Strawberry Jam Forever




I walked past the fruit shop on Friday and saw a sign. $10 for a box of strawberries. I restrained myself for a whole 24 hours but in the end, I couldn't help myself. Strawberry jam will make a great gift for Chinese New Year!


My starting ingredients:

  • 7.5 kg or over 16 lbs of Strawberries!






You'll also need:
  • Juice of 2 - 3 lemons
  • Sugar, 4 - 5 kg






After washing and hulling (and popping more than a few in my mouth), I was still left with close on 7 kgs of fruit.







I have large pots; but not enough to hold all those strawberries! I ended up cooking the jam in two batches of about 3.5 kgs in my largest pot. Squeeze the juice of 1 - 1.5 lemon over the fruit. Stir constantly for the first 30 minutes or until the strawberry juices are nearly covering the fruit.








Once the fruit is boiling, you don't need to stir it so often. Cook uncovered for at least another hour on a medium heat. Remove as much scum as possible.







The mushy fruit will stick to the bottom if you leave it too long and burn. Turn the heat down a little and stir constantly for another 30 minutes or until the mush goes "gloop" "gloop". You know what I mean!







Add sugar. All the jam recipes will say an equal amount of sugar to the fruit you started out with. I use 2/3 the amount. So, there is a little over 2 kgs of sugar here.







Turn the heat back up and stir the jam. It's best to dissolve the sugar as quickly as possible.







Once the jam reaches a rolling boil, allow it to cook for another 20 - 25 minutes. Remove the scum. I will check that the jam has reached the right setting point after 15 minutes or so.







I heat sterilization my jars. Wash is warm soapy water, rinse and then heat the jam jars in the oven at 130 C for at least 20 minutes.








To check that the jam has set, place a little on a plate and cool in the freezer for about 4 - 5 minutes.







Push your finger up the jam to check that the jam will set. You'll know it is ready when the jam wrinkles. If it doesn't wrinkle, continue cooking for another 5 minutes and re-check again.







When the jam is ready, remove from heat.







Transfer the hot jam into the hot bottles. I also use waxed paper (wax side down) to ensure an air-tight seal. My house smells of strawberries now.








Store in a cool, dark'ish location. The jam will keep for about a year. Enjoy!

I love homemade jam - it's so much nicer than store bought & you know what's in it . :)

Tonight I made Hungarian Goulash soup with sour cream & chives
It took forever to cook but was very tasty
 

Wow! I've never made jam, nor knew how to make it. That looks relatively simple and rather tasty!
 
Zucchini and Haloumi Fritters




I've been eyeing this recipe, from the on-line newspapers, for the better part of a week now. Given the meatpalooza overload we've been having since Christmas, I figured it was time to instigate Meatless Mondays again.


My starting ingredients:

  • Zucchini, 300 g - grated
  • Spring Onions, 4 - sliced
  • Haloumi Cheese, 200 g - grated
  • Plain Flour, ¼ cup
  • Eggs, 2
  • Dill, 1 generous tablespoon - chopped





Grate the haloumi cheese.






Grate the zucchini and squeeze out liquid. I just grabbed handfuls at a time and squeezed the zucchini between my hands.






Place all the ingredients into a bowl, and season with salt and pepper to taste.






Mix well.






Heat oil in a pan on moderate/high heat. Place a tablespoon of the mix into the heat and cook for 2 - 3 minutes; or until golden brown.






Turn on the other side and cook for 2 - 3 minutes.






As you’re cooking the rest of the mix, place the cooked fritters in a low oven (120 C) to keep warm. I ended up with about 14 fritters.






Serve with a salad and a lemon/dill yoghurt sauce.






This was so YUM! It was a hit in my house and we all agreed it was a keeper.

I am happy to report I am finished with the closing and opening of the new year. This year was particularly difficult (Pastor change is always tricky), so I am SO glad it is done! Now all I have left to do is stuff I don't mind doing and is pretty easy.

Brandi ~ I have 2 butternut squash. I am going to attempt to use them Never have, so I think now is the time. I hate to let them go to waste. I am going to roast one and make a soup with the other one. We shall see how it goes. :lmao:

Allison ~ you should try your hand at jam and jelly making. It isn't hard at all and oh so good. You would be great at it.

I have Zumba on Mondays and Wednesdays. It starts at 5:30 and I don't get home till 6:45. I don't like that one bit, so I am cutting back to just Monday (and Doug has agreed to cook this one night). I leave the house at 7:30 and that is just too long to be away for me. I know I am weird, but that is the way I roll. I am starting with a trainer on Tuesdays and Thursdays at 4:30 for 1/2 hour. I am really looking forward to it!!

I feel like it is a broken record - it is COLD here. So cold they have cancelled school for today. The temp. is a record -26 with a windchill of -50. Not fit for man nor beast. My 2 money counters didn't even come in today. I am here all by myself and I am loving it. I really hope to get a lot of work done today.

Doug and I went to see "Saving Mr. Banks" on Saturday. We loved it!! Have you all seen it yet? It is a must see for any true Disney person.

Actually, I have a vague recollection that you did so. Garlic...butter.....can't remember if there were tomatoes or not. I also recall some white wine???

It's okay. I actually don't like mussels all that much. But I keep seeing if there is a recipe that would *turn* me. Haven't found it yet.

The roasted Butternut is David's favorite.. I also make soup, I usually roasted the squash, a sweet pot, and one carrot... roast with olive oil and S&P, saute onions and garlic in a pan, combine everything and then blend everything with some veggie broth until it is as thin as you want and serve! Very easy!
