go crazy and stock up on corned beef but we had so many from last year or maybe even the year before we didn't go for it this year.

I never had corned beef in a can and don't think I could.

Tonight we had meatballs and mushroom sauce. Mmmmmmmm one of those childhood dishes that are have nanatized.

I believe it was a World War staple in England. My mother used to cook it by frying some onions, adding the canned corn beef, throwing in some cut chillies; and then breaking a couple of eggs in the fry pan towards the end. When the eggs were cooked, we would have it on toast.

PIO ~ Your canned Corned Beef reminds me of SPAM. I am not as smart as you or I would show you a picture. But it comes in a can and my Momma used to prepare it really similar to yours.

Well we had a very weird weather day yesterday. There was a strip of snow that didn't move. Doug's Dad lives about 10 miles East of us and got almost 12" of snow. We got about an inch but it sure was a mess. The wind really blew and they closed most of the roads. I closed the Church at 3pm and headed home. Crazy crazy day. Suppose to be in the upper 40s today.

WFDT ~ Trustees are serving Hamburgers and Hot Dogs for Lenten Dinner. I think I will pass and grab something after services. Probably just a bowl of cereal that late at night. Doug will eat at Church.

Ellen - Spam is different to corned beef. We also have spam in a can over here and I prefer the corned beef the way my mother fries it. A trustees dinner implies a meeting. Did you have one?

Thursday today. It's wonderful autumnal weather outside. I'm just going to enjoy!
 
We had the meatballs in mushroom sauce last night. It's one of those Campbell's recipes from the 50s or 60s where you open a can of soup add a little milk and then put your cooked meatballs in the sauce to heat. Serve over noodles or rice. I saute some onions and mushrooms first for a little texture and veggies. It a childhood comfort food for me.

Frito pie is like Nachos almost. Heat up a can of chili. Meanwhile place Fritos on an oven safe dish. Pour warm chili over Fritos and cover with grated cheddar and onions/green onions. Heat until cheese is melted. Top with any veggies you like, we use lettuce, tomatoes, green pepper and then a little sour cream, but if you like them you could add olives, jalapenos, whatever!

Here it is 7PM and I'm sitting at the vet waiting to pick up a kitty who came in yesterday with a false alarm. $400 and a teeth cleaning, x-rays, and blood work later, I still don't know what we're having for dinner!

Alison ~ I am also hoping that the Vet was good news. I hate having my babies at the Dr.

Oh what a day I am in for today. And already I have had words with our custodian. I am so very sick of her complaining and discontent. If you don't like the job - QUIT!!! Not my fault!! I am in charge of the luncheon today for around 100-125 people for Lent. I hope all goes ok. I am a bit nervous, you never know for sure how many are going to show up.

As soon as Doug gets off of work tonight we are headed to Kearney as there is a Circus night at the Children's Museum and we are taking Lilly. She will love it! I can't wait!

Tonight is black bean burger (Veggie style) with lettuce, tomato, onion, avocado, and and sugar snap peas...

For dessert I will have strawberries

We ended up ordering Thai food. Won tons, Beef Satay, Me Krob, and Pad See Eew.

PIO- I have been buying them... Morning Star.. Once I am done with the ETL detox, I will go back to making them.. Mine need a binder to stay together, and I have not found one that works with the ETL...
