Nancyg56 , hi! Nice to meet you (on Dis haha) . Can I ask what CTJ is? That's good you are looking into healthier eating. My big problem is the lack of exercise! Just could never get motivated most of my life...but these days I have seen a lot of my friends from college and high school participating in marathons and doing other kinds of athletics and really making a difference in their bodies and lives...I know I could be doing more! I'm in my 20's so I know it will be better if I develop those habits now. Anyway...went off on a tangent there sorry!

WFDT? White rice and sautéed bell peppers and okra, and stewed spinach.
 
....sooooo, I got my soup AND a potato knish....plus I made penne with Hotel Metro sauce.....super dee-lish....

Kim - Matzo balls? I haven't had them in an age. I wonder if my DH will look at me funny if I cook them?
 
Wow, your fitness accomplishments sound amazing! So admirable! I need to get motivated! I always find it hard to stick to regular exercising...I just lose interest too quickly.

Those recipes look very interesting! Definitely saving them!

I change up my exercise all the time, I do something new every two weeks or so.. It just challenges my body in different ways and helps me from being bored...

Brandi - I have another friend and her husband who have gone vegan and they say the more they don't eat meat and dairy the more they don't crave it. Me personally, I just don't care for all those plant based things enough to make a diet of it. I really only like peanuts in the nut family. I don't care for olives or garbanzo beans. There is plenty that I like but not enough to cut meat and cheese from my diet.

Today will be very busy. I sitting and waiting at the eye doctor and hope he will give me a new prescription finally. The pollen has been so bad here my eyes have been too inflamed the last couple of visits.

We have to pay our DVC dues, buy some plants for the yard and continue packing up for the move. I still have laundry from the other day that needs putting away, plus there is still more to be done.

WFDT? Spaghetti Bolognaise. I have sauce in the freezer so that's easy!

Well I am not sure it will be a life style or just a passing fad, but so far two days a week are meatless... But only two dinners a week are vegan.. So we are still eating plenty of meat.

Dinner last night was, egg drop soup, veggie stir fry over Cauliflower rice!
 
Brandi - Congrats on your weight loss. I'm starting on the journey this year and have been watching portion sizes, carbs, sugar and up-ping my intake of fruits and veg.
With regard to the plant based products....my DH's diet is resembling the items on the list more and more. We have coconut oil in the house and he cooks his food with it. I stay clear of it...a youthful prejudice. Being Asian, we were always told to reduce our coconut milk (and coconut oil) in the curries we ate because it was very high in cholesterol and bad fats. I just wish the scientists and dietitions wouldn't just flip flop like this on food products.

Alison - I hope the eye inflammation goes down. It sounds like hay fever?

Ellen - I hope you have a peaceful time whilst Pastor Dylan is away. The congregation must just love you. :hug:





My day is going to be spent trying to stay cool. It's going to be 44 C here today and I've tried to close up the house as much as I possibly can. It's nice not to be at work today; but in a way, work provides a/c and I don't need to be out and about. I'm trying to convince DS to go see a movie with me. We'll see.

WFDT? I'm thinking that either a Tuna Nicoise or a vegetarian Cobb Salad might be the go. I might look into those quinoa recipe links first.

We have coconut oil in the house too...

It has been a weird experience in our house to shop for items we have never heard of... Nutritional Yeast? White Miso Paste? Tamarind Paste? Arrowroot Powder... Our shopping time has greatly increased..

I have read all I missed and honestly I will not be able to reply to all, but

I HAVE MISSED YOU!!!!!!!!!!!!!!

I started my new job and all I can say is that it is a darn good thing school has not started. It has been a long time since I have to remember all new procedures, and since I am a worry wart, I have been kind of stressed. No more.

I am back to cooking, we have been eating take away, and it is not good.
Roasted chicken and potatoes and steamed green beans tonight.

Buddy and I have been discussing whole grains, and he is going to get on board, so I can start substituting them for the simple carbs we have been eating.

Tunetown_ I used to eat quinoa all the time, and love it! I stopped cooking the whole grains because Buddy hates them, but we had a basic CTJ meeting, and are making some changes That chili looks like a great place to jump back into a healthy meal!

PIO- I know you use coconut oil, but have you subbed coconut sugar? I don't add sugar to many things, unless I bake, but I thought I would use this product to see how it works.

Allison- I really hope that your inflammation goes down!! Not many things worse than eye pain

Ellen-Mild winter??? Strange winter, I think. It was 41 degrees late this afternoon. I think this is adding to all of the flu CT is experiencing! You always have a full plate at work, so I hope that your day was calm

Brandi- I have been following your fitness journey, and I am :worship::worship: You are amazing!

Kimmar- I am like you, I like meat. I will say that I love veggies, but I have to think about them until I get into the habit of adding more rather than less. Marisa roasts big pans every week, and she roasts everything!

I love to roast my veggies too, they are much sweeter and it is so darn easy!

WOW!!! I can't say it enough how darn happy I am that we are back chatting. You can't believe how much I missed all of you. I will say it again - You are the best part of my day.

Brandi ~ Lady I am SO proud of you - 50 pounds. :cool1: Plus you are doing it the right way by changing your diet and the added exercise. Good for you!!
Thanks for asking - my Butternut squash soup turned out amazing - I just peeled, cubed and boiled it in homemade chicken stock and spices. Used my handheld blender until smooth. I did add a package of fat free cream cheese. OH.MY.GOODNESS it was so yummy.
Thanks for the recipes - I really want to try them.

Fran ~ Oh sweetie, I hope your eyes calm down. Nothing worse that inflamed eyes. I went to the eye dr. last week and needed new glasses. I took 3 pair home so Doug could help me decide - I really liked 2 of them and couldn't decide which one I wanted - so I got both. :banana:

PIO ~ Are you just dying in this heat? Saw on the news this morning that the girl (sorry, can't remember her name) played tennis in the brutal heat for over 3 hours and everything else was cancelled. Stay cool my friend.

Nan ~ I never doubted that you couldn't do this. I am so proud of you!!! Glad to hear you like it - and I am sure they love you :love:
Good luck with your changing Buddy's meals. If he is anything like Doug (and we already know they are 2 peas in a pod) there will be resistance. :rotfl2:

Kimmar ~ Your meals always sound SO yummy - different but really good. Its funny to hear how people from different parts of the country eat so different.

TuneTownMusic ~ Come on sweetie - you can do this. You are in your 20's - I am in my 50's - if I can do this you can too. Just start - to me that is the hardest part of exercising. Walk around your block, take the steps instead of the elevator, park in the last space in the parking lot. Little things make a big difference. Find something you do like to do. I started out walking - I walked every day. Sometimes for just 15 minutes but I walked every day - last year I did my first 1/2 marathon. You can do this!!!


We are under a high wind warning today. The wind is strong already this morning with straight winds at 35 -45 with gusts at 55 -60. Batton down the hatches, trash cans and small animals. It's gonna be windy today.

Ellen- So much for healthy! He ate two donuts this morning and was trying to tell me that rye bread should suffice. Nope. I wan to make a stuffed cabbage casserole tonight, with brown rice and ground chicken. I just need to get tot the store for cabbage.

I do like you, fill my freezer, but then I hate to rummage around in it. I usually want to be ready in case Winter is messy, I hate to cart groceries in the snow! This year i cannot blame the weather, though. I just am disorganized, and end up picking up something quick.

Oh well, I have to clean this house! It really needs a good bath.
 
....no cooking for ME tonight, cuz' my DH is going to a meeting/seminar/dinner at the Archdiocese in Newark with the Holy Name Society....no GF in THIS casa tonight, so the sky's the limit....I'M ORDERING IN!

....well, I didn't cook them myself....actually, I just finished lunch and had that soup for lunch - quite yummy....

I have recently found a great substitute for cream cheese, that is a healthier version I sound say. It is called Kefir Cheese. I really like it and I end up eating it plain, I know that would be weird for a few, It is a very tangy creamy cheese...

Ellen - I am almost dying in this heat. 4 days of over 40 C heat is taxing on everyone's nerves. I've ended up pulling a mattress on the floor in the family room and sleeping with the AC on. The change is due tonight. We're back to 23 C tomorrow. :banana:


Nancy - I haven't substituted sugar for coconut sugar. I will substitute for Stevia. We also use palm sugar.




We've had visitors! Our ex-neighbours 3 doors down (on the other side of the street) did a tree/sea change thing about 7 years ago. They moved up to Queensland to a tiny community of less than 5000 people (Melbourne is hitting 5 million). Well....they're down for a 10 day vacay and they stopped in last night. I had planned a meal for dinner....and wouldn't you believe it? They wanted take-away pizza. :laughing:
Turns out they miss junk food. :lmao:
 
I need dinner suggestions...
I have the flu! So nothing sounds good... I'm thinking baked potatoes. I usually make them in the microwave, but I want to do them in the oven... Just can't remember how???

Sadly, I had norovirus on Christmas Day & the last thing I ate was grilled chicken. I don't think I'll ever be able to eat anything related to a chicken again, so no soup for me!!! ;-)
