Dang! We should do ours Friday! You always get everything first, New Year's Eve, Easter, Groundhog Day, Thanksgiving....Ok maybe not all of them!

Well I dont mind it being a weekend if peppers but I'm going to jump the gun because I have no religious encumberances and I'm sick of being last on everything but the game! You all hit every milestone before us in California. So I would feel a amount of victory not being the last to post, especially since I never know what will keep me from posting the next day.

Gosh I love you gals. You are all so funny................

I will make mine on Sunday. So I guess I can be last. We have plans on Saturday. I have had this on the calendar for weeks now. Just so I wouldn't forget I wrote - "Pepper Day" on Sunday. Doug asked what this was and when I told him he was excited about it. He loves them - me not so much - oh I will eat them but they aren't something I fix often. So he was happy and is looking forward to it.

We had a very very quiet weekend - PERFECT!! But I will tell you by last night when Doug left for Choir practice and I was alone for 2 1/2 hours I was climbing the walls. We cleaned and cleaned this weekend. Spring cleaned in the Kitchen. Moved all the appliances, washed walls, scrubbed and waxed the floor, cabinet and surfaces all cleaned. It looked so pretty we didn't dirty it with cooking. Even though it was cold out we grilled steaks and had a glass of wine. Only 2 more rooms to get to and my Spring cleaning is finished.

It's not a competition, but since I'm always the last one up not only because of my time zone but because I don't have a real job, I feel like I'm always playing catch up. If I make my peppers Sunday, by the time I post a recipe and pictures everyone will have moved on and not give a hoot. At least thats how it seems to me. ....I usually make grilled chicken and put it in a salad. Some other fruits I like to add are blackberries and cut up strawberries!

I did make one with chick peas last year. I'm thinking of trying a more Mexican flavoured filling. We'll see.

Sounds like a great weekend, Ellen.......EXCEPT for the cleaning! That's a LOT of cleaning; but kudos to you for getting it done.

Alison ~ You are NOT being over dramatic at all. I completely understand. The time difference does make a difference. I am not smart enough to even post a picture. So you all will just have to take my word for it. Sweetie I live in the boon docks so I completely understand!!!!

Brandi ~ So what is your best Black Bean Burger recipe. The one I gave you was the only one I have. If you have a better one, please share. I would love it.

It is COLD out this morning. Hopefully this is it. Probably not, but a girl can hope. From here on till next week it is suppose to be beautiful. Temps. in the 60 - 70's. Oh how nice that will feel. We have SO much to do outside. It is a bit overwhelming when we think about it. So we are hoping it is nice on the weekend. I have a huge (200+) funeral dinner to do on Saturday and that is suppose to be the nicest day - go figure.

It is beautiful but a bit windy today. I was woke up this morning with a bird singing outside of my window. What a beautiful way to wake up. Spring is really here.

Another Lenten dinner tonight and they are serving Sloopy Joes, so I think Doug and I are going to play hookey and go downtown. We will be back for the service and Bells and Choir though. We are such rebels!!

Birthday Lunch



Remember I had lunch at my mum's to celebrate a family birthday the other day? It was a simple lunch by my mum's normal standards. This is what we had.


Mum made Hainanese Chicken Rice. The chicken is poached/steamed until just tender. If you do have this in Asia, you might be surprised at how pink the chicken meat can look. Mum deboned the chicken for us.








The chicken is usually served with condiments. The usual line up includes garlic oil with soya sauce, ginger minced with spring onions and a chilli sauce.







My mother also puts some sambal on the table as well.







My brother bought some Barbecue Pork to add to the dishes.





Hainanese Chicken is served with rice that has been cooked in the poaching liquid. The rice is first fried with the shallots and oil before cooking in the liquid. This was my lunch plate.








Mum also fried some rice with chilli oil, with some egg and then added the crispy fried anchovies on top. This was really YUM!







She also fried some tom yum noodles.







Simple....but delicious!
