The What's for Dinner Thread- June 2012 (recipe index in OP)

Last night for dinner, we did a beer can chicken, and roasted cauliflower and I made a fat free vegan cheese sauce to go over the cauliflower, I was not sure about the sauce when I was making it, but OhMGee, this stuff was great.... David kept eating it telling me how wonderful it was... He said "Now this a keeper"

....he wasn't referring to YOU, was he? :rotfl:
 
has anyone on here looked at going Plant based, on their meals? Not just meatless?

Turkey dinner sounds great; but we're still all Turkey'ed out here from Christmas.

Well we didn't have any Turkey at Christmas, it was thanksgiving when we last had a turkey dinner so it was well appreciated. Too much food though.

I am so happy that I joined the membership club to get one a month, one of the best things I have done for myself in a long time... I book them two months out, So I already have one for Feb and March.... When I go in Feb, I book my April one... I love it..

I booked my January and February sessions at the GCH last week. I need to keep up a regular schedule too.

We did toy at the outskirts of it in our dim dark youth. I'm with Kimmar these days, I love my meat too much to give it up totally.

i would not give up meat totally, I am thinking of going PBJ (plant based junkie) for my meatless Monday and Thursday...

Just a different avenue...

vegetarian can be very high in calories if you are not careful, so I trying to go in a plant based direction for my two days...

Kimmar & PIO ~ I am so with you both - there is NO way I could or would ever be able to NOT eat meat. Being from Nebraska and cattle farmers - well it just won't happen. :rolleyes1

Brandi ~ I am always so amazed at you. You try the most interesting things. I really need to branch out some. I tend to do the same thing over and over. Melanie is getting me to do different moves and well Zumba is NEVER the same. Last night just about kicked my fanny. Lots of jumping and lunging.

TuneTownMagic ~ your chili looks amazing. I really want to try Quiona - have some bought - but didn't know what to do with it. Looks good!

Alison ~ I really need to start eating out of the freezer. It seems I stock up the freezer around Sept., just in case of a blizzard and a hard winter. That way if I can't get to town there is always food to eat. But then I tend to not use it when we have a mild winter. We have even still been grilling. But I really need to use it up.

Wow, I tried all day yesterday to get in here and chat. Didn't happen!! We had a morning funeral and lunch. When I finally got back to my desk the Excel program I use was gone - yep GONE!! We had done an update last week on my system and all of the history was missing on all of my programs but if I went in to the file I could find them. Not so with Excel - all of 2013 was missing and my Master sheet. I spent most of the afternoon re doing my Master so I could at least put Contributions in. NOT a fun day at all!!

We have Red Cross Bloodmobile here today and I swear everyone has waited to get here to go to the bathroom. It is right outside of my office door and each time they go in or out it bangs. I bet it has banged +50 times already. I think I will hide out in my office all day.

We had a really nice weekend. I cleaned all day on Saturday and Doug worked outside putting a new mailbox up. The last one we had had been hit so many times by the combines and swatthers going by that it literally was being held together with duct tape. Hopefully this one will last a bit longer. We are trying a new place.

WFDT ~ Turkey Paninis and Butternut squash soup - it turned out REALLY good if I say so myself.

I do hope you enjoy the recipe if you try it! I have to say I totally skipped adding soy sauce because it just seemed like a weird addition to the rest of the dish (and I used a sodium free chilli powder mix since I really didn't have all those dry herbs and spices on hand). Also, I think it' best eaten when hot and right after it's finished cooking....this was my first time cooking with quinoa, and it seems that the grain tends to absorb all the moisture quickly so when this dish cools it has a very thick consistency.

I was vegetarian for a long time myself...and now include poultry and fish in my diet. I can identify with the difficulty with calories on a veg diet. You would think going vegetarian is itself a surefire way to get a healthier diet going, but it's not always that way. I have always been slightly overweight, probably in part due to genes, but it also could be diet. What I found when I introduced meat to my diet is that meat was more filling and so I didn't need as much of it...but vegetarian proteins don't seem to fill me up quite the same way, so I have more of it.

Plant-based, I've never done. I think I like cheese too much :woohoo: haha. But I keep hearing mixed things about whether people should even be having dairy.

It's Wednesday night here. WFDT? Mum's dinner. It's soooo hot here. Temperature hit 41 C today and we're expecting 44 C tomorrow. I don't know how the tennis players are coping at the Australian Open. Chances are they may cancel some matches tomorrow.

you know the more i go without the more I do not miss it.. I like it don't get me wrong, but I find myself drifting more and more to veggies, and skipping the meat.

Awwww, thanks that is a very nice compliment. I just passed the 50 pound mark, and I seem to have stabilized. I am at a very comfy size 8 in all my clothes, and some small's when the dress comes to a S-M-L, I am still about 25 pounds heavier than when David and I started dating a decade ago, but I am really happy.... I feel great, and exercise has become a habit now, not a chore, so I feel like I have done really good.

I am very proud of you too, you are hanging in there and getting busy! You go girl.

we started out, eating quinoa at Jambo House CL for breakfast, I thought it was amazing there and learned to cook it at home for a hot breakfast ceral, and then moved on to savory dishes.

i so need to clean out my pantry and my freezer... I just donated a ton of stuff to the food bank, I felt kind of bad, b/c it was all food that I will no longer feed us, like boxed, bagged, processed food, BUT I did not want to throw it away, hopefully someone will enjoy it.

David diagnosed me with Misophonia, he says that I go crazy when people drag their feet and chew loudly. Dripping water, fan blade unbalanced, just anything like that will drive me crazy! it is like torture, so that banging door, would have sent me home yesterday....

Good luck on the mailbox... When we moved to the new place here in maryland, we no longer have individual mail boxes, we have banks of them at the end of the street, that you have to open with a key.

Wow, your fitness accomplishments sound amazing! So admirable! I need to get motivated! I always find it hard to stick to regular exercising...I just lose interest too quickly.

Those recipes look very interesting! Definitely saving them!

Brandi - I have another friend and her husband who have gone vegan and they say the more they don't eat meat and dairy the more they don't crave it. Me personally, I just don't care for all those plant based things enough to make a diet of it. I really only like peanuts in the nut family. I don't care for olives or garbanzo beans. There is plenty that I like but not enough to cut meat and cheese from my diet.

Today will be very busy. I sitting and waiting at the eye doctor and hope he will give me a new prescription finally. The pollen has been so bad here my eyes have been too inflamed the last couple of visits.

We have to pay our DVC dues, buy some plants for the yard and continue packing up for the move. I still have laundry from the other day that needs putting away, plus there is still more to be done.

WFDT? Spaghetti Bolognaise. I have sauce in the freezer so that's easy!
 
Brandi - Congrats on your weight loss. I'm starting on the journey this year and have been watching portion sizes, carbs, sugar and up-ping my intake of fruits and veg.
With regard to the plant based products....my DH's diet is resembling the items on the list more and more. We have coconut oil in the house and he cooks his food with it. I stay clear of it...a youthful prejudice. Being Asian, we were always told to reduce our coconut milk (and coconut oil) in the curries we ate because it was very high in cholesterol and bad fats. I just wish the scientists and dietitions wouldn't just flip flop like this on food products.

Alison - I hope the eye inflammation goes down. It sounds like hay fever?

Ellen - I hope you have a peaceful time whilst Pastor Dylan is away. The congregation must just love you. :hug:





My day is going to be spent trying to stay cool. It's going to be 44 C here today and I've tried to close up the house as much as I possibly can. It's nice not to be at work today; but in a way, work provides a/c and I don't need to be out and about. I'm trying to convince DS to go see a movie with me. We'll see.

WFDT? I'm thinking that either a Tuna Nicoise or a vegetarian Cobb Salad might be the go. I might look into those quinoa recipe links first.

I have read all I missed and honestly I will not be able to reply to all, but

I HAVE MISSED YOU!!!!!!!!!!!!!!

I started my new job and all I can say is that it is a darn good thing school has not started. It has been a long time since I have to remember all new procedures, and since I am a worry wart, I have been kind of stressed. No more.

I am back to cooking, we have been eating take away, and it is not good.
Roasted chicken and potatoes and steamed green beans tonight.

Buddy and I have been discussing whole grains, and he is going to get on board, so I can start substituting them for the simple carbs we have been eating.

Tunetown_ I used to eat quinoa all the time, and love it! I stopped cooking the whole grains because Buddy hates them, but we had a basic CTJ meeting, and are making some changes That chili looks like a great place to jump back into a healthy meal!

PIO- I know you use coconut oil, but have you subbed coconut sugar? I don't add sugar to many things, unless I bake, but I thought I would use this product to see how it works.

Allison- I really hope that your inflammation goes down!! Not many things worse than eye pain

Ellen-Mild winter??? Strange winter, I think. It was 41 degrees late this afternoon. I think this is adding to all of the flu CT is experiencing! You always have a full plate at work, so I hope that your day was calm

Brandi- I have been following your fitness journey, and I am :worship::worship: You are amazing!

Kimmar- I am like you, I like meat. I will say that I love veggies, but I have to think about them until I get into the habit of adding more rather than less. Marisa roasts big pans every week, and she roasts everything!
