The What's for Dinner Thread- June 2012 (recipe index in OP)

Ellen - Congrats on starting WW. I wish you every success. Its a relatively easy program to follow; once you work out the points thing.
That kale and squash recipe looks great.


Brandi - Hope that you're over the withdrawals. I think I'm going to keep with the no/low sugar thing and reduce the carbs after all we've finished the Quit Sugar. I won't totally eliminate it but I think my diet could be tweaked.


It's Thursday here and I'm not sure what I want to do for dinner. I've just been feeling a little flat and not wanting to cook. Hope this passes soon.
 
dinner last night was a bowl full of cut fresh veggies, cucumbers, tomatoes, onions, sweet peppers, carrots, celery and a splash of balsamic vinegar, roasted broccoli with the "cheese sauce" and a black bean burger....

I was so full I could not finish the veggies...

Tonight is cabbage raw with rice wine vinegar and sesame seeds, tofu, and sugar snap peas.

PIO ~ I have been in a slump lately also. I blame it on the changing weather. It's kind of like my clothes - right now I just stand at my closet and stare. I don't see a thing I want to wear. Next season when I bring it all out again, it's like it is all new, but right now it is all boring. That is the same way I feel about cooking right now - boring. I can't wait to start grilling and eating out of the garden. Does that make any sense at all?

Brandi ~ I totally get your meal last night. I told Doug that I would have been happy the other night with the Kale & squash dish and a burger. Sometimes that is all you need. You are doing so good. Even if your dinner tonight sounds icky :rotfl2: I DON'T do peas or tofu. :rolleyes1

It is beautiful out today!! The highs are to be in the 50's, but short lived as they are forecasting sleet and freezing rain for tomorrow night into Sat. But Sunday it is to be in the 60's. Crazy, crazy, weather!!

I am going tonight to my first Weight Watchers meeting. I am really NOT looking forward to it, as my friend that has gotten me started on this journey won't be there. I will probably know some of the people (I live in a small town, we know everybody) but I hate going in cold. But I will get my stuff and get out. :p I am determined to do this.

WFDT ~ grilled cheese and tomato soup. My meeting is at 6!! Why in the world it is during dinner I have no idea - pretty silly if you ask me. So this will be something easy when I finally get home.

Hello! I am so sorry I have been MIA. I have been trying to catch up on schoolwork, and failing miserably, and dinner has been pretty awful. Except I find I still want that darn ramen! What is up with that???

Ellen- congrats on joining WW! I admire your resolution. The cookies look so good, and do not seem like a sacrifice at all!

Brandi and PIO- both of you are doing so well on your lifestyle changes, Kudos!!!!!!!!!

Tonight Nola and Rylee are coming for dinner. Buddy said we have not seen them in 100 years! I have pot roast, mashed potatoes, carrots and broccoli. Brownie sundaes for dessert.

Buddy started vestibular therapy yesterday, and hopes it gives his stability a push. He is really doing well, but wants to make sure he can go back to work when the plant opens at the end of the month. Between us, I hope so too!

We have been living in the Arctic lately, but Bud is comfortable enough to start the fireplace now, so it is cozy again. We tried to have me do it, and his worst fears seemed to be valid, and it looked like I was going to burn the house down, so we had not used it but once since he is home.
 
I have no idea what we'll be doing for dinner. We are going to some event at the Petersen Car Museum where they will be serving us wine and dessert at 6PM. We usually haven't even had dinner by 6PM so that's really early to be eating dessert! :lmao:

Brandi - That's a disgustingly healthy sounding dinner.

Ellen - Good luck with WW. I found it daunting to get on the scales for the first time. The way I figured it was that I was paying WW for the privilege of getting someone to weigh me. You'll be fine. :hug:

Kimmar - Your meals sound very tasty right now. But I'd like to know what you sprinkled your Chicken breasts with. I'm guessing you didn't use milk nor a pole to stir things with; despite the overabundance you have. popcorn::

Nancy - Nice to see you checking in. Life's been hectic for me too. Hope that the therapy helps Buddy.

Friday night here and it was scrappy left overs for dinner. Ah well. Here's to a better weekend.
 
PIO- I hope so too. He is bored so he is a PITA! He is at therapy now, and thank goodness my cousin is taking him, because if I hear he is not improving fast enough one more time, he is going to be taking a giant leap backwards!!! Seriously, he is fixating on every little thing, he needs to go to work! He had been talking about retiring, but I think he has decided that he is not a candidate to sit home and we now know we cannot share space daily.

Dinner is fish and chips and some sort of veggie. I sent all of the leftover pot roast and sides to Welby. She loves it, but it is not a meal she cooks. I cook it the way my Mom used to: a fat chuck roast, seasoned and dusted with flour, seared hard on all sides, and then braised for a good long time. *** potatoes, carrots and onions. Then I remove everything and make a nice gravy, toss it all back in and let the met and veggies simmer a little bit. YUM! Not one healthy bite though.

This weekend, Joanie wants to cook a New England boiled dinner, so she is bring her smoked shoulder here so I can show her how. It is really hard to find a whole shoulder lately! They are all cut in half in the grocery stores, so I had her go to a meat market that stocks them.

Next, I cook a nice spoon roast. This market does a good job cutting them so they are easy to handle and cook evenly. Joanie buys eye roasts because they are easy, but holy cow! You need to be so careful with them or they turn to shoe leather, so I figure I will help her with this cut, and then she can have sandwiches with the leftovers

....actually, I sprinkled them with garlic powder, chili powder, Adobo, and the juice of a squeezed lime, put them in a Pyrex lasagna baking dish and baked them for about 15 minutes. I took them out and sprinkled (YES, more sprinkling!) some shredded low-fat cheese:

....and continued heating the chicken until the cheese is melted. I place the finished pieces of chicken breast on a bed of nacho chips and spooned some fresh salsa on top.......YUMMY!

Tonight is a huge salad with vinegar for dressing, and roasted broccoli, with cauliflower cheese sauce.

The WW meeting last night was alright. But not something I really think I want to be a part of. I am just not a get up and tell kind of person. I did get the information I wanted and that will help. I will probably go a few more time, but I can see doing this myself in the future and on line.

If I don't have enough confusion and new in my life, Doug and I went and got me a new Iphone and an Ipad last night. I am so excited as I only had a Galaxy before. But man oh man there is a lot to learn. I told him that I was going to get my phone set up first, then I will work on the Ipad. I have wanted one for so long. I just can't wait to get home and play with it all.

Thanks for asking. We ended up getting there late so we didn't get to run around and look at much other than the gallery that they were opening. And they ran out of the cupcakes! :sad2: I did get a few glasses of wine and a cup of coffee. It was fascinating. The new exhibit was on cars that bridged the "horse and buggy" to "self driven cars".

I learned that the reason rich folks had chauffers was that the cars were really a PITA to drive and maintain. They needed a specialist to take care of the cars. All the drivers sat in an uncovered (convertible like) part of the car while the rich folks they drove were in a covered compartment not subject to the elements. Nice rich people bought removable covers for their drivers, but most were subject to rain, sun, wind, whatever elements were out there. It was fascinating. They did an hour or so long presentations showing photos and other cars not present in the gallery. After we understood about the cars better we had about half an hour to 45 mintues to take a look around.

I chuckled because kids today who would not have heard the lecture would probably ask, "How come the servant gets the convertible?" :rotfl2:

We have a membership to the museum and this was the first time we got there. I'm looking forward to taking a day and going back and spending it just looking around. I told Fran we need to schedule it in the next month. There is also a Johnny Rockets attached to the museum, so we can make a day of it. Go up in the morning, see some exhibits. Have a burger and malt for lunch and finish up the museum in the afternoon.

Does your WW allow you to just come in, step on the scales and go? If they do, you don't need to stay for the rah-rah meeting.
 
Well we just figured it out. Grilled Cheese and Tomato Soup. My body feels like a truck ran over it and I really did nothing today but run around.
