The What's for Dinner Thread- June 2012 (recipe index in OP)

…what was for dinner last night? I made GF chicken cutlets and had a lot of leftovers, so I made francese sauce for it and made some fresh string beans with it….
 
Allison- all I can say is YUM! Everything looked wonderful!

We are having bit od a mishmash tonight. Daniel and Donny want a "bucket o fish" from our favorite Maine Fish. Dan gets one every time Erica is out of town. Anna is making beef stew and dumplings, and Marisa, who wont eat any of this ordered Chinese. I have icream sundaes for dessert.
 
WOW..... this was just like old times. I had to go back 2 pages to catch up with all of you. A real chatty bunch. ;)

Brandi ~ Safe travels my friend. ENJOY!!! We will talk when you get back, but the cruise in 2015 just might work. Oh the fun we could have.

Nan ~ I am so glad that Bud is feeling better. I would feed him sandwiches also - whatever he wants for now. Just get the man to eat.
You are SO lucky to have such great family and friends. They take such good care of you two.

Alison ~ Your dinner looks amazing. I am so glad you two can take advantage of specials like that. To this land locked gal in the middle of nowhere that just amazes me. Good for you both!
I sent you a pm question - I think I now know the answer (but a whole apartment :confused3). I hope Olga is feeling better.

PIO ~ I have had the wonderful chance to have one of you sloppy burgers. I was a bit put off with the egg and beet, but tried it, and loved it. I loved Australia. Someday I want to go back.
How is you kitty today? It is so hard to see our furbabies hurt.

Kimmar ~ So you need me to come shovel you out? Bless your heart you guys have really gotten it this winter. Spring is just around the corner. We are to have a blizzard - they are already warning us - on Thursday. Oh yea!!


My weekend was a BLAST! We had so much fun. I picked her up from Daycare on Friday night and she was so excited to see me, ran and got her coat and promptly said, "Where's Papa?" She loves me dearly, but she is a Papas girl. Doug can do no wrong!! We had bought her a new bed with side rails and it was so pretty. We played in there for most of the night. She loved it - until it came bed time and she ended up sleeping with me. Doug got the pretty princess pink bed. I really should have taken a picture. He would have killed me, but it was priceless. The weekend went way to fast and before we knew it Sunday night came and they took her home. We were watching the Olympics and we both said - It's was to quiet. But we get her again in 2 weeks but just over night. We can't wait.

I had yesterday off for President's Day. I spring cleaned the Mud room - YUCK!! This is taking me forever doing one rom at a time. Good grief by the time I am finished it will be time to Fall Clean. But it needed it so bad and now it looks and smells so much better. Yea, just in time for the next snow storm - Thursday it is to be blizzard conditions again. Oh well!

WFDT ~ Chef salads with all the fixings. I even made homemade croutons.

KImmar- we got a few inches yesterday too. Not too much thankfully! but I am so over Winter! Buddy cannot fly for a while, but he wants to know when he can...he wants warm! and Snowfree!

Normally Tuesday night is drive through dinner for us, but neither of us was hungry so we skipped it. Watch, as soon as I sit down and get my instrument out, I will be starving!

It snowed again today! It was not too bad going to school, but by the time classes ended this morning, the drive home was horrible. To add to the misery, the parking lot where Marisa works is a sheet of ice under the snow, and she took a nasty spill, landed somehow on her knee and then her back, and the jerk landlord was annoyed with her! Her employer is furious and goodness help the guy if Marisa's knee ends up out of whack again, She has had two major surgeries on it, and I am a bit worried. He will answer to me! Anyway, evening classes were canceled, so both of us were home!

Dinner was easy, leftovers!

Ellen- I would have loved to see your big guy in the Pink Princess bed! LOL! He sounds just like Buddy, anything for the little ones! Kady always ended up in bed with me, I loved that snuggly little girl, all sleepy. Enjoy this precious time with your Lily! Stay safe in the Blizzard! And let's hope Winter is almost through ounding us!
 
Ellen - I agree. It's great to have movement on this thread again. My kitty has her good days and her bad days. She seems to be trending upwards at the moment and we're hoping she's getting better. Certainly she's started to purr again; which is a good sign. Thanks for asking.

It's been a busy couple of days at work this week and I suspect that this project I'm working on is going to keep me entertained for the next 4 months. I'm actually running a program for this one and there are about a dozen individual projects under the program. OMG! Talk about herding cats. Looking after my own project is bad enough; but can you imagine herding 12 sets of project team members; all wanting different things and things done their way??? Well.....we all know how this is going to end, don't we? They are all going to have to do things differently and do it MY way. :rotfl:

….what do you stuff your peppers with? I use green bell peppers and stuff them with a combination of ground chicken/turkey meat, rice, parmesan cheese, and seasonings….they swim in a tomato sauce bath….

With a pesky vegetarian in the house, I stuff it with chick pea and rice. I saute some onion, carrot, celery first and then dump in a combination of spices and herbs. Then add the chick pea and rice. I use red bell peppers. It's a bit sweeter than the green after it's been cooked in the oven.

Bake in a tomato sauce bath, same as you.
 
…..I make mine in a Dutch oven…..about ten minutes before they are ready to be served I put a [hefty] portion of shredded mozzarella cheese on the top of each pepper, so it can melt!
