Today, we spent the afternoon at DS school. They were running Parent Teacher Interview and we had 7 minutes for each teacher. Yup. Teacher Speed Dating Night! They rang the bell exactly at the 7 minute mark and all the parents changed seats. Does it happen that way for y'all?


WFDT? I put a meatloaf into the oven and served it with broccoli and asparagus. It was a new meatloaf recipe and both DS and I thought it was a fail. So, it won't make an appearance on this thread.

I honestly do not ever remember my parents going to my school, except on the first day! I never had conferences with kids teachers either..

My mom stopped look at my report card when I got to middle school... Times they are different.

Sorry the meatloaf was a fail.

When you have fails, do you still eat it? For us, if I made a pan of meatloaf, it would last several days, since there is only two of us... And we would still eat it, so we would not waste it. Does everyone do this?
 
Morning Girls,

PIO ~ Yes we have Parent Teachers Conferences here. We meet with each teacher but there is NO buzzer. You just wait in line, sit down with the teacher and talk as long as needed. I remember one year we had one in High School - Elizabeth, one in Middle School - Stephanie and one in Elementary school - Matthew. Now that was fun - took me all day!!

Brandi ~ If it is a fail, sometimes we will still eat it, just not put in in the save pile. But there have been times in the 36 years that we have thrown it out and gone to town for a burger. That hasn't happened but a few times but it has happened.

Alison ~ I too would be interested in how your prepare your Mahi Mahi. Not that I ever have a chance to fix it but it sounds interesting.

I really do think Spring is going to come. We are to get to high 60s today. I will take it. I know we will get snow again - we always do but at least now it won't last long. The lows right now are in the 30 and that in itself is wonderful. Those sub zero temps were brutal.

I did get the Mahi, and I made it really simple. I just put some salt and pepper on it and seared it meat side down, then when it was nicely browned I turned it on the skin side and let it cook on lower heat for a few more minutes. We just ate it with some tartar sauce.

When I am feeling more creative I will grill it. If I'm really creative I marinate it in a soy and honey mixture and grill sliced pineapple and serve that on top. I contemplated that but since we didn't even leave for the grocery store until 5:30PM I nixed that idea pretty quickly. We didn't eat until about 9 last night. I'm about to take a nap and I NEVER do that!

Brandi, if we have a fail, I usually try to feed it to the cats. If they won't eat it, then it goes in the trash. I hate to waste food, but I have a hard enough time eating good leftovers. Bad ones, forget it! Rarely do I have dishes that fail. I don't try something unless I know it will be good. I've had a few that were OK but not worth trying again, but rarely something I can't finish.

PIO, can't help you on the parent teacher thing, but it sounds weird to me. I mean really what can you learn in 7 minutes and with a buzzer going off. Sounds like someone in the admin went to an "efficiency" seminar and got over zealous!
 
....WFDT? Well, we are going to an NJEA meeting tonight (4-8PM) so I am not sure what's on the menu. However, this morning I made chicken thighs in the crockpot for the rest of the family, soooo....
 
Brandi - DS and I did eat the meatloaf. But sadly, the rest of it might end up in the bin. :(


Ellen - It's an interesting concept to only have 7 minutes. But the teachers seems to cope well with it. It does keep the conversation short and sweet; and it stops the parents from waffling! ::yes::

Kimmar - What is NJEA? I think I can work out the New Jersey bit; but I'm not sure I know what EA is. :confused3




Friday night and the boys go to the pool for DS' swim class. It means I only have to worry about dinner for me.

Today, there was a free lunch at work. Yes, it truly was a free lunch. Most of it was fingerfood style but it was pretty good. There was sausage rolls, gourmet pizza, quiche, sushi and salad. The salad was boxed in individual serves and there was two varieties - a soba noodles with arugula, cilantro, mango, eggplant (aubergene) and lime dressing; and the other was a green salad with roast chicken slices. The salad looked great when we opened the lids to check them out; but no one ate them. So I took one of each home for dinner. Free lunch extended into free dinner. :thumbsup2

Another beautiful day in my neighborhood. I have a funeral tomorrow (I am Courtesy Chairman this month) so I have a bunch of coordinating to do today. We will provide a full meal after the service. This is always so hard when we lose a friend. This lady along with my Momma and I did a lot of traveling together, we even traveled to Australia together. She had a hard journey to heaven, so I am glad to do this for the family. Plus I have great workers!!

New Jersey Educators Association. I'm used to MEA. They have them in every state and Province. I used to travel a lot to attend MEA conventions.

Thanks, it was simple and good. Sadly we have many meals at 9PM, but we live on a different schedule than most people. Sometimes our day doesn't start until 10 ot 11 AM so our nights end uo being much later than most people.

Those nights when we eat so late we are usually out doing errands until like 7:30. :crazy2:

Kimmar ~ how do you prepare your chicken thighs? You know me.....I am always looking for something different for my crockpot....

...ridiculous easy. Throw (literally) the chicken thighs into the crockpot. Sprinkle with garlic powder, salt, and pepper. Cut a large lemon in half and squeeze both halves over the meat. put the squeezed halves into the crock pot, add two or three basil leaves, and cover. Cook for about 8 hours on 'Low'. The actual preparation only takes a few minutes. I put it on around 8Am and it's done by 4 PM.....the meat is so soft, it falls off the bones!

...sad to report that dinner wasn't anything to write home about. The appetizers were buffet-style and were decent, but my chicken francese tasted like a pre-cooked [and then frozen] piece of meat.....I didn't even finish it....

Alison ~ I understand, I wish I could sleep till 10 am. Even if I had the chance I would probably still be up early. Before I started working outside of the home I could stay up later, but now my habit catches up to me and am pooped at 9 and am in bed shortly after the weather on the 10 o'clock news. :rotfl2:

I did something this Sunday that I NEVER do - I didn't go to Church. I had a funeral to serve on Saturday and I just didn't want to go back. :o Stephanie and Marty called about noon and wanted us to come out to the lake. She was running in a Shamrock Shuffle 10K. We got her off and went and sat on the patio of the Marina. It was beautiful and sunny. A bit cool but oh so nice. We saw 19 Bald Eagles. What a sight they were - we are very lucky as they are here every year about this time. But to see them is still awesome!!

Ellen - Good on you for not heading to Church. I know I should be encouraging you otherwise; but given what you had on your plate for that day, I think it's highly appropriate for you not to go.

Tuesday night here. Yes, potatoes on the menu.
I made some home-cooked fish and chips last night. We had flathead fillets in the freezer and I decided to pan-fry it and put together a lemon butter and caper sauce to go with it. I made sweet potato 'fries' in the oven. It was all delicious and that sauce was so good that DS even used it for the chips. It was a perfect substitute for ketchup.

Work life is busy here; and I put my hip out at the weekend. 2 rounds of chiro so far and I'm feeling very sore. Hopefully, it will settle down soon.
 
I have just marinated some chicken breasts in tamari (soy sauce), honey and sesame oil, with some garlic and shallots.

And have just popped them in the oven to bake covered with baking paper to keep the steam in and the chicken will be yummy moist and tender and will serve it on some steamed rice with broccolini.

PIO ~ Oh how in the world did you hurt your hip - now keep it clean........on second thought maybe I don't want to know what you did. :rotfl2: ;) Hanging from the chandeliers will do that every time. :rotfl:

MinnieInOz ~ you dinner sounds really good. But then again I could eat chicken every day. I love it and yours sounds easy and good. 2 things I really like.

We ended up going to Kearney last night. Lilly bug left her duck (it is a taggie blanket, but one of the tags has ducks on it and that is what she calls it) here at the house. They got her to bed alright on Sunday and she was almost ok at nap time but there was no way we were going to make her go any longer without it. When we walked in the door and showed it to her she was SO excited. Her eyes got so big and she said , "My duck, my duck!" Was so darn cute. She never let go of it all night. We ended up going out to eat - I wanted Corned Beef and Cabbage. Stephanie call all over and found a place. We sat down and ordered - They were out :( :faint: :confused3 REALLY!!! It was 6:15 on St. Patricks Day. I was so disappointed. Oh well such is life - I survived...........but really.

We are in for some rough weather day. They are even talking about the "S" word. It was 70 out yesterday, and snow today. Unreal.
