The What's for Dinner Thread- June 2012 (recipe index in OP)

....I'm going to a school fundraiser tonight with some of my teacher friends, so I made chicken thighs in the crock pot:

Lemon Garlic Chicken


8-10 chicken thighs
1 whole lemon
4 garlic cloves, diced
2 t. sea salt
2 t. garlic powder
freshly-cracked black pepper
1 oz. white wine

Cut the lemon in half and slice off a 1/4" slice off each cut end of the 2 halves of lemon. Place the thighs in crock pot and add each item over top of chicken. Squeeze remaining lemon halves over top of chicken and add the two slices to chicken. Cover and cook for 6 hours on 'Low'. Serve over noodles with broccoli

Harpoon Larry's Oyster Bar, had 2 dozen raw oysters and it was wonderful....

I know Alison would have been right there with me. For some reason I can't find the photos I took. :(

Last night was homemade pizza (since I am back home)

Tonight is Grilled Salmon

and Tomorrow is our Cinco De Mayo party!

So I made a spur of the moment decision to go get a Thai Massage tonight. It was a nice way to start the weekend.

Dinner was leftover pumpkin soup.

Tonight I am up in the air over dinner. We had grilled chicken and steamed haricots verts last night, along with a big salad. Kady, who would never touch a lettuce leaf, is now a Caesar Salad Girl! "I love the "sauce" Nana!":rotfl2: So she was thrilled last night.

Oh wwell, I have papers to write and they have to be good! I was approved to change my degree program so i don't want to screw it up. I had discussed it with Buddy before I made any changes because I will be adding another year and his quality of life is really not good lately :coffee: He was so supportive, telling me he does not mind sandwiches and he never sees the dust, etc. I called him to tell him I was approved and he was a little slow to say "YAY!" :rotfl2: Oh well.....
 
Isn't it wonderful to have such a supportive husband, it just makes life easier.

Congrats on getting approved and now go write those papers!

It really is! Especially when I know what the cost is in regards to what is not getting done in the house. he does nto care because he figures that even on my worst day, the house is better then a lot on their best days, but I know how I like to live so I am pretty hard on my self. It makes a world of difference that he does not pile it on! The kids have been awesome too. I always host holidays and special occasions and they really prefer to come "home" for them. WE have continued to have them here but they stepped in and made sure I only needed to open the door, anything else I chose to do was not because I had to in order to entertain.

Instead I'm going into the kitchen to pound some pork boneless cutlets for schnitzel, and salad. I've almost lost the cruise weight (3 lbs to go), then I still have about 6 pounds of WDW weight. :headache:

My DH makes breakfast every Saturday and Sunday... Some how we just got into that grove.

Right now I have an iced coffee in hand, (with enough flavors in it, it does not taste like coffee :rotfl:), waiting for DH to finish.

Egg whites, Canadian bacon, and English muffins.


So how were the pancakes???/

DONE!!!!!!!!!!!!!!!!!!!!!!!!! I really believe that I was one of the only people to actually do all of the written assignments. The last two took me all day! Aside from DIS'n But that class is all zipped up. Seven hours every Saturday :faint: but only for 7 weeks.

Ohhhhhhhhhhhhhhhhhhhhh I love pancakes! YOur DS is like Kady. On the weekend she will often make breakfast for her Mom (Dad is on nights and unless they are heading out, he is not up that early). She was taking a home ec class and practicing her recipes here, so for Christmas I gave her a cookbook and a bunch of pans and utensils that marisa would not have had and an 11 YO would like. Now I just need to get her here to cook!

You can do it, just stay out of Costco! They are EVIL!!!!!!!!!!!!!! I stopped in after class for steak and protein shakes. I sampled every delight known to me! OMG! Lots of goodies and snacks and stuff I love!

Well, I hope everyone is having a good weekend. I had big plans but I decided to let it all go. Buddy is plowing (marisa had to follow him all over this morning) and won't be home for a while so I think I am gong to goof off. If anyone is on FB, I am going to try to post a pic she took, it is hysterical! Our roads are pretty narrow around here and the cars sometimes don't look out for tractors so if he has a plow or cultivators on we try to follow him so someone doesn't crash into him, but the sight is sometimes :p
 
Shrimp Risotto




I made some Shrimp Risotto for dinner last night.

My starting ingredients:






I panfried the shrimp first. About 1 - 2 minutes on each side.






Then added a knob of butter and the diced onion on a low/medium heat.






I think it was about 1.5 cups of arborio rice. I didn't exactly measure it out.






Something else I didn't measure out....a generous splosh of white wine. I also added a generous pinch of saffron.






After most of the wine had been either absorbed or evaporated, add the hot stock little by little.







Continue cooking and adding the stock a little at a time until the rice is al dente.







Add the spinach....







....and the shrimp back to the pan.







Stir for another 1 - 2 minutes and then season with salt, pepper and the chopped dill.

I've never tried spinach in my risotto. I've done asparagus, though, and it's excellent, so thanks for the lovely visual suggestion!

Dinner tonight - We went out to one of our favorite Indian restaurants. I had the Karahai Aloo Palak which is spinach and potatoes and a lot of lovely spices with rice on the side, of course!

I would like to try that recipe, but I would have to remove the shrimp tails. Fran gets very cranky when she has to work to eat her dinner!

Oh man! Now I want Indian! We have a little Indian restaurant in the next town that if you were to drive by, well...........you would just drive by. But if you chanced stopping in :goodvibes Holy Yummy!
There is a daily buffet that is constantly changed. But in addition the servers bring freshly cooked food to the table if those entrees would not hold on the buffet table. Now I wnat that for lunch!

:rotfl2: True story........when I was first dating Buddy we went to a restaurant where there was a shrimp bowl on the salad bar. Now I don't like shrimp so I passed by it but he filled his plate and back to our table we went. I was raised not to comment on another person's habits at the table and I really didn't know him well so I was totally at a loss when he started crunching the shells. :crazy2: Poor guy was just as uncomfortable with me and he was just eating ;) 32 years later and I still tease him about that..................and he is still reminding me that I used to eat ber=fore we went out so he would not know what my real appetite was :dance3:

PIO- i sure do wish I liked shrimp...................it always looks beautiful!

We went out to a local brewhouse last night. I am supposed to be avoiding carbs but who can say "no" to beer battered fish and chips????? We had buffalo wings and rolls with garlic butter to start. Buddy had pistachio crusted sea scallops that he said were good but not worth the cost. He also had some of the craft beer, which was wayyyyyyyyyyyyyyyyyy better than the wine I chose. I really like my own reds better so I am sticking to white when we go out from now on.

Today I have a paper due, laundry and a little cleaning and then off to the movies with Kady. We have not had any Nana/Kady time lately :sad1: Dinner is grilled sirloin, grilled or roasted zucchini, and a salad.
