The What's for Dinner Thread- June 2012 (recipe index in OP)

Ellen - it was the stage production of the Lion King. We saw it back when it first came to L.A. I think they staged it differently and also some of the music changed. Not the songs but the orchestration. This time it was much more "rock n roll" with electric guitar. Last time I remember a more orchestral accompaniment.

Good job on the trainer! Keep it up! You inspired me to do "active" work with the Chiropractor this morning, which is essentially strength training and weight lifting.

PIO - good for you on being healthy. With the whole move plus trying to clear out the freezer I can't deal with healthy. I'm lucky just to get us fed!

Brandi - I hope you enjoy your massage tonight. I need to book one or two for me. I have a Travels certificate for the GCH.

Kim - happy late birthday to Ron. I hope it was a happy one!

WFD? Seafood Ravioli with light Alfredo sauce and a salad. Cleaning out the freezer! :rolleyes1
 
Dinner tonight for me was basmati rice, with homemade ghee, leftover spinach dal (lentils), and Indian style sweet potato/squash soup. :)
 
....well, sushi usually IS Japanese! popcorn::

Ah that depends - if you are referring to sushi 'rolls' then that is an American thing. You generally do not find sushi rolls in Japan - there's a reason they are 'California rolls'.

In Japan you can get sashimi (just fish) or sushi (the fish on top of rice).

Brandi - Hope the massage did the trick. I also try and schedule in a monthly massage and chiro adjustment. I find that it's not nearly often enough these days.

Alison - Wish I was there to help you clear out the freezer. That seafood alfredo sounds fantastic. :rolleyes1

We went out to breakfast this morning to catch up with friends. It should have been a market weekend; but it was hot last night and I didn't get a good night's sleep. So, DH and I decided to just go for the breakfast and skip the market. Afterall, like Alison, we do have stuff in the freezer that we could clear out! (Not quite seafood alfredo calibre; but our freezer could do with a little stock rundown :rotfl:).

I'm so full that I'm going to skip lunch.


Oh....and DH has been making kale chips in the oven. I think I stole the recipe off someone's FB page. He's been putting the leaves, after a little dipping in oil, balsamic vinegar, salt and pepper, into the oven at 180 C (fan forced oven) for about 10 - 12 minutes. There is a very fine line between crispy and burnt with the kale; so just watch them the first time you do try it out. Kale chips are becoming a firm favourite with me for this year!

ANGRY MUSSELS


...First, I sauteed two chopped slices of red onion with a pat of butter, 3 cloves of chopped garlic, 2 chopped poblano pappers, and 4 slices (chopped) of smoked bacon. I added a stick of butter and 1/2 cup of white wine and threw in 2-1/2 lbs of cleaned mussels, stirring accasionally, until all the mussel shells opened. Then I served it steaming hot with crusty Italian bread!

Tuna Cakes



DH is in a clearing out mood! He's hitting our pantry today.
So, there were a number of tins that needed to be either turfed out or something done to avoid them being turfed out. Seems like we had a number of tuna tins getting close to expiration. I turned them into Tuna Cakes for dinner tonight.


My starting ingredients:






  • Tinned Tuna, 600 g - drained
  • Potatoes, 3 - boiled until soft.
  • Celery, 1 stalk - finely diced
  • Carrots, 1 - finely diced
  • Chives - finely diced
  • Eggs, 2 for the mix, and 2 for the batter
  • Flour, 3 tablespoon for the mix, and 2 for the batter
  • Breadcrumbs
  • Salt and pepper
  • Oil



Mash the boiled potatoes.






Add the diced carrots, celery and chives.






Mix well and season with salt and pepper. Add the drained tuna.






When thoroughly mixed, break the eggs into the container.






Mix through and add the flour, a tablespoon at the time and check that the mix reaches a binding consistency.






Using a tablespoon, divide the mix into balls. I got 13 out of the batch I made tonight.






Roll the patties in flour.






Dip in beaten egg.






Then roll in the breadcrumbs.






Heat oil in a frying pan over moderate heat. Flatten each patty and fry in batches for 2 - 3 minutes on one side or until golden brown.






Turn over and fry for another 2 - 3 minutes.






Transfer to a serving dish and keep warm in the oven whilst continuing to cook the remaining patties.






Serve with a green salad and sweet chilli sauce. My dinner!

Tonight was supposed to be a roasted turkey, but time got away from us so we made tomorrow's dinner instead. I made the stuffing tonight and baked it with some fried pork chops. I added some sautéed spinach and gravy to round out the meal.

Tomorrow I will roast the turkey, serve it with the leftover stuffing, mashed potatoes, gravy and green beans.

I kinda googled for tuna cakes and then decided to pull something together based on what I'd read and what I had in my fridge. Thanks.

Tonight was supposed to be a roasted turkey, but time got away from us so we made tomorrow's dinner instead. I made the stuffing tonight and baked it with some fried pork chops. I added some sautéed spinach and gravy to round out the meal.

Tomorrow I will roast the turkey, serve it with the leftover stuffing, mashed potatoes, gravy and green beans.

Turkey dinner sounds great; but we're still all Turkey'ed out here from Christmas.

It is another cold and dreary day out. But I guess it is winter so it is normal. The temps has evened out and we are somewhat back to what it should be. Lows in the teens and highs in the 30s. I am so glad that cold snap didn't last any longer that it did. So far there has been no ill effect on the livestock, so that is a real blessing.

My work out last night was better. I actually enjoyed it. I am really sore today but I am hoping this is it. It kind of reminds me of quitting smoking - it was HELL to quit so you remember that and never go back. I hope to stick with this and remember how sore I have been so as not to ever quit and have to start again. ;)

WFDT ~ We are going to the winery after work. We haven't been for awhile and I can't wait. So dinner will be finger food and vegetables with dip.

Great job on working out...

When I change up my routine, add something different in... Rockin Body workout with Shaun T, or intense Yoga, or running... Kick Boxing, always trying something new, I will get sore for a day, but I kind of like it, it lets me know that I was getting to used to my workout and needed to change it up. So I know that I was working new muscles, or ones that had not be fatigued in awhile.

I am so happy that I joined the membership club to get one a month, one of the best things I have done for myself in a long time... I book them two months out, So I already have one for Feb and March.... When I go in Feb, I book my April one... I love it..

We made kale chips this past week and they were good, but I kept pulling them out to check, i agree a very fine line... Mine got to the point could touch them and they were crunchy, but others were turning to powder... Trust me we ate them all, but a lot of work...

I made homemade turkey stock yesterday and then made a turkey rice soup... Turned out great.
 
I do not like Sushi or American Sushi... we eat sashimi only! :love:

....my DS tells everyone that he eats sushi - he eats Cali rolls which do not have a lick of fish in it (I always tell him he's a poser, 'cause there's no fish in it, or seaweed, for that matter)....I love sushi; there's a sushi house nearby that has the most amazing Spicy Crunchy Tuna and Spicy Crunchy Salmon. They both have an outside layer of panko flakes and are drizzled with a creamy hot and spicy sauce - OMG, sooooo good!
